Steps:
- Carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form hamburger patties and press lightly into shape.
- Prepare a charcoal or a stove-top grill.
- Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

- In a skillet, saute mushrooms in butter for 2-3 minutes or until tender. Set aside and keep warm., In a bowl, combine the beef and seasonings just until mixed. Shape into eight thin patties. - Combine olive oil, salt, and 1/2 teaspoon black pepper in a small bowl. Center half of the mushrooms and onion on a sheet (12x18 inches) of Reynolds Wrap® Heavy Duty Aluminum Foil. Drizzle with half of the olive oil mixture. Bring up foil sides. Double-fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make two packets.
- Line a baking sheet with Reynolds Wrap® Aluminum Foil. Mix the beef, Worcestershire sauce, and 1/2 teaspoon black pepper in a large bowl until combined. Shape beef mixture into eight thin, 4-inch diameter patties on the prepared baking sheet. Place 1 tablespoon of the blue cheese onto the center of each of four of the patties. - Make the burger sauce by combining the mayonnaise, ketchup, spicy brown mustard, minced pickles, pickle juice and paprika in a small bowl. Season to taste with salt and freshly ground black pepper and refrigerate until you are ready to use it.
- Divide the meat in half and season with salt and pepper by sprinkling on all sides of the meat.
- Spread some butter on the open sides of the buns. Heat a cast iron or heavy skillet over medium heat. Place the buns, cut side down in the pan and toast until golden brown.
- Turn the heat up to medium-high. Place the ground beef balls in the pan and firmly press down with a metal spatula or bacon press for 10 seconds. Cook for 3 minutes until the meat has browned, is a little crispy on the edges and you start to see juices on the top of the burger. Flip the burger over and cook for another minute or two. Top the burgers with cheese (if using) and cook for another two minutes.
- Spread some of the special sauce on the bottom of the burger buns. Add some shredded lettuce, a slice of tomato and the burger patty. Spoon some more special sauce on top of the burger and finish with the top of the bun. Serve immediately with lots of napkins!

- To make the crispy shallots, combine the cornstarch, flour, salt, pepper and paprika in a zipper sealable plastic bag. Add the shallots to the bag, seal and shake the bag to coat the shallots evenly.
