"REAL" ITALIAN BOLOGNESE SAUCE



After traveling throughout Italy, savoring the fine tastes of Bolognese from the many different regions, I decided to formulate my own. Try it, you'll love it.

1/4 lb bacon
1 medium onion (finely chopped)
1 stalk celery (finely chopped)
1 large carrot (finely chopped)
1 (2 teaspoon) jar garlic or 4 cloves garlic (minced)
4 tablespoons butter or 4 tablespoons margarine
3 tablespoons olive oil
1 lb lean ground beef
1/2-3/4 lb ground pork
1 (8 ounce) can beef consomme
1 cup dry white wine
1 (28 ounce) can s&w italian style crushed tomatoes (or other)
1 teaspoon salt
1/2 teaspoon black pepper
1 -1 1/2 teaspoon rubbed sage
1 tablespoon oregano
1/2 teaspoon red pepper flakes
1/4 teaspoon nutmeg
1 cup milk (I use 2%)
1 lb small penne pasta

Steps:

  • In a Dutch Oven or Medium Size Pot, heat butter and olive oil over medium heat until butter begins to froth.
  • Add onion, celery, carrot, garlic, and bacon.
  • Cook until onions are translucent (about 8 to 10 minutes).
  • Remove bacon and remove fat.
  • Chop lean portions of bacon in small pieces and return to pot.
  • Add Ground beef and ground Pork, and cook until meat loses red, raw color.
  • Raise heat and add wine and consomme.
  • Cook sauce until wine and consomme are mostly evaporated.
  • Turn heat down to simmer and add oregano, salt, pepper, sage, red pepper flakes, and nutmeg.
  • Let cook for approximately 20 minutes.
  • Add crushed tomatoes and bring heat to a boil.
  • Once the mixture comes to a boil, return to simmer.
  • Let sauce simmer (very slowly) partially covered for about 2 to 4 hours (the longer the better), stirring occasionally to prevent sticking.
  • About 5 to 10 minutes before serving, add milk.
  • Sauce can now be added to cooked Penne Pasta, Spaghetti or many other Pastas to your liking.
  • Remaining sauce may be frozen for up to two months for future use.

1 tbsp olive oil
4 rashers smoked streaky bacon, finely chopped
2 medium onions, finely chopped
2 carrots, trimmed and finely chopped
2 celery sticks, finely chopped
2 garlic cloves finely chopped
2-3 sprigs rosemary leaves picked and finely chopped
500g beef mince
2 x 400g tins plum tomatoes
small pack basil leaves picked, ¾ finely chopped and the rest left whole for garnish
1 tsp dried oregano
2 fresh bay leaves
2 tbsp tomato purée
1 beef stock cube
1 red chilli deseeded and finely chopped (optional)
125ml red wine
6 cherry tomatoes sliced in half
75g parmesan grated, plus extra to serve
400g spaghetti
crusty bread to serve (optional)

Steps:

  • Put a large saucepan on a medium heat and add 1 tbsp olive oil.
  • Add 4 finely chopped bacon rashers and fry for 10 mins until golden and crisp.
  • Reduce the heat and add the 2 onions, 2 carrots, 2 celery sticks, 2 garlic cloves and the leaves from 2-3 sprigs rosemary, all finely chopped, then fry for 10 mins. Stir the veg often until it softens.
  • Increase the heat to medium-high, add 500g beef mince and cook stirring for 3-4 mins until the meat is browned all over.
  • Add 2 tins plum tomatoes, the finely chopped leaves from ¾ small pack basil, 1 tsp dried oregano, 2 bay leaves, 2 tbsp tomato purée, 1 beef stock cube, 1 deseeded and finely chopped red chilli (if using), 125ml red wine and 6 halved cherry tomatoes. Stir with a wooden spoon, breaking up the plum tomatoes.
  • Bring to the boil, reduce to a gentle simmer and cover with a lid. Cook for 1 hr 15 mins stirring occasionally, until you have a rich, thick sauce.
  • Add the 75g grated parmesan, check the seasoning and stir.
  • When the bolognese is nearly finished, cook 400g spaghetti following the pack instructions.
  • Drain the spaghetti and either stir into the bolognese sauce, or serve the sauce on top. Serve with more grated parmesan, the remaining basil leaves and crusty bread, if you like.

