CRAZY-SIMPLE COTTAGE HAM, POTATOES, AND GREEN BEANS

Crazy-Simple Cottage Ham, Potatoes, and Green Beans image

Cottage ham is one of my favorite dishes to eat because it's rich in flavor and incredibly simple to make. Requiring only five ingredients and five minutes of prep time, this dish could quickly become a go-to meal in your household. If you can't wait the hour it takes to cook, drop it in a slow cooker in the morning, and it'll be ready when you get home.

~ GRAMS COUNTRY STYLE POTATOES & GREEN BEANS ~

~ Grams Country Style Potatoes & Green Beans ~ image

These green beans bring back many great memories of my Gram. I always admired what she was able to do with so little ingredients. This was one of my favorite meals she would make with the abundance of fresh green beans and new potatoes from her garden. She sure could cook and fresh veggies always made such a difference. Here's to...

Provided by Cassie *

Categories     Other Side Dishes

Time 30m

Number Of Ingredients 8

3/4 lb fresh green beans - ends snapped - cut into or into 3rds depending how big they are. steam or boil in salted water until crisp tender
8 slice bacon, chopped
2 medium new red potatoes - cubed ( i don't peel )
1 medium onion, cut in half and sliced
1/3 c water or more as needed ( i sometimes use chicken broth )
3/4 tsp salt
1 clove garlic, minced
fresh cracked black pepper

Steps:

  • 1. Steam or boil green beans until almost tender. They will cook longer in the skillet, so you don't want them mushy.
  • 2. In my cast iron skillet, I add the bacon and cook until not quite crisp.
  • 3. Add the onion, potatoes, garlic, salt, pepper and water. Place a lid over the skillet and cook on med for 10 - 12 minutes. Stirring occasionally. Remove lid and add the beans and more water if going dry. Remain cooking until potatoes are tender and beans are as well.
  • 4. Serve hot. Gram would always make a huge skillet of these and usually would serve with fresh corn on the cob and sweet juicy tomato slices fresh from her garden. Enjoy!

GREEN BEANS AND POTATOES - CLASSIC RECIPE & 5 DELICIOUS VARIATIONS

Green Beans And Potatoes - Classic Recipe & 5 Delicious Variations image

If you're looking for simple, delicious, no-fuss dish that can be served in many different ways then you've got to try this green beans and potato salad!

Provided by Italian Recipe Book

Categories     Salad     Side Dish

Time 30m

Number Of Ingredients 8

1 lb green beans (, approx 450 g)
4 small size red or gold potatoes (, approx 12-15 oz)
3 tbsp Extra virgin olive oil
1 tbsp White wine vinegar
Fresh parsley (, finely chopped)
1 garlic clove (, chopped (optional))
Salt to taste
Pepper to taste

Steps:

  • Wash and peel potatoes. If using medium size potatoes cut them in half. If using large size potato cut it in quarters. Although I still recommend using small size potatoes.
  • In a large pot with cold salted water add potatoes and bring them to boil. Cook for 5-10 minutes. In the meantime,
  • Wash and trim green beans.
  • To make the process easier and faster work green beans in batches.Line up each batch on one side and trim off the ends with a sharp knife.Flip the beans around, line up the tips again, and trim off the other side.At this point you can cut trimmed beans in smaller size or leave as is.Repeat the process with remaining green beans.
  • Once potatoes have been boiling for a few minutes, add green beans.
  • Cook everything together for another 5-15 minutes. Check occasionally on both veggies (see Note 1).
  • Once both are cooked, remove potatoes and quickly pass green beans under cold water to prevent discoloration (optional).
  • Cut up potatoes into chunks.
  • In a small bowl mix together extra virgin olive oil and white wine vinegar.
  • In a large bowl add potatoes and green beans, add dressing, fresh parsley and give a gentle stir.
  • Top with freshly ground pepper to taste.
  • Since potatoes and green beans were boiled in salted water you might not need extra salt.

SOUTHERN GREEN BEANS AND POTATOES

Southern Green Beans And Potatoes image

If you're looking for green bean recipes, there's a good chance you'll stumble on a Southern interpretation of this soulful side. Our version uses fresh green beans and potatoes, but we have a fun trick-we peel a thin strip around the middle of each potato before cooking for textural contrast and pretty presentation.

Provided by Carla Hall

Time 37m

Yield Serves 4 (serving size: about 1 cup)

Number Of Ingredients 8

2 teaspoons olive oil
1 medium onion, halved and very thinly sliced
2 garlic cloves, sliced
1/4 teaspoon crushed red pepper
3 cups unsalted chicken stock
3/4 teaspoon kosher salt
1 1/2 pounds small red and gold potatoes,a strip peeled from the center of each
1 pound green beans, trimmed

Steps:

  • Heat oil in a 5-quart saucepan over medium-high. Add onion. Cook, stirring occasionally, until just tender, about 2 minutes. Add garlic and red pepper, and cook, stirring frequently, until onion is tender, about 3 minutes.
  • Add stock, salt, and potatoes. Bring to a boil, then reduce to a steady simmer. Simmer 10 minutes or until the potatoes are just tender enough to be pierced with a fork but still firm.
  • Add green beans, cover, and simmer until very tender, about 6 minutes. Use a slotted spoon to transfer the potatoes and green beans to a serving dish. Bring the liquid to a boil, and cook until reduced to 1 cup, about 6 minutes. Spoon over the vegetables, and gently fold to mix. Serve hot.

1/2 teaspoon black pepper
1 teaspoon salt
1/2 cup finely diced onion (Optional)

  • Pick through the green beans and discard any that are withered or discolored. This simple cooking method is suitable for only the freshest of beans.
  • I prefer to leave green beans whole, they make such a great finger food when left at their full length. But to serve at dinner, you might want to cut them into 3-inch pieces.
  • Bring a large pot of water to a boil. Add 1 teaspoon kosher salt. Drop the green beans into the boiling water. Bring back to a full boil and cook, uncovered, until beans are just tender, about 5 minutes. But start checking after 3 minutes (use a fork to take one out of the pot and taste).
  • Drain the boiled green beans into a colander, shake dry and season with kosher salt. You can use other seasonings of course, and a generous pat of butter on top of the hot green beans is heavenly. But really, when they are fresh, green beans only need brief boiling and some salt.
