This is a recipe my grandmother used to make for us all the time. I'm talking about in the late 1950's and early 1960's. I remember how good it was either hot or cold. Hope you'll try it and see!

Steps:
- 1. Mix mayonnaise with milk. Wisk until smooth.
- 2. Add 1/2 teaspoon salt and 1/4 teaspoon pepper to mayonnaise mixture. Mix well.
- 3. Dip each chicken piece into mayonnaise mixture until coated. Allow excess to drip off.
- 4. Roll chicken in bread crumbs until coated well. Place on foil lined baking sheet.
- 5. Bake at 375 degrees for 45 minutes. Raise heat to 425 and bake an additional 15 minutes to crisp crumbs.

- Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil.
- In a small bowl, whisk together the mayonnaise, lemon zest, paprika, celery seeds, salt, pepper, and cayenne. Season the chicken with additional salt and pepper, to taste. Arrange the chicken on the prepared baking sheet. Slather the mayonnaise mixture over the chicken. Bake until the juices run clear when the chicken is pricked with a fork, about 20 to 25 minutes. Transfer the chicken to a serving platter and serve hot.

- Layer broccoli first, then chicken in a 9X12 baking dish.
- Mix together mayonnaise, soup, lemon juice and curry powder.
- This makes the SAUCE.
- Pour sauce over chicken and broccoli.
- Bake at 375 for about 40 minutes to one hour, or until bubbly. As oven temperatures vary (as I have learned, they do a LOT) check the chicken regularly and cut into it to make sure there's no pink.
- Before the last five minutes of baking, sprinkle chips and parmesan cheese over the dish.
- This makes the chips crunchy.
- Chips should be barely brown when serving.

- the following is better done by 2 people, one for the mayonnaise, one for the crumbs.
- coat drumsticks in curry-mayonnaise and crumb them.
- as they tend to stick I prefer to put them on some kind of lattice,grill in the oven.
- bake for~20-30 minutes& turn.
- bake another~20 minutes or until golden brown.

THE BEST CHICKEN PARMESAN
Chicken Parmesan should have, well, Parmesan. So we not only topped ours with it, we added it to the crust for even more flavor and texture. For the coating, we prefer to start with plain breadcrumbs and enhance them with our favorite flavors. And our very simple, classic Italian-American tomato sauce has a bright and tomato-y flavor that cuts through the richness of the chicken and pasta.

- Set a wire rack inside a rimmed baking sheet. Line another rimmed baking sheet with foil. Cut two 12-inch sheets of plastic wrap.
- Cut the chicken breasts in half lengthwise, making 4 roughly equal pieces; they should look like large chicken tenders. Place one sheet of plastic on a clean cutting board. Put one chicken piece in the center of the plastic and top with the other sheet of plastic. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4-inch thick. Transfer to the wire rack. Repeat with the remaining chicken, one piece at a time. Liberally sprinkle with salt and pepper.
- Put the flour in a pie plate and dredge the chicken 1 piece at a time, turning to coat and packing the flour into the crevices. Shake to remove any excess and return to the rack. Repeat with the remaining chicken.
- Whisk the breadcrumbs, 1/4 cup of the Parmesan, 1/2 teaspoon salt and 1/4 teaspoon black pepper in a medium bowl until combined. Whisk the milk and egg in a medium bowl until combined. Dip the dredged chicken into the milk mixture, allowing any excess to drip off. Then pack the seasoned breadcrumbs firmly onto the chicken. Very gently
- shake off any excess and return to the rack. Refrigerate uncovered at least 30 minutes and up to 12 hours.
- Meanwhile, make the sauce. Heat 1/3 cup of the oil in a large pot over medium-high heat. Add the garlic, oregano and red pepper flakes and cook until very fragrant but not brown, about 1 minute. Add the tomatoes, basil and 1 teaspoon salt. Bring to a boil and then reduce to a simmer and cook, uncovered, until the tomatoes are very tender and the liquid has reduced by half, about 30 minutes. Smash the tomatoes with a potato masher until almost smooth; it's ok if it's a little chunky. Season with salt.
- Heat the remaining 1/2 cup oil in a large skillet over medium-high heat. Add 2 cutlets and cook until the coating is golden brown, about 1 minute per side; the chicken will not be cooked through. Transfer to the foil-lined baking sheet in a single layer 3 inches apart. Repeat with the remaining cutlets.
- Arrange an oven rack directly under the broiler and preheat to high. Arrange the chicken in a single layer on the prepared baking sheet, spaced 3 inches apart. Top each cutlet with 2/3 cup of the sauce and spread evenly to coat. Sprinkle each cutlet with 1 tablespoon of the Parmesan and 1/2 cup mozzarella. Broil until the cheese melts and starts to brown in spots, 2 to 3 minutes.
- Meanwhile, bring a large pot of salted water to a boil over high heat. Cook the spaghetti, stirring occasionally, until al dente. Drain and transfer to the remaining sauce. Gently stir until the sauce coats the pasta. Transfer the spaghetti to a serving dish and top with the chicken. Sprinkle with more Parmesan and serve with torn basil.
SIMPLE CHICKEN MAYO WITH PARMESAN AND BREAD CRUMBS
This is a tried-and-tested recipe! I remember seeing an ad on TV about cooking with mayonnaise and decided to give it a shot. I've made it with just the mayonnaise on top and it really locks the moisture into the chicken. The bread crumbs and cheese are a must for me; they complement each other very well.

This is my favorite chicken recipe, which I learned while doing low-carb dieting. I prefer dark meat so I'll use 4 legs and thighs. You can do this recipe with pork chops as well.

CHUTNEY MAYONNAISE CHICKEN
I do not usually like using packet or tinned soups in cooking, however had to make an exception as this is truly delicious. Quick and easy to throw together and makes a rich, thick sauce which has a slightly sweetish, slightly spicy flavour dependant on the chutney used.

- Rinse chicken,cut into portions and season with salt & pepper.
- Place into a large ovenproof dish with a lid.
- Mix the soup with the boiling water.
- Add the chutney and mayonnaise and mix together.
- Pour mixture over the chicken pieces, cover with lid and bake in a 180 degree celcius oven for 1 hour.
- No need to preheat the oven.
- Remove the lid after an hour and bake further until the chicken browns on the top.
- Serve with rice and vegetables or a salad.
- Note: I always remove the skin off chicken. If you prefer the skin on then be sure to skim off the excess fat.
- Note: If you do not like using whole chicken I suggest you use thighs rather than breast - it is very easy to overcook breast and then it can be dry. Thighs are much more succulent and moist, just remove any visible fat.
