This is an Northern Ireland recipe given to me by my Mum many years ago!! This cake is always much tastier the following day! Enjoy!

1 cup water
4 cups candied mixed fruit
1 cup white sugar
¾ cup butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon mixed spice
2 eggs, beaten

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x5 inch loaf pan, and line with parchment paper or aluminum foil.
  • Combine the water, mixed fruit, sugar and butter in a saucepan over medium heat. Bring to a boil, stirring occasionally, and boil gently for about 10 minutes. Sift the flour, baking soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Mix in the eggs. Pour into the greased loaf pan.
  • Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean. Cool cake in the pan for at least 10 minutes before removing.

A popular cake from WWI and The Great Depression that uses no eggs, butter, or milk.

1 cup vegetable shortening
2 cups water
2 cups dark raisins
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon ground cloves
1 1/2 cups granulated sugar
3 cups all purpose flour
1 teaspoon baking soda

Steps:

  • In a saucepan combine shortening, water, raisins, cinnamon, nutmeg, allspice, cloves and sugar. Bring to boil, reduce heat, simmer for 10 minutes. Remove from heat and let stand until COMPLETELY cool.
  • Preheat oven to 350 F degrees. Grease and flour a 9 x 13-inch baking pan, a Bundt pan, or 9 x 5-inch 2 loaf pans. Set aside.
  • Stir the flour and baking soda into the cooled raisin mixture and mix until just combined and flour is mostly incorporated.
  • Pour batter into prepared pan. Bake 30 minutes for a 9 x 13-inch pan or until the top of the cake is just firm to the touch. Remove from oven and allow to cool.
  • Traditionally served un-frosted.

2 cups brown sugar
2 cups raisins
1 cup butter
3 Tablespoons cocoa powder
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1/4 teaspoon ground cloves
1 1/2 cups brown sugar
1/4 cup butter
3 Tablespoons milk
2 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saucepan, mix together water, brown sugar, raisins, butter, and cocoa. Bring to a boil, and let simmer for 5 minutes. Remove from heat, and let cool.
  • In a separate bowl, mix together, flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice and ground cloves.
  • Add wet ingredients to the dry ingredients, and stir until completely incorporated.
  • Pour into a 13x9 inch glass dish or cake pan that has been generously sprayed with non-stick cooking spray.
  • Bake for 35 minutes of until a toothpick comes out clean from the center of the cake.
  • While cooling, prepare the Brown Sugar Frosting.
  • In a medium sized saucepan, mix brown sugar, butter and milk. Heat until the sugar is dissolved, whisking constantly. Remove from heat and let cool completely.
  • Once the sugar mixture is cooled, pour sugar mixture into a mixer bowl. Add powdered sugar and mix until a frosting is formed. If a runnier texture is desired, add milk 1 T. at a time until desired consistency.
  • Frost the cake, and enjoy!

1 ½ cups water
1 egg
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda

½ cup butter, melted
1 cup confectioners' sugar
⅓ cup milk

Steps:

  • Heat oven to 325 degrees(165 degrees C). Grease a 9 x 5 inch pan. Set aside.
  • In 3 quart saucepan, boil raisins slowly water until there is 1 cup of water left and the raisins are plump. Allow mixture to cool.
  • Stir in sugar and egg. Mix spices with boiling water and add to raisin mixture. Add flour, soda, vanilla and last, the melted shortening. Blend well. Pour into loaf pan.
  • Bake for 40 to 50 minutes. When cool make glaze by mixing confectioners sugar, ground cinnamon, and milk. Spread on top of cooled cake.

This recipe produces a really moist fruit cake it was given to me by my mom, and it's really easy. My mom uses it for Christmas cake by icing it. I use it for birthdays, Christmas, or just for a treat.

12 ounces candied mixed fruit
5 ounces glace cherries, roughly chopped
2 ounces candied mixed citrus peel
2 ounces chopped walnuts
¾ cup butter
1 teaspoon ground allspice
½ teaspoon baking soda
1 cup milk
12 ounces sifted self-rising flour
2 eggs
1 ½ cups white sugar

Steps:

  • Preheat oven to 325 degrees F (160 degrees C). Line one 8 inch deep sided cake tin with parchment paper.
  • Place the fruit cherries, peel, walnuts, sugar, butter or margarine, mixed spice, baking soda and milk in a medium sized saucepan. Bring to a boil and simmer for 5 minutes. Let mixture cool to body temperature.
  • Stir in the flour and the eggs. Pour batter into the prepared pan. Wrap outside of pan with brown paper or newspaper.
  • Bake at 325 degrees F (160 degrees C) for 40 minutes then reduce temperature to 300 degrees F (150 degrees C) and continue to baking cake for 1-1/2 hours. Remove cake from oven and allow it to cool in tin for 5 minutes then turn it out onto a cooling rack, remove greaseproof paper and leave until cool. Cake can be stored for up to 6 months wrapped in foil and in an air tight tin.

