BLUE CHEESE BURGERS

2 pounds ground chuck
1 pound ground sirloin
1/2 cup seasoned dry bread crumbs
1/4 cup steak sauce (recommended: Crosse and Blackwell)
3 extra-large eggs
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
8 to 10 hamburger buns
8 ounces blue cheese, sliced (recommended: Danish Blue)
Arugula and sliced tomatoes, for serving, optional

Steps:

  • Carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form hamburger patties and press lightly into shape.
  • Prepare a charcoal or a stove-top grill.
  • Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

¼ teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1 teaspoon coarsely ground black pepper
1 ½ teaspoons salt
1 teaspoon dry mustard
12 French rolls or hamburger buns

Steps:

  • In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover, and refrigerate for 2 hours.
  • Preheat grill for high heat. Gently form the burger mixture into about 12 patties.
  • Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.

1/2 pound sliced fresh mushrooms
2 tablespoons butter
1-1/2 pounds lean ground beef (90% lean)
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon pepper
Pinch cayenne pepper
2 ounces crumbled blue cheese
2/3 cup barbecue sauce
4 onion rolls or hamburger buns, split

Steps:

  • In a skillet, saute mushrooms in butter for 2-3 minutes or until tender. Set aside and keep warm., In a bowl, combine the beef and seasonings just until mixed. Shape into eight thin patties. Sprinkle half of the patties with blue cheese; top with remaining patties and press edges firmly to seal., Grill, uncovered, over medium-hot heat for 3 minutes on each side. Brush with some of the barbecue sauce. Grill 10-12 minutes longer or until juices run clear, basting and turning occasionally. Drain the mushrooms. Serve burgers on rolls topped with mushrooms.

1 sheet Reynolds Wrap® Heavy Duty Aluminum Foil
1 sheet Reynolds Wrap® Aluminum Foil
1 tablespoon olive oil
½ teaspoon salt
1 teaspoon ground black pepper, divided
4 cups sliced mushrooms
1 red onion, thinly sliced
1 pound ground beef
1 tablespoon Worcestershire sauce
¼ cup crumbled blue cheese
4 hamburger buns, split
4 Lettuce leaves
4 slices Sliced tomatoes

Steps:

  • Combine olive oil, salt, and 1/2 teaspoon black pepper in a small bowl. Center half of the mushrooms and onion on a sheet (12x18 inches) of Reynolds Wrap® Heavy Duty Aluminum Foil. Drizzle with half of the olive oil mixture. Bring up foil sides. Double-fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make two packets.
  • Line a baking sheet with Reynolds Wrap® Aluminum Foil. Mix the beef, Worcestershire sauce, and 1/2 teaspoon black pepper in a large bowl until combined. Shape beef mixture into eight thin, 4-inch diameter patties on the prepared baking sheet. Place 1 tablespoon of the blue cheese onto the center of each of four of the patties. Top with the remaining four patties; pinch edges to seal.
  • Transfer burgers on the foil and foil packets to the rack of an uncovered grill directly over medium-high heat and grill for 10 minutes or until burgers are done (160 degrees F) and vegetables are tender. Toast cut sides of hamburger buns during the last minute of grilling.
  • Open packets carefully by cutting along top fold with a sharp knife, allowing steam to escape; then open top of foil packet.
  • Serve burgers on buns with grilled vegetables and lettuce and/or tomato slices, if desired.

This smash burger will be the most moist, juicy and tender burger you've ever made at home. The seasoning couldn't be more simple and it takes less than 10 minutes to cook in a skillet. Top these amazing burgers with the special burger sauce for a mouthwatering burger you can't wait to eat!

8 ounces ground beef (preferably 85% lean)
1½ teaspoons salt
⅛ teaspoon freshly ground black pepper
1 tablespoon unsalted butter
2 brioche burger buns
2 slices Cheddar cheese (optional)
shredded lettuce
2 slices beefsteak tomato
2 tablespoons mayonnaise
1 tablespoon ketchup
1½ teaspoons spicy brown mustard
1 teaspoon minced hamburger pickles
1 teaspoon pickle juice
pinch paprika
salt and freshly ground black pepper

Steps:

  • Make the burger sauce by combining the mayonnaise, ketchup, spicy brown mustard, minced pickles, pickle juice and paprika in a small bowl. Season to taste with salt and freshly ground black pepper and refrigerate until you are ready to use it.
  • Divide the meat in half and season with salt and pepper by sprinkling on all sides of the meat.
  • Spread some butter on the open sides of the buns. Heat a cast iron or heavy skillet over medium heat. Place the buns, cut side down in the pan and toast until golden brown.
  • Turn the heat up to medium-high. Place the ground beef balls in the pan and firmly press down with a metal spatula or bacon press for 10 seconds. Cook for 3 minutes until the meat has browned, is a little crispy on the edges and you start to see juices on the top of the burger. Flip the burger over and cook for another minute or two. Top the burgers with cheese (if using) and cook for another two minutes.
  • Spread some of the special sauce on the bottom of the burger buns. Add some shredded lettuce, a slice of tomato and the burger patty. Spoon some more special sauce on top of the burger and finish with the top of the bun. Serve immediately with lots of napkins!

A handful chopped flat leaf parsley
1 shallot or boiling onion, minced
1/2 pound crumbled blue cheese
Extra-virgin olive oil, for drizzling
Steak seasoning, or, coarse salt and black pepper
4 crusty rolls, split
Romaine lettuce leaves
Vine ripe tomato slices
Blue cheese dressing (homemade or store bought)

Steps:

  • Combine first 4 ingredients and divide meat into 4 equal amounts. When forming each patty, nestle a pile of blue cheese crumbles into the center of the meat, and gently form patty around cheese.
  • Brush or drizzle burgers with extra-virgin olive oil and grill on indoor electric grill preheated to high for 7 to 8 minutes on each side. On an outdoor grill, cook 6 minutes on each side 6 inches from hot coals or over medium high gas flame with the grill lid closed. For preparation with no additional oil, broil 4 inches from broiler 7 minutes on each side.
  • Serve burgers on split rolls with lettuce, tomato, and blue cheese dressing.
