dough - ready - made, for pizza
cheese - 7 oz (200 g)
mince - 9 oz (250 g)
onions - 1 small head
carrots - 2 small
tomatoes - 9 oz (250 g), mashed
oregano
savory
basil
black pepper
salt
arugula - a few leaves

Steps:

  • Sauté the minced meat in a pan with the onions, carrots and black pepper and salt to taste. Spread the dough in a pan and smear it with the tomato paste, then sprinkle it with spices.
  • Drain the lightly fried mince and distribute it on the crust, sprinkle it with grated cheese and put it to bake in a moderate oven.
  • Decorate with arugula salad on top.

1/4 cup extra-virgin olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped
1 celery stalk, coarsely chopped
1 carrot, coarsely chopped
1 pound ground chuck beef
One 28-ounce can crushed tomatoes
1/4 cup flat-leaf Italian parsley, chopped
8 fresh basil leaves, chopped
Salt and freshly ground black pepper
1/4 cup freshly grated Pecorino Romano

Steps:

  • In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish bolognese with Pecorino Romano.

1 long loaf, 20 to 24 inches, Italian semolina bread, day old is fine
1 tablespoon extra-virgin olive oil, 1 turn of the pan
2 slices pancetta or bacon, chopped
2 pounds ground beef
2 cloves garlic, chopped
2 medium yellow onions, peeled and finely chopped
1 small carrot, peeled and chopped
Coarse black pepper and coarse salt
1 tablespoon Worcestershire sauce
1 teaspoon allspice, 1/3 palm full
1/2 cup red wine, 1 couple of glugs
1/2 cup beef stock
1 (14-ounce) can crushed tomatoes
Handful flat-leaf parsley, finely chopped
1 pound fresh smoked mozzarella, fresh mozzarella or scamorza (firmer, aged mozzarella balls) thinly sliced
4 handfuls grated Parmigiano or Romano
1 cup fresh basil, 20 leaves, shredded or torn

Steps:

  • Heat the oven to 450 degrees F.
  • Split bread lengthwise then cut in half again and hollow out some of the insides of bread. Lightly crisp bread in oven, 5 to 8 minutes. Remove bread and switch broiler on.
  • Heat a nonstick skillet over medium-high to high heat. Add extra-virgin olive oil, 1 turn of the pan. Add the pancetta, render a minute or so, add the meat and break it up into an even layer. Let the meat caramelize 1 to 2 minutes without stirring. Break it into small bits and brown well. Add garlic, onions and carrots and season with lots of coarse pepper, some salt, Worcestershire and allspice then cook 10 minutes, stirring frequently. Add wine and scrape up pan bits. Add stock and loosen up the mixture a little. Add tomatoes and parsley and heat through, 1 to 2 minutes. Fill breads and top with a thin layer of mozzarella and a sprinkle of Parmigiano or Romano. Broil the pizzas to melt cheese. Top each pizza liberally with basil and serve (with a fork and knife).

Hearty, saucy 1-pan tempeh bolognese! Easy to make, ready in just 30 minutes, and perfect for pasta, eggplant parmesan, lasagna, and more!

1 Tbsp olive oil ((or sub twice as much water))
3/4 cup finely diced onion or shallot
1 cup shiitake (or cremini) mushrooms, minced
8 ounces tempeh ((finely chopped or grated on a box grater))
3 cloves garlic, minced
2 Tbsp coconut aminos ((or 1 Tbsp tamari or balsamic vinegar))
1/2 tsp fennel seed
1/2 tsp red pepper flake ((adjust to preferred spice level))
1/4 cup dry red wine
1 28-ounce can crushed tomatoes
3 Tbsp tomato paste
1 Tbsp fresh oregano
1-2 Tbsp vegan parmesan cheese ((plus more to taste))
1-2 Tbsp sweetener of choice ( (such as maple syrup or coconut sugar))
Water as needed to thin
Spaghetti squash
Cooked pasta
Fresh basil

Steps:

