1/2 cup Land O Lakes® Butter softened
1/2 cup firmly packed brown sugar
1/4 cup shortening
3/4 cup molasses
1 large Land O Lakes® Egg
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
Granulated sugar

Steps:

  • Combine butter, brown sugar, shortening, molasses and egg in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking soda, cinnamon, ginger, cloves and salt; beat at low speed until well mixed.
  • Divide dough in half; wrap each half in plastic food wrap. Refrigerate 1-2 hours or until firm.
  • Heat oven to 375°F.
  • Working with one-half of dough at a time, shape dough into 1 1/2-inch balls. Roll balls in granulated sugar. Place, 2 inches apart, onto ungreased cookie sheets. Flatten balls to 2 1/2-inch diameter with bottom of glass. Bake 8-11 minutes or until set.

This recipe has been handed down in our family since World War II and it remains a favorite with the grandkids today. Do not substitute anything for the melted shortening; your results will not be as good. If you prefer a crispier molasses cookie, bake one minute longer. These cookies freeze well (if you can keep your family from eating them up first!)

3/4 cup shortening, melted and cooled
1 cup sugar
1/4 cup molasses
1 large egg
2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 cup sugar

Steps:

  • Preheat oven to 375 degrees. Melt shortening and allow it to cool.
  • In a large bowl, mix together the shortening, sugar, molasses, and egg. Beat well.
  • Sift together the flour, baking soda, salt, and spices. Add to shortening/sugar mixture, mix well.
  • Chill dough about half an hour or until firm.
  • Roll into 1" balls, then roll balls in sugar. Place about 2 inches apart on cookie sheet.
  • Bake about 8 minutes at 375 degrees. The edges should be slightly brown. Do not overbake!
  • Cool on racks before storing.

The trick to getting 'chewy' cookies is to bake them the minimum time necessary and then cool them directly on a surface (i.e. - counter, table, etc). Don't cool them on a rack! You can also store them with a slice of apple.

1 cup packed brown sugar
¼ cup molasses
1 egg, beaten
2 teaspoons baking soda
2 cups all-purpose flour
½ teaspoon ground cloves

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, blend the shortening, sugar, molasses and egg. Add the baking soda, flour, clove, ginger, cinnamon and salt; mix well.
  • Form into 1 inch balls and roll in granulated sugar.
  • Place on cookie sheets 2 inches apart and bake for 8 to 10 minutes in the preheated oven. Cool on a flat surface.

2/3 cup unsulfured molasses
2/3 cup packed dark-brown sugar
1 tablespoon ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cloves
2 teaspoons baking soda
1/2 teaspoon salt
2 sticks unsalted butter, cut into 1-tablespoon pieces and softened
3 1/2 cups all-purpose flour, divided, plus more if needed and more for surface
1 large egg, lightly beaten
Martha's Favorite Royal Icing
Fine sanding sugar

Steps:

  • Combine molasses, sugar, and spices in a medium saucepan, and bring to a boil, stirring to dissolve; boil 2 minutes. Transfer mixture to a stand mixer fitted with the paddle. Add baking soda and salt, and beat on low speed until frothy, about 2 minutes. Beat in butter, 1 tablespoon at a time, until thoroughly combined. Beat in a third of the flour, then the egg and remaining two-thirds flour. Increase speed to medium, and beat until mixture is smooth, pulls away from sides of bowl, and is no longer tacky (add more flour, 1 tablespoon at a time, if needed), about 3 minutes. Transfer mixture to a lightly floured surface, and knead, adding flour as needed, until a cohesive dough forms (it should no longer stick to your hands), about 5 minutes. Divide dough in half.
  • Preheat oven to 325 degrees. Roll out half the dough to a little less than 1/4-inch thickness on generously floured parchment. Brush off excess flour, transfer dough on parchment to a baking sheet, and freeze until firm, about 15 minutes. Cut into shapes with cookie cutters, rerolling scraps as needed. Transfer to parchment-lined baking sheets, and freeze until firm, about 15 minutes. Bake until golden on edges, 18 to 20 minutes, rotating once and firmly rapping baking sheet halfway through baking to flatten any bubbles in cookies. Let cookies cool completely on baking sheets set on wire racks.
  • Place icing in a pastry bag fitted with a small plain round tip (Ateco #0, 1, or 2). Pipe outlines and details on cookies. Immediately sprinkle with sanding sugar, and tap off excess. Let set completely at room temperature, at least 4 hours or (ideally) overnight.