150g Soft Brown Sugar
110g Butter
250ml Milk
300g Self Raising Flour

Steps:

  • Grease and line a 2lb bread tin.
  • In a saucepan add the fruit, sugar, milk and butter. Bring to a gentle boil stirring all the time.
  • Allow mix to cool properly (can take upwards of an hour).
  • Once cool, add flour and eggs to the mix and stir thoroughly.
  • Transfer mix to the tin and place in the centre of a pre-heated oven (Gas 5 / 190 C) for 1hr

  • Step 1.Boil the dry fruits In a medium saucepan, combine the butter with the raisins, cranberries, brown sugar,molasses and water and bring to a boil. Simmer over moderately high heat for 3-4 minutes, stirring occasionally. Remove from the heat and let stand for 45 minutes or until it is cool.Step 2.Add all the rest of ingredientsAdd the eggs (lightly beaten) and vanilla extract(optional) and the nuts.Add in the flour mix which is Flour+Baking powder+Salt+Ground spices+Zest of orange and lemon.I didn't add the spices and the zest of lemon and orange into the boil mix because we need to preserve the fresh smell of those spices and that of lemon and orange.The taste of a fruit cake is mostly the aroma of that cake :)Mix everything together, just until everything is well incorporated.Step 3.Bake the fruit cakeTransfer the batter into the prepared pan.7 inch pan / 8 inch pan will work. 2 egg whites (stiffly beaten)
1 1/2 cups granulated sugar
1/2 teaspoon light corn syrup
2/3 cup water
1 teaspoon vanilla extract

Steps:

  • Gather the ingredients.
  • Put the egg whites in the bowl of an electric mixer .
  • In a saucepan, combine the sugar, corn syrup, and water. Bring the sugar mixture to a boil, stirring it only until the sugar is completely dissolved.
  • Boil the syrup rapidly, without stirring, until it reaches the soft-ball stage : A small amount of the syrup should form a soft ball when dropped in cold water or spin a long thread when dropped from the tip of a spoon (You can also use a cooking thermometer; it should read about 240 F.)
  • Slowly pour the syrup in a fine stream over the egg whites while beating them constantly.
  • Add the vanilla extract.
  • Continue beating the mixture for 10 to 15 minutes, or until the frosting is cool and the right consistency to spread easily. If the frosting becomes too stiff for the beater, use a wooden spoon to mix.

Steps:

  • In a heavy saucepan combine sugar, water and cream of tartar. Slowly bring mixture to a boil, stirring sides of the saucepan with a brush dipped in water to remove any sugar crystals. Cover and boil for about 3 minutes or until a candy thermometer registers 245 degrees.
  • Beat egg whites with pinch of salt until glossy and peaked. Slowly pour in syrup as you continue to beat the whites. Beat until cool and frosting is soft and fluffy. Fold in vanilla.

30 g butter

1/2 cup chopped walnuts

Steps:

  • Combine carrot, raisins, water, sugar,butter, cinnamon, nutmeg in a saucepan.
  • Stir over low heat until sugar is disolved. Do not allow to boil.
  • Bring to boil, reduce heat, cover and simmer for 10 minutes.
  • Cool to room temperature.
  • Sift half flours and soda into cold mixture.
  • Then sift remaining flours and add walnuts.
  • Spread into a well greased cake tin. Bake in a moderately slow oven for about 1 hour.
  • Stand for 5 minutes before turning onto a wire rack to cool.
  • Tip. Any dried fruit can be used and the walnuts can be ommitted.
  • Frosting can be added to cake.

A Very Moist Fruit Cake - passed down from my nan

BOILED FRUIT MIXTURE
4 oz Brown Sugar
8 oz margarine or butter
1lb mixed fruit
2 tsp mixed spice
1/2 Pint Milk
4 oz Glace Cherries
2 eggs beaten
2 oz chopped walnuts
12 oz Self Raising Flour
1 tsp bicarbonate of soda

Steps:

  • Place all the ingredients for the fruit mix in a large saucepan bring to the boil and allow to cool for about 30 minutes
  • Preheat oven to 160C / Gas 3
  • Add the cherries and nuts stir through
  • then add eggs and mix well, add the flour and fold through the mix.
  • Place the mixture in a greased and floured 8' - deep cake tin. Tie some greaseproof paper around the outside of the tin so that the paper comes over the edges of the tin or optionally place over the top about half way through baking. Bake for 2 hours but check after 1.5 hours , check to see if cooked throughly with a skewer. If not bake a little further until the skewer comes out clean from the cake. Allow to cool and either decorate with marzipan and royal icing, or dried apricots and cherries and glaze with melted apricot jam or plain is very nice too.

125g unsalted butter, cubed, plus extra for the tin
175g light brown soft sugar,
200g raisins
200g sultanas
100g currants
50g mixed peel
225g self-raising flour
1½ tsp mixed spice
½ tsp bicarbonate of soda
2 eggs, beaten

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Butter and line a 900g loaf tin with baking parchment. Melt the sugar, butter and 225ml water in a large saucepan. Once melted, add the raisins, sultanas, currants and mixed peel. Bring to a gentle boil, and stirring occasionally, cook until reduced and softened, around 10-15 mins. Remove from the heat and leave to cool to room temperature.
  • Tip the flour, mixed spice, bicarbonate of soda and a pinch of salt into a large bowl. Add the cooled fruit mixture and stir, then add the eggs and mix to combine. Bake for 45-55 mins until dark brown and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 10 mins, then transfer to a wire rack to cool completely. Cut into slices to serve.