It's easy to make the BEST Pasta with Bolognese sauce at home- the kind where the sauce clings to every piece of pasta and has the most delicious Italian taste, with a few tricks and only five ingredients!

16 oz. rigatoni (or other pasta shape)
24 oz. marinara sauce (I used Rao's)
1 lb. lean ground beef
2 tablespoons extra virgin olive oil (I like California Olive Ranch)
1/4 cup pecorino Romano cheese (finely grated, plus more for serving)
kosher salt (to taste)
black pepper (to taste)
chopped fresh parsley (for garnish (optional))

Steps:

  • Bring a large pot of heavily salted water to a boil. It should be as salty as the ocean- taste it if you aren't sure.
  • Cook pasta until just before it's al dente (about 2 minutes before the time designated on the package).
  • Meanwhile, cook ground beef in a large deep skillet until fully cooked. As you are cooking it, break it into very small pieces. I used a potato masher to make sure it got broken up enough.
  • Move the beef to one side of the skillet and tilt it in order to separate the grease/liquid. Remove the grease with a spoon and discard.
  • Add the marinara sauce to the ground beef. Stir, cover, and simmer until heated through.
  • When pasta is done just before it's al dente, reserve 1-2 cups of the pasta water and drain the rest. Don't drain too thoroughly- it's OK, and actually a good thing, if it has some of the water clinging to it.
  • Add the drained pasta to the skillet with the sauce (you can also move it directly from the water using a slotted spoon). If the skillet is too small, you can add the pasta back into the pot in which it cooked, and add the sauce to it.
  • Stir to coat the pasta in the sauce in the skillet or pot and keep heat on medium low. Add 1/4 cup of the reserved pasta water, stirring to coat. Add more pasta water as necessary to help the pasta finish cooking to al dente- it will help the sauce thicken and stick to every piece of pasta (I used about 3/4 cup total).
  • Turn off the heat. Stir in olive oil (2 tablespoons) and pecorino romano cheese (1/4 cup). Taste and add salt if necessary.
  • Serve immediately with extra pecorino romano and garnished with fresh parsley, seasoned with fresh ground black pepper.

Many people answered with one word: "Bolognese." Ms. Hazan had a few recipes for the classic sauce, and they are all outstanding. This one appeared in her book "The Essentials of Classic Italian Cuisine," and one reader called it "the gold standard." Try it and see for yourself.

1 tablespoon vegetable oil
3 tablespoons butter plus 1 tablespoon for tossing the pasta
1/2 cup chopped onion
2/3 cup chopped celery
2/3 cup chopped carrot
3/4 pound ground beef chuck (or you can use 1 part pork to 2 parts beef)
Salt
Black pepper, ground fresh from the mill
1 cup whole milk
Whole nutmeg
1 cup dry white wine
1 1/2 cups canned imported Italian plum tomatoes, cut up, with their juice
1 1/4 to 1 1/2 pounds pasta
Freshly grated parmigiano-reggiano cheese at the table

Steps:

  • Put the oil, butter and chopped onion in the pot and turn the heat on to medium. Cook and stir the onion until it has become translucent, then add the chopped celery and carrot. Cook for about 2 minutes, stirring vegetables to coat them well.
  • Add ground beef, a large pinch of salt and a few grindings of pepper. Crumble the meat with a fork, stir well and cook until the beef has lost its raw, red color.
  • Add milk and let it simmer gently, stirring frequently, until it has bubbled away completely. Add a tiny grating -- about 1/8 teaspoon -- of nutmeg, and stir.
  • Add the wine, let it simmer until it has evaporated, then add the tomatoes and stir thoroughly to coat all ingredients well. When the tomatoes begin to bubble, turn the heat down so that the sauce cooks at the laziest of simmers, with just an intermittent bubble breaking through to the surface. Cook, uncovered, for 3 hours or more, stirring from time to time. While the sauce is cooking, you are likely to find that it begins to dry out and the fat separates from the meat. To keep it from sticking, add 1/2 cup of water whenever necessary. At the end, however, no water at all must be left and the fat must separate from the sauce. Taste and correct for salt.
  • Toss with cooked drained pasta, adding the tablespoon of butter, and serve with freshly grated Parmesan on the side.

