MOM'S NEW YEARS PIG'S FEET
This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

- Thoroughly wash pig feet in cold water and place into a large pot or Dutch oven. Add celery, onion, vinegar, red pepper flakes, seasoned salt, garlic, black pepper, and bay leaves to the feet; pour in water to cover.
- Bring to a boil, reduce heat to low, and simmer until meat is tender and falling off the bones, about 2 hours.

- I never measure My ingredients when I make this dish. I always season to taste and I suggest you do the same. I am very heavy on seasoning. I like My foods to be full of flavor.
- Wash the pig feet in the pot that you are going to cook them inches.
- Add vinegar to the pot. Making sure the feet get a good coating. Massage the vinegar into the meat.
- Add the other ingredients instead of the bay leaves.
- massage the ingredients into the meat and vinegar.
- Stick your finger into the mix to taste the seasoning. If it needs more or whatever ingredient add it and continue the massage.
- Add water to the pot and the bay leaves. Stir the feet around in the pot. Taste the seasoned water. If it needs more seasoning add more. Continue to add seasoning and vinegar to the water as it boils if you think it needs more flavoring. Cook on low fire for 4 hours or until it is tender. Cook it according to how you like to eat them.

- Begin by giving the pigs feet a good washing. For the purpose of presentation, remove any unsightly hair that you observe. Yes, pigs grow hair on the toes and feet just like humans. A disposable razor will remove the hair
- Place all the ingredients in a large boiling pot and cover with water. Bring water to a boil over medium-high heat and then reduce heat to a simmer.
- Cover the pot with a lid and allow pigs feet to cook until tender, about 3 hours. While your meat is cooking stir constantly and skim away any foam that develops.

- Heat lard or oil in a pot. Add the diced onion and saute it until it gets a translucent, glassy look for about 3 to 5 minutes.
- Add the pig's feet and mix it well then cook it for 5 to 10 minutes until the skin gets some golden brown color.
- Add the paprika, parsley or celery, garlic, tomato and Italian pepper.
- Add water to submerge all the feet to around ¾. Place the lid on and simmer it on low heat for about 40 minutes or until the meat peals off the bones easily. Mind to have enough water during the cooking period or else it may burn down.
- Remove the lid half an hour before finishing the cooking to reduce the excess water until the feet are only half or even less submerged.

- Rinse the pig's feet under cold running water. Bring a large pot of water to the boil, add the pieces and simmer for about five minutes. Unless your pot is very large, you'll probably have to do this in batches. Drain the feet and rinse them well. Bring a fresh pot of water to the boil and repeat this process (this rids the feet of impurities).
- Wash the pot. Rinse the ginger (no need to peel it) and cut it into large chunks. Put the pieces on a cutting board and lightly crush them with the side of a cleaver. Put the ginger into the pot, then add the garlic. Break the dried chillies in half, shake out and discard the seeds, then put the chillies into the pot. Add the soy sauce, rice wine, cinnamon sticks, star anise, sugar, chun pei and 1 tsp of salt into the pot, along with 600ml (2¼ cups) of water. Bring to a simmer and cook until the sugar is dissolved.
- Put all the pieces of pig's feet into the pot and bring to the boil. Cover with the lid, turn down the heat and cook at a low simmer, occasionally moving around the pieces of pig's feet so they are submerged in the liquid. After about an hour, add the peanuts.
- Simmer the ingredients for about three hours in total, or until the pig's feet pieces are very tender. The sauce should reduce to a sticky, light syrupy consistency; if it's too thin, remove the lid when the meat is tender and continue to simmer. Taste the sauce and correct the seasonings, if necessary.

- Place pork feet and ginger slices in a large pot and add water to cover pork feet. Bring the water to a boil and continue boiling for about 3 minutes. Discard water and wash pork feet carefully.
- Add pork feet into pressure cooker and add water until the pork is covered completely. Cook over high heat until rated pressure has been reached. Turn to lowest heat and cook at rated pressure for 15 minutes. (*see footnote 3)
- After releasing pressure naturally, transfer pork feet to a wok (or dutch oven). Transfer pork broth from pressure cooker to wok until it almost covers the pork. Add the rest of the ingredients into wok and turn to high heat. After bringing the broth to a boil, reduce to low heat and simmer covered for 30 minutes. Stir pork feet every 10 minutes to avoid burning on the bottom. Stir more often toward the end of braising, after the sauce has thickened. Add water during the braising process if the broth becomes thick while the pork is still tough. If the pork turns very soft but the sauce is still thin, turn to medium heat and boil uncovered. Reduce sauce until desired thickness.
- To cook without a pressure cooker, skip step 2 and add boiled pork, water and all ingredients into a wok or a dutch oven. Add water until it covers pork and boil for around 2 hours. If the water level becomes too low while pork is still though, add warm water, 1 to 2 cups at a time, and continue braising.
