BOB'S PEACH COBBLER



Bob's Peach Cobbler image

A family friend (Bob) is famous for his "cobblers". This is my favorite, however you can change the fruit to any you like.

18 ounces white cake mix (any brand)
1 (20 ounce) can peaches in heavy syrup
1 (12 ounce) can Sprite (or similar)
1/4 cup butter, cut into pieces or 1/4 cup margarine

Steps:

  • dump peaches into glass baking sheet (do not drain).
  • empty cake mix contents over peaches.
  • Pour sprite over the top of the cake mix, add butter on top.
  • bake as directed on box (temp and time).
  • DO NOT add any ingredients listed on box.

This is a very moist cobbler - easy to make and delicious to eat!

1 (29 ounce) can sliced peaches
2 tablespoons butter, melted
1 pinch ground cinnamon
1 pinch ground nutmeg
1 tablespoon cornstarch
½ cup water
1 cup milk
1 cup white sugar
1 cup all-purpose flour
2 teaspoons baking powder
1 pinch salt
½ cup butter
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) In a large bowl, combine sliced peaches with juice, 2 tablespoons melted butter, a pinch of cinnamon and a pinch of nutmeg. Dissolve cornstarch in water, then stir into peach mixture; set aside.
  • In another bowl, combine milk, sugar, flour, baking powder and salt. Beat until smooth - mixture will be thin.
  • Melt 1/2 cup butter in a 9x13 inch pan. Pour batter over melted butter. Spoon peaches over batter. Sprinkle top with additional cinnamon and nutmeg.
  • Bake in preheated oven for 1 hour, or until knife inserted comes out clean.

I created this peach cobbler recipe myself with a few tips from my mom and grandma. Because it's so quick and easy, this cobbler can be made in minutes to suit any occasion. I've used it for a breakfast fruit dish, dinner dessert and light snack. -Martha Betten, North Manchester, Indiana

1/2 cup butter, melted
1 can (15-1/4 ounces) sliced peaches, drained
1-1/4 cups sugar, divided
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup 2% milk
Whipped cream, optional

Steps:

  • Preheat oven to 400°. Pour butter into a shallow 2-qt. baking dish; set aside. Drain peaches, reserving 1/4 cup juice. In a saucepan, bring peaches and reserved 1/4 cup juice just to a boil. Meanwhile, in a bowl, combine 1 cup sugar, flour, baking powder and salt. Stir in milk; mix well. Pour over butter in baking dish. Spoon hot peaches over batter. Sprinkle with remaining 1/4 cup sugar. Bake until bubbly and golden, 20-25 minutes. Serve warm and if desired, with whipped cream.

6 to 8 large ripe peaches, peeled and sliced
2-1/2 tablespoons cornstarch
3/4 to 1 cup sugar
CRUST:
1 cup all-purpose flour
2 large egg yolks. room temperature
1/4 cup butter, melted
1 teaspoon baking powder
1 cup sugar
2 large egg whites, room temperature, stiffly beaten

Steps:

  • Combine peaches, cornstarch and sugar; place in a greased 13x9-in. baking dish. For crust, combine flour, egg yolks, butter, baking powder and sugar in a bowl. Gently fold in egg whites. Spread over peaches. Bake at 375° until the fruit is bubbling around edges and top is golden, about 45 minutes.
