4 chicken breasts
6 quarts chicken broth
3 tablespoons oil
1 tablespoon garlic, minced
1 tablespoon ginger, minced
3/4 cup tahini
1/2 cup kikkoman thai style chili sauce
1/3 cup Kikkoman soy sauce
1/3 cup rice vinegar
3 tablespoons sugar
3/4 cup reserved chicken broth
1 lb rice sticks (noodles)
2 tablespoons sesame oil
2 cups cucumbers, peeled, seeded and cut into 1/4 inch slices
1 cup green onion, cut diagonally into thin slices
1/8 cup sesame seeds, toasted

Steps:

  • In large pot; add broth to cover. Over high heat, bring to a boil; reduce heat and simmer, covered, about 20 minutes or until chicken is cooked through.
  • Cool chicken in broth. Remove chicken from broth; strain and reserve broth. Remove and discard skin and shred chicken into bite-size pieces.
  • In saucepan over medium heat, heat oil with garlic and ginger just until it sizzles.
  • Remove from heat; whisk in tahini, chili sauce, soy sauce, vinegar and sugar. Slowly whisk in broth until sauce has a thin, creamy consistency.
  • Soak noodles in hot water about 5 minutes or until soft; drain. Cook noodles in boiling water about 3 minutes or until transparent; drain and cool in cold water. Drain well; toss with oil.
  • Place 3/4 cup noodles in center of bowl or plate. Toss 1/2 cup chicken with 2 tablespoons sauce; mound on top of noodles. Arrange 1/4 cup cucumbers on one side of noodles and 1/4 cup green onions on opposite side. Sprinkle plate with 1 teaspoon sesame seed.

2 lbs skinless, boneless chicken breasts
2 bunches green onions, chopped
1 TBS minced ginger
1 TBS minced garlic
1/2 TBS red pepper oil
1/2 TBS salt
4 TBS sesame seed paste, Asian*
4 TBS soy sauce
1-1/2 TBS brown vinegar*
4 TBS brown sugar
2 TBS sesame oil
*found in Asian market

Steps:

  • Boil the chicken for 20 minutes or until done. Shred the chicken. Can be done in Kitchen Aid Mixer with paddle attachment while warm in a few minutes. Mix all other ingredients together except the green onions. Pour the sauce over the chicken and combine with the green onions. Serve in a bowl or on a platter at room temperature with lettuce leaves to be eaten as lettuce wrap filling or as Asian chicken salad.

1 t sugar
2 1/2 t chili oil
4 t soya
1/2 t roasted and ground Sichuan peppercorns.

1 gr onion
1/8 slice ginger
1 stalk celery, diced
1 1/2 oz cilantro inc. stalks

Steps:

  • Combine sauce ingred. and mix well.' Cut chicken into strips. Cover with water, add scallions, ginger and salt. Bring to boil, then simmer gently til done - it's v quick. Remove chicken and rinse under cold water. Reserve 3 T poaching liquid. Pull chicken into long shreds. Mix reserved poaching liquid with tahini. Combine chicken, celery, cilantro and sesame sauce.
