EASY BOK CHOY
There's no better way to enjoy the crisp delicate taste of bok choy. This basic stir-fry can be served as is, or you can add meat or tofu to make it more substantial. Quick and easy, this is one of my favorite ways to load up on leafy greens. Serve with fluffy white rice, or over noodles in soup.

BOK CHOY STIR-FRY
This is a wonderful side dish for an Asian style entree. Bok choy has a wonderful, crisp texture that is reminiscent of celery. You can easily add shrimp or chicken to make a main dish, but I recommend doubling the sauce if you do so. Simple and yummy:)

10 MINUTE LEMON GARLIC SAUTEED BOK CHOY
Boy choy is a nutritious vegetable and an excellent source of vitamin C and vitamin A. It tastes mild and when cooked correctly has a light crunch at the bottom with wilted greens on top. When making the recipe below, it's important not to burn the garlic. I love this when the garlic is well toasted, but if the garlic turns very dark brown, it will taste bitter. Another thing to note is that even when you have removed the bok choy from the pan, it continues to wilt and soften. So if you notice the garlic browning too much, it's okay to transfer everything out of the pan a minute early.

Steps:
- Remove any discolored outer stalks of the bok choy and discard them (or save for stock later). Place the bok choy into a colander and rinse with cool water, rubbing any grit or dirt from between the leaves. Trim the ends then slice each bok choy in half lengthwise. Or if they are large, cut into quarters. Pat dry.
- Add the oil, garlic and red pepper flakes to a wide room-temperature skillet. Place over medium heat and cook, stirring occasionally, until the oil begins to bubble around the garlic, but before the garlic starts to turn light brown.
- Toss in the boy choy and spread into one layer. Sprinkle with about 1/4 teaspoon of salt then cook, without stirring, until the bottom is starting to turn brown, about 2 minutes.
- Flip then cook another 2 minutes or until the green leaves have wilted and the white bottoms are beginning to soften, but still have some crunch.
- Transfer to a platter then squeeze 2 lemon wedges on top. A teaspoon or so of olive oil is nice, too. Serve with more lemon wedges on the side.

- Place the sesame seeds, if using, in a large stock pot or braiser (this will seem silly, but you will use the same pan to cook the bok choy). Heat the pan over medium heat, stirring frequently until you can smell the sesame seeds and they turn a bit more golden in color. This will only take 2 or 3 minutes; watch carefully that they don’t get too brown. Turn the seeds onto a small plate and set aside.
- Heat the vegetable oil in the same pan over medium-low heat. Add the garlic and the ginger and stir for 1 minute until you can smell the aromas. Add the bok choy and stir for another 2 minutes, then pour in the chicken broth, soy sauce and hot sauce and bring to a simmer. Cover the pan and cook the bok choy for about 8 minutes, until it is tender, stirring occasionally. Transfer to a serving bowl and serve hot, with the sesame seeds sprinkled on top if desired.

- Discard any yellowing leaves from your bok choy, and slice it at a slight angle into 1-inch pieces. When you reach the tough base of the leaf, discard. Throw your bok choy into a large bowl with lots of cold water. Agitate the veggies with your hands and/or use your faucet sprayer to loosen any dirt. Soak for 5 to 10 minutes.
- Scoop the veggies into a colander and rinse the bowl clean of any sand. Repeat the process until you don’t see any dirt on the leaves or at the bottom of your bowl. We tend to wash leafy greens three times, and then we use the water to water plants! Once the washed bok choy is in a colander, give it a good shake to release any excess water.
- Heat your wok or large pan over low heat and add the oil. Immediately add the ginger first (if using) and then the garlic (if you don't feel like mincing garlic, you can use a garlic press, one of our most often used kitchen tools! It gives the dish a much more garlicky flavor.).
- Once you have the ginger and garlic in the pan, add the veggies and turn the heat up to the highest setting. Stir-fry using a scooping motion so the ginger, garlic and oil are evenly distributed among the vegetables. This first 30 seconds is a critical time not to let your aromatics burn and to cook your veggies evenly.

- Braised Bok Choy. If you want to infuse your bok choy with rich flavor, braising the greens is a smart solution. Start by separating the cabbage into its individual leaves, chopping the larger ones into small pieces.
- Roasted Bok Choy. For those who prefer to skip the stove, it’s also possible to roast bok choy greens in the oven. First, separate the cabbage leaves from the center stalk and chop them into even pieces.
- Serve Bok Choy Like Celery. Remember eating ants on a log as a child? You can enjoy that same treat today by substituting bok choy for the celery. Fill the white stem with your favorite topping (peanut butter, salsa, guacamole, and cream cheese are all great options) and enjoy this low carb treat as a midday pick-me-up.
- Bok Choy Soup. Bok choy’s thick white stems hold up well when boiled, which makes this cabbage green a perfect addition to soup recipes. Udon noodle soup lovers will love this recipe that includes a poached egg in the broth, and you can put a vegan twist on a classic Vietnamese pho soup recipe with bok choy and mushrooms.
- Bok Choy Fried Rice. Looking at a bunch of leftover rice and not sure how to use it? Fry it up with soy sauce, your extra bok choy, and a few eggs for a quick weeknight dinner option.
- Bok Choy Salad. While bok choy is traditionally served cooked, there’s no reason why you can’t add the raw greens to a salad for a subtle nutty flavor.
- Accessorize Sandwiches with Bok Choy. You can dress up your sandwich by serving it with a few leaves of bok choy on top. The greens hold up well in case you won’t be able to eat your lunch for a few hours, and they create an excellent moisture barrier between the bread and your condiments.
- Grilled Bok Choy. The outdoor grill isn’t just for meat! You can prepare bok choy to perfection with just a few minutes above the charcoal. Just cut the cabbages in half, drizzle them with olive oil, season as desired, and toss them on the grill.
- Bok Choy Sauerkraut. Homemade sauerkraut is not an experience to be missed, and you can make your own at home with extra bok choy. The white stems are best for this recipe, so you might want to find an alternative use for the leaves.
- Blanch and Freeze Bok Choy. If you still have more sauerkraut than you know what to do with after following these recipes, then it’s time to freeze the excess for future use.