1 cup dark brown sugar
8 tablespoons (1 stick) unsalted butter, softened
1/2 cup vegetable shortening
3 1/2 cups all-purpose flour
3/4 cup molasses
2 large eggs
2 teaspoons cinnamon
2 teaspoons ground ginger
2 teaspoon baking soda
1 1/2 cups granulated sugar
1/4 teaspoon cream of tartar
Kosher salt
3 large egg whites
8 marshmallows
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • For the molasses cookies: Put the brown sugar, butter and vegetable shortening in a large bowl and beat with a hand mixer on medium speed until combined. Add the flour, molasses, eggs, cinnamon, ginger and baking soda and beat until combined.
  • Use a tablespoon to scoop the dough onto the baking sheets. Make sure there is ample space between each dough ball as the cookies will spread.
  • Bake until puffed on top, 10 to 12 minutes. Cool the cookies on the baking sheet on a rack for 5 minutes, then transfer the cookies to the rack to cool completely before frosting.
  • For the boiled frosting: Combine the granulated sugar, 3/4 cup water, cream of tartar and a pinch of salt in a medium heavy-bottomed pot, bring to a boil over medium heat and cook until a candy thermometer registers 245 degrees, about 3 minutes. Remove from the heat and fold in the marshmallows until melted.
  • Put the egg whites in the bowl of a stand mixer fitted with a whisk attachment and whip on medium-high speed into stiff peaks. Turn the mixer to low and slowly pour the hot sugar mixture into the egg whites. Beat on medium speed until cool and fluffy, then fold in the vanilla extract.
  • Using a butter knife, frost the bottoms of half the cookies, top them with the remaining cookies, and serve.

2 sticks (1 cup) unsalted butter, cut into tablespoon pieces
1 large egg, lightly beaten
3¾ to 4 cups all-purpose flour
½ teaspoon salt
Decorating icing, sprinkles, dragées, and sanding sugar, for decorating
Special Equipment: Rolling pin; assorted 2- to 3-inch cookie cutters (in shapes such as people, snowflakes, candy canes, etc.); a metal offset spatula; a pastry bag fitted with 1/8- to 1/4-inch plain tip (optional)

Steps:

  • Bring molasses, brown sugar, and spices to a boil in a 4- to 5-quart heavy saucepan over moderate heat, stirring occasionally, and remove from heat. Stir in baking soda (mixture will foam up), then stir in butter 3 pieces at a time, letting each addition melt before adding next, until all butter is melted. Add egg and stir until combined, then stir in 3¾ cups flour and salt.
  • Preheat oven to 325°F.
  • Transfer dough to a lightly floured surface and knead, dusting with as much of remaining ¼ cup flour as needed to prevent sticking, until soft and easy to handle, 30 seconds to 1 minute. Divide dough in half, then wrap one half in plastic wrap and keep at room temperature.
  • Roll out remaining dough into a 14-inch round (⅛ inch thick) on a lightly floured surface. Cut out as many cookies as possible with cutters and carefully transfer with offset spatula to 2 buttered large baking sheets, arranging them about 1 inch apart.
  • Bake cookies in upper and lower thirds of oven, switching position of sheets halfway through baking, until edges are slightly darker, 10 to 12 minutes total (watch carefully toward end of baking; cookies can burn easily). Transfer cookies to wire racks to cool completely. Make more cookies with remaining dough and scraps (reroll once).
  • Put icing in pastry bag (if using) and pipe or spread decoratively onto cookies.
