2 cups raisins
1 cup water
3 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup shortening
1 ¾ cups white sugar
2 eggs
1 teaspoon vanilla extract
½ cup chopped walnuts

Steps:

  • Place water and raisins in a small saucepan, and bring to boil. Boil 3 to 4 minutes. Set aside to cool.
  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
  • In a large bowl, cream together shortening and sugar. Beat in eggs and vanilla. Stir in raisins along with the liquid in which they were boiled. Blend in flour mixture, then mix in the walnuts. Drop by tablespoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in preheated oven, or until firm. Remove from cookie sheets to cool on wire racks.

1 cup water
2 cups raisins
1 cup shortening
1-3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts

Steps:

  • Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, salt and spices; gradually add to creamed mixture and mix well. Stir in nuts and raisins. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 12-14 minutes or until golden brown. Remove to wire racks to cool.

1 cup raisins
1 ¼ cups water
⅔ cup butter
1 cup white sugar
2 eggs
1 cup rolled oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg
½ teaspoon salt

Steps:

  • Boil raisins for 2 to 3 minutes, reserving raisin water.
  • Cream margarine and sugar. Add eggs, oatmeal and 9 tablespoons raisin water. Add flour, baking soda, spices and salt. Stir in raisins.
  • Drop by a rounded teaspoonful onto cookie sheet. Bake 350 degrees F (175 degrees C) for 10-12 minutes.

These are my oldest son Bruce's favorite cookie! This is one of my most used recipes. Sometimes I substitute dates, craisins or chocolate pieces for the raisins. This recipe really makes a big batch.

2 c raisins
1 c water
2 c sugar
3/4 c shortening, crisco
3/4 c butter, softened
3 eggs
1 tsp vanilla extract
5-6 c flour
1 c oatmeal, uncooked
1/2 tsp salt
1 tsp nutmeg or omit and use 2 teaspoons cinnamon
1 tsp cinnamon
2 tsp baking soda in 1/4 cup hot water
1 c nuts

Steps:

  • 1. Boil raisins with water until almost all water is absorbed. Cool.
  • 2. Cream together sugar, crisco, and butter. Add eggs.
  • 3. Sift together flour, salt, nutmeg and cinnamon.
  • 4. Add to butter mixture and mix in remaining ingredients, including the raisins.
  • 5. Drop by teaspoon onto un-greased cookie sheet. Bake 10 minutes in a 350 degree oven. Let stand on cookie sheet 2 minutes, then remove to wire rack to cool.

1 cup packed brown sugar
1 cup sugar
1 cup butter, softened
3 large eggs
2 tablespoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
3 tablespoons buttermilk
FILLING:
1 tablespoon cornstarch
3 tablespoons all-purpose flour
1 cup packed brown sugar
2 cups boiling water
1-1/2 cup seedless raisins

Steps:

  • In a large bowl, cream sugars and butter. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt and nutmeg; add to creamed mixture alternately with buttermilk. Cover and refrigerate until easy to handle. , For filling, in a saucepan, combine the cornstarch, flour and brown sugar. Stir in water until smooth. Add raisins. Bring to a boil over medium heat; cook and stir and cook for 3 minutes or until thickened. Cool. , On a floured surface, roll out dough into 1/8-in. thickness. Cut with floured 3-in.-round cookie cutters. Spoon 2 teaspoons filling on top of half the circles and top each with another circle. Pinch edges together and cut slit in top. , Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-13 minutes or until lightly browned. Remove to wire racks to cool.

2 cups sugar (white, brown or a combination of the two)
3 cups oats, dry- sometimes takes a bit more (old fashioned, or quick cooking)
1/2 cup milk (evaporated, buttermilk, any kind but I wouldn't use sweetened, condensed. That would be too sweet)
2/3 cup cocoa, unsweetened
1/4 teaspoon salt
2 teaspoons vanilla
1/2 cup butter
1/2 cup peanut butter
1/2 cup nuts, coarsely chopped (walnuts, pecans, coconut.)

Steps:

  • Put oats in a large bowl.
  • In a small saucepan over medium heat bring to a full boil: butter, milk, sugar, and cocoa. Reduce heat and simmer for 3 minutes. Remove from heat. There is a knack to this. Boil them too long, they will be dry and crumbly, too short and they will be runny.
  • Quickly add peanut butter, salt, vanilla.
  • Mix liquid into oats. Add more oats as necessary until it has a moist doughy consistency.
  • Quickly put in buttered cake pan or quickly drop by the teaspoonful onto wax paper. Let them stand at room temperature for one hour.
  • Variations: Add 1/2 cup coarsely chopped nuts, or Coconut. Replace 1/2 the oats with coconut. Use less cocoa and more peanut butter.

1 1/2 cups raisins
1 cup water
1 cup shortening (can substitute butter)
1 1/2 cups sugar
3 eggs, beaten
1 teaspoon vanilla extract
3 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • Preheat oven to 375 degrees F.
  • Combine raisins and water in saucepan. Bring to a boil, reduce heat to simmer, and cook until all of the water has been absorped.
  • Sift together flour, bakng powder, soda and salt. Set aside.
  • Cream shortening and sugar together in mixer, then add eggs and vanilla and cream all together. Add flour mixture and combine just until dough comes together. Add raisins and incorporate well.
  • Combine sugar, cinnamon and nutmeg in a small bowl. Form cookie mix into balls the size of walnuts. Roll dough through sugar mix, place on cookie sheet about 2-inches apart, and flatten slightly with the bottom of a glass.
  • Bake for 9-10 minutes, until slightly golden.
