Oat Bran Muffins (Gluten-Free and Vegan) image

A delicious and satisfying gluten-free, vegan-friendly oat bran muffin.

Number Of Ingredients 15

1 1/2 cup gluten-free oats
1 cup gluten-free oat bran
1/2 cup brown rice flour
1/2 cup chickpea flour
1/3 cup coconut sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1 tsp cinnamon
1/4 tsp ground ginger
1 cup applesauce
1/2 cup water
1/4 cup maple syrup
1 Tbsp lemon juice
1 tsp lemon zest

Steps:

  • Preheat oven to 350 degrees and line muffin tin with unbleached liners.
  • Mix dry ingredients in a mixing bowl.
  • Mix wet ingredients in separate bowl or blender.
  • Pour wet ingredients into dry and mix just until combined.
  • Dollop into muffin tin and bake for 20-25 minutes (until inserted toothpick comes out clean).

3/4 cup oat bran

2 teaspoons baking soda

1 1/2 cups shredded carrots
2 peeled and shredded apples
1/2 cup raisins (optional)
1 cup chopped nuts
3/4 cup milk
2 beaten eggs
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
  • Stir in carrots, apples, raisins and nuts.
  • Combine milk, beaten eggs and vanilla.
  • Pour liquid ingredients into dry ingredients.
  • Stir until ingredients are moistened. DO NOT OVER MIX.
  • Fill muffin cups 3/4 full.
  • Bake for 15-20 minutes.

Oat bran muffins are a wholesome, delicious way to start the day. Buttermilk, applesauce and raisins deliver wonderful flavor and textures. No oil needed!

Number Of Ingredients 12

1 ½ cups Oat Bran (regular or gluten-free)
1 cup Buttermilk
1 Egg (lightly beaten)
1/3 cup Applesauce
2/3 cups Light Brown Sugar
½ teaspoon Vanilla Extract
1 cup All Purpose Flour (regular or measure-for-measure gluten-free flour blend)
1 teaspoon Baking Powder
1 teaspoon Baking Soda
½ teaspoon Kosher Salt
Zest from ½ an Orange
1/2 cup Raisins

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Spray a muffin pan with non-stick cooking spray and set aside. DO NOT USE MUFFIN LINERS.
  • Combine the bran and buttermilk in a large mixing bowl. Stir to fully combine. Allow to sit for 10 minutes.
  • In a small mixing bowl, whisk together the egg, applesauce, brown sugar and vanilla extract. Just until combined.
  • Add the mixture to the bran-buttermilk. Stir just until combined. NOTE: the bran mixture may be thick. Just stir by hand until all ingredients have blended together.
  • In a separate mixing bowl sift or whisk together the flour, baking powder, baking soda, salt and orange zest. Add to the bowl with the other ingredients and stir to combine.
  • Stir in the raisins.
  • Scoop the batter into the prepared muffin pan evenly (to just below the rim). Tap the pan gently if needed for the batter to fill in the cavities.
  • Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  • Allow the muffins to cool a few minutes in the pan until comfortable to lift out and place on a cooling rack to cool completely.

1 cup oat bran
1 cup all-purpose flour
1/4 cup plus 1 tablespoon sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup unsweetened applesauce
3 tablespoons canola oil
3 tablespoons fat-free milk
1/4 cup raisins
1/4 cup chopped walnuts
1/2 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the oat bran, flour, 1/4 cup sugar, baking powder and salt. In another bowl, beat the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. Fold in raisins., Fill muffin cups coated with cooking spray three-fourths full. Combine the walnuts, cinnamon and remaining sugar; sprinkle over batter. Bake at 400° for 16-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing form pan to a wire rack. Serve warm.

3/4 cup whole wheat flour (we grind our own)
1/4 cup all-purpose white flour
3/4 cup oat bran
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1 banana, mashed (1/3 cup mashed)
4 ounces activia cherry yogurt
1 medium egg
1/3 cup 1% low-fat milk
2 tablespoons vegetable oil
1/2 teaspoon vanilla
1/2 cup shredded carrot
1/2 cup chopped dates
1/2 cup chopped pecans

Steps:

  • Mix dry ingredients together. Add the carrots, dates, and pecans.
  • Mix liquid ingredients in separate bowl.
  • Combine the liquid ingredients with the dry ingredients and stir until moistened.
  • Lightly grease muffin tins. Fill 2/3 full with batter. Bake at 400 degrees for 18-20 minutes.

1/2 cup shredded carrot, hand grated (approximately 1 medium carrot)
1/2 cup chopped dates (about 5 medjool dates)
1/2 cup chopped walnuts

Steps:

  • Pre-heat oven to 375-F. Lightly grease a muffin tin or use liners.
  • In a medium bowl, mix dry ingredients.
  • In a separate bowl, mix wet ingredients.
  • Add dry mixture to wet and stir until just moistened.
  • Fold in carrot, dates, and walnuts.
  • Bake for 15 minutes, or until a toothpick inserted into the center comes out clean (or with a few crumbs attached).
