2 tbsp avocado oil
4 baby bok choy (sliced in half)
1 tsp minced ginger
2 garlic cloves (minced)
2 tbsp water
salt and pepper

Steps:

  • Heat the avocado oil in a wok or sauté pan on medium.
  • Add the minced ginger and minced garlic and stir for 30 seconds.
  • Add the bok choy and use tongs to turn and stir fry the bok choy in the garlic and ginger for 2 minutes.
  • Pour two tablespoons of water into the pan, cover and let cook for 2 minutes more.
  • Turn off the heat, add salt and pepper and serve.

4 slices bacon, chopped
2 pounds baby bok choy
1 teaspoon olive oil
½ small red onion, chopped
1 teaspoon red pepper flakes
1 teaspoon minced garlic
salt to taste

Steps:

  • Fry bacon in a large skillet over medium heat until crispy. Remove bacon and drain the fat, reserving one tablespoon of the grease in the skillet. Add the olive oil, onion, red pepper flakes and garlic. Cook and stir over medium heat until the onions are starting to be tender.
  • Add the bok choy, and place a lid on the pan. Let cook for 3 to 5 minutes. Remove the lid; cook and stir until the bok choy is tender but still crunchy, about 2 minutes. Stir in the bacon, and season with salt. Serve piping hot!

2 (14 ounce) cans chicken broth
6 heads baby bok choy, trimmed
salt to taste

Steps:

  • Melt the butter in a saucepan over medium heat, and cook and stir the garlic until very lightly browned, about 5 minutes. Pour in the chicken broth, add the baby bok choy, and bring to a boil. Reduce heat to a simmer, and cook until the bok choy are tender, about 6 minutes. Season to taste with salt and black pepper.

Steps:

2 tablespoons vegetable oil
3 green onions, chopped
1 cup sliced fresh mushrooms
2 garlic cloves, crushed
1 teaspoon crushed red pepper flakes
3/4 teaspoon salt
fresh ground black pepper
3 tablespoons coconut milk or 3 tablespoons vegetable broth

Steps:

  • Cut off the base of the bok choy stalks; discard. Separate the stalks and leaves. If the stems of the bok choy leaves are large, chop finely. Wash the leaves and stalks; drain in a colander.
  • Heat the oil in a large skillet or saucepan over medium-low heat. Stir in the green onions, mushrooms, garlic, crushed red pepper, salt and black pepper; cook, stirring often, 5 minutes. Stir in the bok choy and coconut milk; cook, stirring until the leaves are tender and stalks are still crunchy, 3-6 minutes.

2 teaspoons salt
2 ½ ounces butter
3 slices bacon, cut into thin strips
1 clove garlic, minced
2 cups water
1 pinch dried basil
8 ounces dry fettuccine pasta
2 tablespoons milk, or more to taste
freshly ground black pepper to taste
2 tablespoons milk

Steps:

  • Combine bok choy and salt in a bowl and rub leaves with salt.
  • Melt 1 1/2 ounces butter in a pot over medium heat. Add bacon and garlic and cook until garlic has softened and bacon is crisp, about 3 minutes. Add bok choy, cover pot, and cook until leaves have softened, about 3 minutes. Add water, cover, and simmer for 20 minutes. Season with basil and remaining butter.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain and keep warm.
  • Drain half the liquid from the pot with the bok choy and transfer remaining contents to a skillet over medium-high heat. Season with pepper and add milk. Mix in cooked fettuccine. Cook and stir for 1 minute.

While that is heating prepare your Bok Choy (I like simply cutting it in half after washing it well - but you may want to peel the individual leaves off and cook them that way - either way is fine). As the oil heats, add the garlic and fresh ginger to the pan and allow it to cook for about a minute and then add the bok choy. Cook the bok choy for about 1-2 minutes per side until it starts to wilt. Add the red peppers (I used chipotle pepper, but red peppers is fine). Stir a couple more times and remove from the heat.