  • Make sauce: In a Dutch oven (or 5-quart saucepan), heat oil over high heat. Add onions, carrots, and garlic; cook, stirring, until slightly softened, about 2 minutes. Add beef and pork; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Stir in tomato paste; cook 1 minute. Season generously with salt and pepper.
  • Add wine and tomatoes. Bring sauce to a simmer; cook, partially covered, stirring occasionally, until thickened, about 1 hour. Add milk; simmer until completely absorbed, about 15 minutes more. Season again with salt and pepper.
  • When sauce is almost done, cook pasta in a pot of boiling salted water until al dente, according to package instructions; drain. Toss pasta with half the meat sauce; save remaining sauce for next day. Serve sprinkled with cheese.

How to Make Bolognese Sauce image

This Bolognese sauce is dedicated to the late great Marcella Hazan. She was considered the Julia Child of Italian food, and at a time when most Americans thought 'Bolognese' was spaghetti sauce with chunks of hamburger, Marcella taught us just how magnificent this meat sauce could be. I like to toss it with some mezzi rigatoni and serve it with a little grated Parmesan cheese and a sprinkle of parsley.

Steps:

  • Melt butter with olive oil in a large saucepan over medium heat; cook onion, celery, and carrot with pinch of salt until onion turns translucent, about 5 minutes. Stir ground beef into vegetables and cook, stirring constantly until meat is crumbly and no longer pink, about 5 minutes. Season meat mixture with 1 1/2 teaspoon salt, black pepper, cayenne pepper, and nutmeg.
  • Pour milk into ground beef mixture and bring to a simmer. Cook, stirring often, until most of the milk has evaporated and bottom of pan is still slightly saucy, about 5 minutes.
  • Raise heat to medium high and pour white wine into ground beef mixture; cook and stir until white wine has mostly evaporated, about 5 more minutes.
  • Pour tomatoes with juice into a large mixing bowl and crush them with your fingers until they resemble a slightly chunky sauce. Pour tomatoes into sauce; fill can with 2 cups water and add to sauce. Bring to a simmer.
  • Reduce heat to low and simmer, stirring often, until mixture cooks down into a thick sauce, at least 3 hours but preferably 4 to 6 hours. Skim fat from top of sauce if desired. If sauce is too thick or too hot on the bottom, add a little more water. Taste and adjust seasonings before serving.

1/4 cup extra-virgin olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped
1 celery stalk, coarsely chopped
1 carrot, coarsely chopped
1 pound ground chuck beef
One 28-ounce can crushed tomatoes
1/4 cup flat-leaf Italian parsley, chopped
8 fresh basil leaves, chopped

  • In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish bolognese with Pecorino Romano.

CLASSIC BOLOGNESE

I make many meat-based sauces, or ragu. The original ragu alla Bolognese (meat sauce) dates to the late 19th century and is credited to a cook named Pellegrino Artusi, in 1891. Though it is named for Bologna, Italy, it was first cooked or created in the town of a lesser-known name, Imola, in the region of Emilia-Romagna. Serve this sauce with egg tagliatelle or pappardelle or layer it between egg pasta sheets with bechamel for lasagna alla Bolognese.