  • Heat a large-rimmed skillet, pot, or dutch oven (as large as possible to give room for browning) over medium heat. Once hot, add oil (or water) and onion and sauté for 4-5 minutes until translucent and soft, stirring frequently. If using water, add more water as needed as it evaporates quickly.
  • Add mushrooms and stir. Sauté for 2 minutes more. Then add shredded tempeh and garlic and stir (if your pan is small, do this in 2 batches so the tempeh has room to brown*). Then add coconut aminos, fennel seeds, and red pepper flake. Sauté for 4-5 minutes (or up to 10 minutes), stirring frequently, until everything is golden brown. Turn down heat if browning too quickly.
  • Add wine (optional), stir, and cook for 1 minute. Then add crushed tomatoes, tomato paste, oregano, vegan parmesan, and sweetener. Thin with water if needed (we added about 1/4 cup / 60 ml). Stir to combine and simmer for 10 minutes.
  • Taste and adjust flavors as needed, adding more coconut aminos or salt for saltiness, red pepper flake for spice, oregano for herbal flavor, tomato paste for depth of flavor, or vegan parmesan for cheesy flavor.
  • Serve with your favorite pasta or pasta alternative, like spaghetti squash, penne, or zucchini or carrot noodles and garnish with fresh basil (optional)!
  • Cooled leftovers will keep covered in the refrigerator up to 5 days, or in the freezer up to 1 month. Reheat in a saucepan or microwave until hot, adding a little water as needed to rehydrate.

1/2 lb Italian sausage, removed from casing
1/2 lb lean ground beef
1 cup Italian-style tomato sauce
1 tablespoon olive oil
14 ounces prepared pizza crust
1 cup ricotta cheese
1 large egg
2 cups shredded Italian cheese blend

Steps:

  • Preheat oven to 400 degrees F. Combine Italian sausage and ground beef. Brown meat mixture in skillet over medium heat until cooked through. Add tomato sauce to meat mixture. Remove from heat.
  • Brush sides and bottom of 13 x9 baking pan with olive oil. Unroll dough into pan, pressing into rectangular shape to form crust.
  • Combine ricotta cheese and egg, and then spread mixture onto crust. Top with meat sauce and shredded cheese.
  • Bake for 20- 25 minutes until top is golden brown. Let stand for 5 minutes before serving.

Rich tomato based meat sauce with beef and pork is combined with all the traditional ingredients of pasta bolognese for a flavorful weeknight meal that you can whip up in no time!

2 tablespoons olive oil
4 garlic cloves (crushed)
1 onion (finely diced)
1 carrot (finely diced)
1 rib celery (finely diced)
1 pound ground beef
½ pound ground pork
1 ¼ cups red wine (or beef broth)
1 cup whole milk
28 ounces whole tomatoes (with juice)
4 tablespoons tomato paste
1 teaspoon Italian seasoning
1 bay leaf
½ teaspoon salt
¼ teaspoon black pepper
pappardelle or tagliatelle (or another long pasta for serving)

Steps:

  • Cook onion in oil over medium heat until it starts to soften, about 3-4 minutes. Add garlic, carrot and celery. Cook until softened, an additional 5 minutes.
  • Add beef and pork. Brown until no pink remains. Drain fat. Add wine and simmer until evaporated, about 7-9 minutes. Add milk and simmer until evaporated, about 6-7 minutes.
  • Stir in tomato paste, Italian seasoning, tomatoes with juice and bay leaf. Break tomatoes up with a spoon. Cover and simmer 30 minutes or until thickened. Season with salt & pepper to taste.
  • Meanwhile, cook pasta according to package directions. Drain, reserving 1 ½ cups of pasta water.
  • Toss pasta with sauce adding pasta water to thin out if needed.
  • Serve hot with parmesan cheese.

  • Roughly chop onion, celery, and carrot just so they fit in your food processor. Pulse until finely chopped (about 12 pulses), or chop by hand.
  • In a Dutch oven, brown ground beef, sausage and onion/celery/carrots over medium heat. Add garlic and red pepper flakes and cook 30 more seconds. Drain grease.
  • Add all remaining sauce ingredients EXCEPT fresh basil and heavy cream and bring to a simmer (add dried basil at this time if using). Simmer uncovered over low heat for 30-45 minutes, stirring occasionally until reduced and thickened to desired consistency. Stir more often towards the end of cooking so Bolognese doesn’t burn.
  • Stir in heavy cream and fresh basil and cook an additional 3 minutes. Taste and season with additional salt, pepper, sugar or red pepper flakes to taste (I like more salt). Serve with pasta and plenty of freshly grated Parmesan cheese.
