Steps:
- In a blender, or food processor, add tomatoes, onion, jalapenos, garlic, cilantro, cumin, salt and juice of one lime.
- Blend until the salsa is as chunky or smooth as you would like. Taste and add more salt if desired.
- Chill for at least 30 minutes or overnight.

EASY BLENDER SALSA
My family begs me to make this during football season, with or without company coming over. It's so easy to make, that I don't mind. Use caution with the jalapeno pepper, however. I recommend using kitchen or disposable gloves. These amounts are the flavor my family likes, but you can use less or more jalapeno pepper depending on your tastes.

- Pour 1 can of tomatoes into a blender, and add the jalapeno pepper, onion, cilantro leaves, lemon juice, and salt. Blend until fairly smooth. Pour in the second can of tomatoes and blend briefly. Adjust seasonings to taste by adding more lemon juice and salt. Let the salsa rest for 1/2 hour before serving to allow the flavors to blend.

- In a medium-size mixing bowl, combine tomatoes, onion, cilantro, garlic, lime juice, tomatillo, and salt to taste. Mix well. Add 1/2 of the jalapeno pepper, and taste. If you desire your salsa with more of a kick, add the remaining 1/2 jalapeno. If you are satisfied with the salsa's heat, do not add the remaining jalapeno pepper. Cover the salsa, and chill until ready to serve.

Steps:
- Start by smashing your garlic to get the skins of and yes use the entire bud.
- Place the garlic, tomatoes and onion in a large pot and cover with water.
- Boil until the skin starts to separate from the tomato.
- This is when you know your veggies are done.
- Strain out all the water.
- Juice two limes into a blender.
- Add tomatoes, onion, jalapenos, garlic, salt and cilantro to the blender.
- (you may have to do this in stages if you have a smaller blender).
- Blend until smooth.
- To decrease the heat, cut the membrane and seeds out of the jalapenos.

- Roughly chop the tomatoes and place half of them into the blender. Roughly chop the onion and jalapeno and add to blender with the garlic. Then add the remaining chopped tomatoes, the cilantro, salt and black pepper if using. Begin by pulsing the ingredients until they blender gets going – if you’re tomatoes are not ripe enough you’ll need to add a couple of tablespoons of water to get the blades going. Once you have enough liquid at the bottom you can blend at low speed until the salsa is nice and smooth.

It’s really best to enjoy within 30 minutes of blending. Also do note that the longer it sits the darker the red tone will become.
