GRILLED AND MAPLE-BRINED PORK CHOPS
We love how the maple flavor pairs with the pork and thyme here, and its savory sweetness also helps the chops caramelize as they cook on the grill. This recipe requires overnight marination.

- For the maple brine, in a medium pot, combine the Water (6 cup), Kosher Salt (1/4 cup), Grade B Maple Syrup (1/4 cup), Granulated Sugar (2 tablespoon), Dried Thyme (2 tablespoon), Black Peppercorns (1 tablespoon), Bay Leaf (2), and Garlic (1 head). Bring to a boil.
- Remove from the heat and let steep for 30 minutes; strain. Let cool completely before using.
- Arrange the Bone-In Pork Loin Chop (4) in a baking dish, plastic storage container, or 1-gallon plastic bag so that they fit snugly; pour the maple brine over them to cover completely. Cover and refrigerate for at least 24 hours and ideally up to 48 hours.
- Remove pork chops from the brine and discard the brine. Prepare grill to medium-high heat. Rub or brush the pork chops with Extra-Virgin Olive Oil (2 tablespoon) and season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste), being sure to season the bones as well.
- Cook on the grill, undisturbed, just long enough for the pork to pick up some color and grill marks, 4 to 5 minutes for medium doneness.
- Flip and repeat on the other flat side. Shift the pork chops to a cooler portion of the grill.
- Turn each onto its rounded, fatty edge, either propping the chops against each other to cook them all together or taking turns holding them up with tongs. Cook until the fatty edge is golden and crispy, about 3 minutes.
- Remove and let rest for 4 to 5 minutes before serving. Drizzle lightly with Grade B Maple Syrup (to taste), if desired.

MOLASSES BRINED PORK CHOPS

- Make brine: Combine ingredients in a large non-reactive pan. Stir until salt and molasses are dissolved. Add chops to brine and refrigerate for 4 to 6 hours.
- Preheat a grill to medium.
- Remove chops from brine and pat dry. Place chops on grill and cook on each side for 10 to 15 minutes, depending on thickness; the internal temperature of the pork chops should measure 145 degrees F when measured with an instant-read thermometer. Serve immediately.
BRINED ROAST RACK OF PORK WITH APPLE CHUTNEY AND SOUR MASH SAUCE

- Bring the water, apple juice concentrate, salt, sugar, onion, peppercorns, mustard seeds, thyme and bay leaves to a simmer in a large stock pot and cook until the sugar and salt are dissolved. Let cool completely. Submerge the roast in the brine by placing a plate on top, then cover with plastic and refrigerate for at least 12 hours and up to 24 hours.
- Preheat the oven to 425 degrees F.
- Remove the pork from the brine and pat dry with paper towels. Heat the oil in a large saute pan over high heat. Season the pork all over with salt and pepper and cook on both sides until golden brown, about 5 to 6 minutes. Transfer the pork to a baking sheet and finish cooking in the oven until cooked to an internal temperature of 150 degrees F on an instant-read thermometer, about 25 to 30 minutes. Remove from the oven and let rest, loosely tented with foil, for 10 minutes.
- While the pork is roasting, add the whiskey to the saute pan that the pork was cooked in, scraping the bottom of the pan with a wooden spoon, and cook until almost completely reduced. Add the chicken stock, bring to a boil, and cook until reduced to a sauce consistency. Whisk in the butter, season with salt and pepper, and stir in the parsley.
- Cut pork into chops, top each chop with some of the Apple-Ginger Chutney, and drizzle a little of the sauce around the pork chop and over the chutney. Garnish with parsley sprig.
- Heat the oil in a medium saucepan over medium-high heat. Add the onions and cook until soft, about 5 minutes. Add the garlic and ginger and cook for 1 minute. Increase the heat to high, then add the orange juice, brown sugar, and honey and bring to a simmer. Stir in the apples, allspice, and salt and pepper, cover, and cook for 5 minutes. Remove the lid and cook until the apples are soft and the liquid has evaporated, about 15 minutes. Serve with the pork.

- Combine the water, beer, salt, brown sugar and molasses in a large bowl. Stir until salt and sugar dissolve. Stir in the ice.
- Place the pork chops in large resealable plastic bag. Pour beer brine over the pork chops and seal the bag. Refrigerate for at least 4 hours or overnight, turning occasionally.
- Preheat the grill to medium-high.
- In a small bowl, combine the garlic, black pepper and sage.
- Remove the pork chops from the brine and rub them with the garlic mixture.
- Grill the pork chops for 6 to 8 minutes per side, until they are cooked through.

- Combine maple syrup, horseradish, mustard and chile powder.
- Pour over pork chops in bowl, or resealable bag to marinate for 1 hour.
- May be refrigerated, covered, for 1 day; use at room temperature.
- Preheat a gas or charcoal grill to medium high.
- Reserve 3/4 cups of glaze.
- Brush the chops on both sides with olive oil and season with salt and pepper.
- Grill for 3 to 4 minutes, brush with remaining glaze, and turn over.
- Grill for another 3 to 4 minutes, brush, and turn again, for medium-well doneness.
- Arrange chops on a serving platter and brush with the reserved 3/4 cup of glaze.