2 tablespoons EVOO
4 tablespoons butter
1 onion, finely chopped
2 carrots, peeled and finely chopped
2 ribs celery with leafy tops, finely chopped
4 cloves garlic, peeled and finely chopped or grated
1 bay leaf
1/4 pound meaty pancetta, finely chopped
1 pound ground beef (80 to 85 percent lean)
Kosher salt and freshly ground pepper
1 scant teaspoon ground white pepper
About 1/8 teaspoon freshly grated nutmeg
A quarter to a third of a 750-milliliter bottle of white wine
2 cups whole milk
One 28-ounce can diced or crushed Italian tomatoes
1 cup beef bone broth or stock plus 1 cup to reserve
1 small chunk cheese rind from Parmigiano-Reggiano, optional
1 pound egg tagliatelle or pappardelle
Freshly grated Parmigiano-Reggiano, for serving
A handful of fresh basil, leaves torn

Steps:

  • Heat a large, heavy pot over medium heat. Add EVOO, 2 turns of the pan. Add the butter to the oil in small pieces and when the butter foams, add the onions, carrots, celery, garlic and bay and stir, about 5 minutes. Add pancetta and stir 8 to 10 more minutes to render and crisp. Add about a third of the beef and crumble it with a wooden paddle or spoon, let all of the liquid absorb and let the meat begin to lightly caramelize before adding the next third; repeat. Season the meat with salt, pepper, white pepper and nutmeg. Add white wine, about a quarter to a third of a bottle, then stir and let it absorb into the meat. Scrape up all of the fond or the drippings from the meats and vegetables, being careful not to burn the meat. Add milk, tomatoes and about 1 cup stock, a piece of cheese rind from Parmigiano-Reggiano if you have one, then lower heat to simmer, partially cover and cook the sauce 2 1/2 to 3 hours, stirring occasionally and thoroughly with a wooden spoon. Add up to 1 extra cup of stock if needed if sauce gets too thick. The perfect traditional Bolognese should be buttery, uniform and emulsified, the consistency of rich, tender, pourable oatmeal. Remove bay leaf and the rind, if using, from the sauce. Sauce may be made a few days ahead as the longer it sets, the better it gets.
  • To serve, cook pasta in salted water 1 minute less than package directions for al dente. Reserve 1 full cup of starchy cooking water, then drain pasta and place back in hot pot.
  • Combine pasta with about two-thirds of the sauce, the cooking water and a couple of handfuls of grated cheese, tossing with tongs to combine.
  • Serve pasta in shallow bowls with a little torn basil.

1 Med Carrot
2 cloves of Garlic
1 Tbsp. Dried Oregano
2 14 oz. Canned Tomatoes
1 lb. Ground Beef
1 Tbsp. of Tomato Puree
2 oz Red Merlot Wine
1 Tbsp. Worcestershire Sauce
3 Oz. whole milk

Steps:

  • To start, you first halve the onion.
  • With a grater, start Grating the onion and the carrot; keep your fingers back and don't cut your finger.
  • Now on high heat and add a Tbsp. Olive Oil to a nonstick saucepan.
  • Once the saucepan is heating, add the grated onion and carrot into the saucepan. Using a wooden spoon, sweat off excess moisture from carrots. You want to produce a certain degree of puree that enhances a petite body and develops the bolognese sauce.
  • Now Lightly season with salt and pepper to the grated onion and carrot combination.
  • Add the two garlic cloves by crushing using a garlic crusher if you have one. If you do not have a garlic crusher, use the back of your knife and place the garlic clove underneath the blade and pound on edge and dice it after into smaller pieces) and add it into the saucepan.
  • Add in your dried Oregano.
  • Get your frying saucepan active using the spoon; the point is not to brown the vegetables but to lightly sweat them off.
  • Use the spoon to make a little well in the center of the frying pan and add in your minced beef and quickly get it moving in the saucepan.
  • Once the mince has sweated off, make a well in the center of the saucepan, then add tomato puree. It will give the bolognese a little tangy, slightly acidic taste, which is recognizable with Bolognese sauce.
  • Add in your Red Wine now; the amount to add is entirely arbitrary, and II'dalmost says to hazard a guess as to how thick you like your sauce to be, and it's your prerogative to add in as liberally as you like!
  • Lower the heat and reduce the Red wine to a syrup which would give your sauce more body and strengthen its flavor profile
  • it's time to add in your chopped tomatoes and fold them into the awesome goodness you've created in your saucepan.
  • Add your Worcestershire sauce, which gives your bolognese a little heat and spice while darkening the minced meat.
  • Let the mixture simmer for 5-6 minutes.
  • Add your whole cream milk to give your bolognese a little more enriched flavor to give it that smooth, silky finish.

