GRILLED BOURBON-MARINATED PORK CHOPS OR PORK TENDERLOINS



Grilled Bourbon-Marinated Pork Chops or Pork Tenderloins image

Plan ahead the pork needs to marinade for a minimum of 12 hours. Use this marinade for 2 pork tenderloins or 6-8 pork chops. You can reduce the bourbon to 1/3 cup but 1/2 cup is better!

8 pork chops (about 3/4-inch thick or thicker or use 2 tenderloins)
3/4 cup low sodium soy sauce (use only low sodium)
1/2 cup Bourbon
1/4 cup Worcestershire sauce
1/4 cup water
1/4 cup vegetable oil
2 tablespoons fresh minced garlic
3 tablespoons brown sugar
2 tablespoons black pepper
1 teaspoon fresh minced gingerroot (or use 1/2 teaspoon dry ginger powder)

Steps:

  • In a bowl whisk together the marinade ingredients; place in a large zip-loc plastic bag.
  • Add in the pork chops or 2 pork tenderloins; seal the bag.
  • Turn to coat with the marinade.
  • Refrigerate for a minimum of 12 hours.
  • Set grill to high heat (about 400°F).
  • Remove the pork and discard the marinade.
  • Place on grill.
  • For pork chops cook for about 15 minutes on each side, depending on how thick your chops are.
  • For pork tenderloins, cook for about 25 minutes turning occasionally or until the pork is cooked; tent with foil and let sit for about 10 minutes before slicing.
  • Delicious!

1/2 cup firmly packed light brown sugar
3 tablespoons Dijon mustard
2 tablespoons soy sauce
2 tablespoons Bourbon
1/2 teaspoon salt
1/4 teaspoon pepper
6 pork chops (bone-in, 1-inch-thick)

Steps:

  • In a shallow dish or large zip-lock heavy-duty freezer bag, stir together the first 6 ingredients; add in pork chops.
  • Cover dish or seal bag and chill 30 minutes, turning once.
  • Remove pork from marinade, reserving marinade.
  • Grill pork over med-high heat, covered w/ grill lid for 10-12 minutes (or until done), turning once.
  • Transfer reserved marinade to a saucepan; bring to a boil; cook, stirring occasionally, for 2 minutes.
  • Pour sauce over chop and serve.

Got this recipe out of the book. How to grill every thing. I made a few changes to it. To fit my taste.They are soo good this way.

4 pork loin chops, boneless,1inch thick
1 medium onion,thinly sliced
2 bay leafs
1 cinnamon stick
10 black peppercorns, whole
2 clove garlic,minced
4 Tbsp brown sugar
3 tsp coarse sea salt
1 c hot water
2 c cold water
4 Tbsp bourbon
4 Tbsp olive oil, extra virgin
6-8 allspice berries

Steps:

  • 1. After you rinse pork chops under cold water ,pat dry and set in a baking dish,just big enough to hold them. Arange onions,peppercorns,cinnamon stick,garlic and allspice berries on top of chops.
  • 2. For the brine. In a sauce pan add,brown surar and sea salt. Add hot water and wisk till desolved.. Now add Bourbon and cold water Plus 2 tablespoons of oil. Wisk to mix. Pour brine over chops and turn chops to coat well. Set in the fridg and leave for 2-4 hours
  • 3. Set your grill for indirect heat. Pre-heat to high.Brush grill grate with oil...Drain pork chops and pat dry. Brush with oil on both sides. I add hickory chips soaked in the left over brine to the charcol. Put Pork chops on grill away from derict heat and grill with smoke for abought 20 minutes covered. After 20 minutin, move chops over high heat and grill abought 4 minutes per side more.Remove from grill and let rest 4-5 min. serve with a baked potato.

1/4 cup kosher salt
1/4 cup sugar
2 cups water
2 cups ice water
4 center-cut pork rib chops (1 inch thick and 8 ounces each)
2 tablespoons canola oil
BASIC RUB:
3 tablespoons paprika
1 teaspoon each garlic powder, onion powder, ground cumin and ground mustard
1 teaspoon coarsely ground pepper
1/2 teaspoon ground chipotle pepper

Steps:

  • In a large saucepan, combine salt, sugar and 2 cups water; cook and stir over medium heat until salt and sugar are dissolved. Remove from heat. Add 2 cups ice water to cool brine to room temperature., Place pork chops in a large resealable plastic bag; add cooled brine. Seal bag, pressing out as much air as possible; turn to coat chops. Place in a 13x9-in. baking dish. Refrigerate 8-12 hours., Remove chops from brine; rinse and pat dry. Discard brine. Brush both sides of chops with oil. In a small bowl, mix rub ingredients; rub over pork chops. Let stand at room temperature 30 minutes., Grill chops on an oiled rack, covered, over medium heat 4-6 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving.
