STRING BEAN AND POTATO SALAD



String Bean and Potato Salad image

Number Of Ingredients 10

2 pounds red bliss potatoes
2 cloves garlic
Kosher salt
1/4 to 1/3 cup sherry vinegar
1/4 to 1/3 cup extra-virgin olive oil
1/2 pound haricots verts, stem ends removed
1/2 cup pitted and slivered gaeta or kalamata olives
1/2 bunch fresh oregano, leaves finely chopped
3 scallions, thinly sliced on the bias
Pinch of red pepper flakes

Steps:

  • Put the potatoes and garlic in a pot and cover with well-salted water. Bring to a boil over medium heat and cook until the potatoes are fork-tender, about 20 minutes; drain. When they are cool enough to handle but still hot, carefully cut the potatoes in half (try not to pull off the skins) and transfer to a large bowl. Finely chop the garlic and add it to the potatoes along with 2 tablespoons each vinegar and olive oil; season with salt. (It is important to do this while the potatoes are still warm so they absorb the vinegar and oil and are seasoned all the way through.)
  • Meanwhile, bring another pot of well-salted water to a boil over medium heat. Set up a bowl of ice water and season it generously with salt. Add the haricots verts to the boiling water and cook until tender, 5 to 6 minutes (bite a bean to be sure they are properly cooked); drain and immediately put in the ice water to "shock" them, or stop the cooking. When they are cold, drain the haricots verts and let them dry a little. Cut them in half.
  • Add the haricots verts, olives, oregano, scallions and red pepper flakes to the bowl with the potatoes. Stir to combine well; taste and adjust the seasoning. Add the remaining oil and vinegar, if needed. This salad is good now, but it will be even better if you let it sit for at least 1 hour at room temperature.

2 garlic cloves, minced
1 tablespoon dried rosemary, crushed
1/2 teaspoon salt
1/2 teaspoon pepper

3 cups water, divided
1 bone-in pork loin roast (4 to 5 pounds)
2 to 3 pounds small red potatoes, cut in half
1-1/2 cups sliced onions

Steps:

  • In a large bowl, combine the first six ingredients. Stir in 1/2 cup water; let stand for 3 minutes. , Place roast, fat side up, on a greased rack in a roasting pan. Pour remaining water into the pan. Combine potatoes and onions; spoon around the roast. Brush vegetables and roast with seasoning mixture. , Bake, uncovered, at 325° for 2-1/2 to 3 hours or until a thermometer reads 160° and potatoes are tender. Baste and stir potatoes occasionally. Tent with foil if browning too fast. Thicken juices for gravy if desired. Let stand 10 minutes before slicing.

1/2 pound small marble potatoes
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
8 ounces string beans, trimmed
Vegetable oil, for frying
1 bone-in pork loin chop
1 cup all-purpose flour
2 eggs
1 cup panko breadcrumbs
1/2 shallot, minced
1/4 cup white wine vinegar
2 tablespoons Dijon mustard
3/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 cups packed baby arugula
1 cup baby heirloom tomatoes, halved
1/2 cup bocconcini

Steps:

  • For the pork milanese: Preheat the oven to 400 degrees F. Bring a medium pot of water to a boil.
  • Toss the potatoes with some olive oil in a bowl and sprinkle with salt and pepper. Pour onto a baking sheet in an even layer and transfer to the oven. Roast until golden brown, stirring halfway through, 15 to 20 minutes. Remove from the oven and set aside until ready to use.
  • Meanwhile, season the boiling water with salt. Add the string beans and blanch until tender yet crispy, 2 to 3 minutes. Remove the beans from the boiling water and shock in a bowl of ice water to stop cooking. As soon they are cold to the touch, drain on a paper-towel-lined plate. Set aside until ready to use.
  • Set a heavy-bottomed, high-sided saute pan over medium-high heat and fill with 1 to 2 inches of oil. Heat the oil to 375 degrees F.
  • Lay out a large piece of plastic wrap on a cutting board. Set the pork chop on the plastic wrap and cover with another piece of plastic wrap. Using a meat mallet, evenly pound the chop to approximately 1/2- to 3/4-inch thick.
  • To a shallow dish, add the flour. To a second shallow dish, add the eggs and whisk to combine. To a third dish, add the breadcrumbs. Dredge the pounded pork chop in the flour on both sides and shake off any excess. Then coat the chop in egg, again shaking off any excess. Lastly, add the chop to the breadcrumbs, pressing the breadcrumbs into both sides of the chop.
  • Test the temperature of the frying oil with a piece of breadcrumb; if it bubbles all around and doesn't stop, the oil is ready. Carefully add the pork chop to the oil and fry until golden brown, 2 to 3 minutes. Drain on a paper-towel-lined baking sheet and season with salt. While the pork is frying, make dressing.
  • For the salad and dressing: Add the shallot, vinegar and mustard to a bowl. Whisk in the olive oil and season with salt and pepper to taste.
  • Add the arugula, tomatoes, bocconcini, roasted potatoes and blanched string beans to a large bowl. Add half of the dressing and toss to combine. Add more dressing as needed. Taste and adjust the seasoning.
  • Set the fried pork chop on a plate and top with the salad.

Pork is one of my husband's favorite dishes, and he absolutely loves this one. A great choice for a Sunday dinner. A delicious recipe from Tyler Florence, courtesy of Food Network. 6 hours of preparation time is for brining the pork.

5 lbs center-cut bone-in pork roast
1 gallon water
1 cup kosher salt
1 cup brown sugar
1 tablespoon whole black peppercorn
1 bunch fresh thyme, divided
salt, to taste
fresh ground black pepper, to taste
olive oil
4 carrots
1 head garlic, split
1 medium onion, halved
2 shallots, halved
2 cups apple juice
1 tablespoon butter

Steps:

  • Have butcher cut the chine bone in between each rib of the pork roast to make carving easier.
  • Leave the fat cap on for added moisture and flavor.
  • Line a large stockpot or bucket with a plastic bag (I use a paint bucket I purchased from a paint store specifically for brining).
  • Pour water in and dissolve the salt and brown sugar.
  • Add peppercorns and a few thyme sprigs.
  • Place the pork roast in the brine and if using a bag, tie the bag closed so the pork is submerged.
  • Refrigerate (I surround with ice) for 6 hours.
  • Remove pork from the brine and dry thoroughly with paper towels.
  • Preheat oven to 400°F.
  • Lay thyme sprigs all over the roast, season with salt and pepper, then secure with butcher's twine to help hold the shape.
  • Coat a roasting pan with olive oil and set on 2 burners over high heat until almost smoking.
  • Sear the pork, fat side down, until caramelized.
  • Turn the roast to brown all sides, about 10 minutes.
  • To flavor the pork drippings, scatter carrots, garlic, onion, shallots and more thyme sprigs in the pan, and then transfer the roast to the oven.
  • Roast until a meat thermometer, inserted in the thickest part of the roast registers 150°F-- about 1 hour.
  • Remove the pork to a cutting board to rest while preparing the pan sauce.
  • Discard the aromatic vegetables and set the pan on 2 burners over high heat.
  • Deglaze the pan with apple juice, scraping up the yummy bits off the bottom.
  • Reduce by a third, season with salt& pepper, and whisk in the butter to smooth out.
  • Serve.
  • Enjoy!