2-4 tbsp olive oil
2 slices of bacon (cut into small pieces (optional))
1 medium onion (finely chopped)
4 cloves garlic (minced)
½ medium root celery (cut in small cubes)
2 medium carrots (cut in small cubes)
1 medium parsnip (cut in small cubes)
2 bay leaves
1 tsp dry paprika powder
1 tsp dry basil
2 lb trio ground meet (beef, pork, veal)
1 tbsp salt
½ tsp pepper
3 cups tomato sauce (or diced tomatoes)
1 cups chicken broth or water
1 cup whole milk
3 tbsp of tomato paste
4 balls allspice (optional)
Spaghetti (or another pasta)
Parmesan or provolone cheese

Steps:

  • Clean and cut the vegetables (carrot, celery root and parsnip) in small cubes. Chop finely the onion and mince the garlic. Set aside.
  • Cut the slices of bacon on small cubes. In a large skillet, over the medium high heat, sauté the bacon cubes for 2 minutes. Add 2 tbsp of olive oil and sauté onion and garlic for 2 minutes. Then add the vegetables and sauté for 2-3 minutes.
  • Add seasoning: dry paprika, bay leaf, allspice and stir. Make a space on the skillet and add ground meats. Season the meats with salt and pepper. Cook the meat, breaking it up with a wooden spoon, and stir occasionally until the meat has browned.
  • Stir in the strained tomatoes or tomato sauce and add the broth (or water). Mix well the ground meat with the vegetables and the tomato sauce.
  • Cover the skillet with the lid and simmer on medium-low heat for 15-20 minutes, stirring occasionally.
  • At the end add 1 cup of milk and stir well. Season with more salt and pepper if needed. If you like more profound taste of tomato sauce, add 3 tbsp of tomato paste. Stir and let simmer for another 5 minutes. Serve with spaghetti or other pasta.
  • As a topping use Parmesan cheese or provolone cheese. They add delicious taste to bolognese sauce. You may also garnish with parsley.

Homemade Bolognese Sauce (Pappardelle) image

Rich tomato based meat sauce with beef and pork is combined with all the traditional ingredients of pasta bolognese for a flavorful weeknight meal that you can whip up in no time!

2 tablespoons olive oil
4 garlic cloves (crushed)
1 onion (finely diced)
1 carrot (finely diced)
1 rib celery (finely diced)
1 pound ground beef
½ pound ground pork
1 ¼ cups red wine (or beef broth)
1 cup whole milk
28 ounces whole tomatoes (with juice)
4 tablespoons tomato paste
1 teaspoon Italian seasoning
1 bay leaf
½ teaspoon salt
¼ teaspoon black pepper
pappardelle or tagliatelle (or another long pasta for serving)

Steps:

  • Cook onion in oil over medium heat until it starts to soften, about 3-4 minutes. Add garlic, carrot and celery. Cook until softened, an additional 5 minutes.
  • Add beef and pork. Brown until no pink remains. Drain fat. Add wine and simmer until evaporated, about 7-9 minutes. Add milk and simmer until evaporated, about 6-7 minutes.
  • Stir in tomato paste, Italian seasoning, tomatoes with juice and bay leaf. Break tomatoes up with a spoon. Cover and simmer 30 minutes or until thickened. Season with salt & pepper to taste.
  • Meanwhile, cook pasta according to package directions. Drain, reserving 1 ½ cups of pasta water.
  • Toss pasta with sauce adding pasta water to thin out if needed.
  • Serve hot with parmesan cheese.
