STEAMED SPINACH WITH LEMON
Steamed spinach, cooked in mere minutes, is tossed with heart-healthy olive oil in this easy side dish.

Steps:
- Fill a medium saucepan with 2 inches of water, and fit with a steamer insert. Bring to a boil. Add spinach. Reduce to a simmer. Cover, and steam until spinach has wilted, about 2 minutes.
- Transfer to a serving bowl. Toss with oil, lemon juice, and salt. Garnish with lemon. Serve immediately.

- In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

- Prep the ingredients. Wash and chop the spinach leaves. Don't let the leaves go dry. Leave some water. Thinly slice the garlic. Crack the eggs into a bowl, and add a tablespoon of milk. Add a pinch of salt, and whisk the eggs gently just enough for the yolk to mix well.
- Heat a cast iron skillet (or any other frying pan), and add the chopped spinach, garlic, and sprinkle some salt. Let the leaves wilt, and take them off the skillet.
- Pour a teaspoon olive oil on the pan, and spread it evenly with a spatula. Reduce the flame to medium, and pour the egg mixture. Tilt the pan and let the eggs spread evenly. As soon as the omelette start to set, lift near the edges with the spatula so that the uncooked eggs can reach the bottom of the pan. Once the center starts to set, top half of the omelette with the cooked spinach and garlic. Now sprinkle the grated cheese on top of it.
- Lower the flame, and cook further. Wait for the cheese to start melting, and once the omelette starts to get detached from sides, fold in half. Gently slide the omelette to a plate.

- Trim the leeks, leaving only the white and pale green parts.
- Slice them in half lenthwise, then in short slices crosswise.
- Wash them again and drain them well.
- In a large skillet, saute the leeks in the butter until they soften and begin to fall apart, then stir in the flour.
- Add the stock and season lightly with salt and nutmeg stirring well.
- Simmer for 10 minutes.
- Meanwhile, wash the spinach and pick it over.
- Drain it well and chop it finely.
- Add the spinach to the leeks and simmer for a further 5 minutes, stirring to ensure the spinach is evenly cooked.

- Sautee spinach uncovered - to really get best spinach results, you cook it just enough to wilt - don't overcook.
- Heat olive oil in a skillet on medium heat. Add 3 cloves of minced fresh garlic when the oil is hot, and saute the garlic for about 1 minute to release the flavor, constantly stirring to keep garlic from burning.
- Add spinach, a handful at a time, and adding another handful as spinach wilts, and cook, uncovered, on medium-high heat for only 1 minute, constantly stirring, uncovered.
