These are savory crackers that are a real hit with all especially at Christmas.

½ cup butter, softened
1 ½ cups all-purpose flour
½ pound shredded Cheddar cheese
1 teaspoon salt
1 pinch crushed red pepper flakes
1 dash hot pepper sauce
¾ cup chopped pecans

Steps:

  • In a medium size mixing bowl, blend together butter or margarine and flour. Mix in the Cheddar cheese, salt, red pepper, hot pepper sauce, and pecans. Form the dough into a roll, wrap in parchment paper, and refrigerate over night.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice dough into very thin wafers. Bake for 15 to 20 minutes, or until crisp.

½ cup butter
4 ounces blue cheese
1 ¼ cups all-purpose flour
⅛ teaspoon salt
⅓ cup finely chopped walnuts

Steps:

  • Mix the butter, blue cheese, flour, and salt in a food processor, and process until smooth. Transfer to a bowl, and stir in the walnuts. Cover, and chill 5 minutes in the refrigerator.
  • Divide dough in half. Form each half into a log shape. Wrap in plastic wrap, and refrigerate 1 hour, until firm.
  • Preheat oven to 350 degrees F (175 degrees C). Slice the dough logs into 1/4 inch rounds, and arrange rounds on a baking sheet.
  • Bake 12 minutes in the preheated oven.

My mother would make these every Christmas with the sharpest cheddar cheese she could find. The cayenne and salt are a wonderful contrast to the cheese, and of course the butter makes them so crispy.

1 c butter, room temperature
2 c self-rising flour
1/2 lb sharp cheddar cheese, grated
1 egg, beaten
1/2 - 3/4 c finely chopped pecans
1 beaten egg for an egg wash for the tops
salt to sprinkle on tops while hot
1/8 tsp cayenne pepper (of course add to your taste)

Steps:

  • 1. Mix softened butter, flour and cheese. Add cayenne pepper and 1 beaten egg. Place in plastic wrap or aluminum foil and chill several hours or overnight. When ready to cook, remove dough from refrigerator and let set on counter for a bit to soften so you can roll it out. Preheat oven to 350 degrees and place parchment paper on baking sheet; beat egg in a separate bowl to use as an egg wash. I take about 1/3 of the mixture at a time and on a floured surface, roll out dough until it's about 1/8 - 1/4 inch thick. Cut out circles with a small biscuit cutter and place circles on parchment paper, not touching. Brush tops of circles with egg wash. Bake 10 minutes, depending on how thick you have rolled the dough. You'll need to keep an eye on them, so they don't burn. They will begin to brown slightly on the top. Remove from oven and immediately sprinkle with salt. (While I have a batch cooking, I will roll out more dough and cut the circles. That way I don't walk off and leave them to cook too long, which I'm good at doing). Cool and remove from parchment to container with tight fitting lid.

2 (4 ounce) packages blue cheese, crumbled
1/2 cup butter, softened
1 1/3 cups all-purpose flour
1/4 teaspoon cayenne pepper

Steps:

  • Beat blue cheese and butter until fluffy. Add flour and cayenne pepper. Mix until blended.
  • Divide dough in half; shape each portion into a log. Place in waxed paper and refrigerate for at least 2 hours.
  • Cut each log into 1/4 inch thick slices and place on an ungreased baking sheet.
  • Bake in a 350 degree oven for 13 to 15 minutes. Place on wire rack to cool.
  • Note: Cooking time does not include refrigeration time.

Everyone simply loves these because they are extra crunchy from the addition of rice cereal. I strongly suggest serving these round wafers alongside a dish of pepper jelly and a block of softened cream cheese or log of goat cheese. Smear a little cheese on a wafer and top with a dab of the jelly to form a perfect bite. Repeat often. Luckily this recipe makes about 4 dozen wafers, so you might have just enough to go around. You can find this recipe and more in The Southern Living Community Cookbook: Celebration Food and Fellowship in the American South by Sheri Castle.

2 cups (8 ounces) freshly grated extra-sharp Cheddar cheese
1/2 cup butter, at room temperature
1 cup all-purpose flour
1/2 teaspoon ground cayenne pepper or to taste
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1 cup crisp rice cereal

Steps:

  • Preheat the oven to 350°.
  • Mix together cheese, butter, flour, red pepper, Worcestershire and salt in a large bowl until mixture forms a ball that lightly sticks together and pulls in all the flour. (Hands might work best for this).
  • Gently fold cereal into dough.
  • Shape mixture into 1-inch balls. Place balls about 1 inch apart on an ungreased baking sheet. Flatten each ball with a fork, making a crisscross pattern.
  • Bake 15 minutes or until firm. Cool on pan on wire rack. Store in airtight container up to 1 week.

8 ounces sharp cheddar cheese, grated
1 teaspoon cayenne pepper
1/2 teaspoon salt
2 cups Rice Krispies

Steps:

  • Preheat oven to 350.
  • Cut butter into flour.
  • Add cheese and seasonings.
  • Fold in cereal.
  • Drop by small spoonfuls on ungreased cookie sheets and flatten with back of spoon.
  • Bake for 10-15 minutes.
  • Don't let them get too brown!

1/2 cup shredded cheddar cheese
1/3 cup crumbled blue cheese
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
1/2 teaspoon dried oregano
1 small garlic clove, minced
2 cups all-purpose flour

Steps:

  • In a large bowl, beat butter, cheeses, tarragon, oregano and garlic until well mixed. Beat in flour (the dough will be crumbly). Shape into a 14-in. roll. Wrap tightly and refrigerate for 4 hours or overnight. , Cut into 1/4-in. slices; place on ungreased baking sheets. Bake at 375° until golden brown and crisp, 10-12 minutes. Cool on wire racks.

Blue Cheese and Walnut Crackers image

Number Of Ingredients 7

1/4 pound (1 stick) unsalted butter at room temperature
8 ounces Stilton cheese, crumbled (about 12 ounces with rind), at room temperature
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 extra-large egg beaten with 1 tablespoon water for egg wash
1/2 cup roughly chopped walnuts

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and Stilton together for 1 minute, or until smooth. With the mixer on low speed, add the flour, salt and pepper and mix until it's in large crumbles, about 1 minute. Add 1 tablespoon of water and mix until combined.
  • Dump the dough onto a floured board, press it into a ball, and roll into a 12-inch long log. Brush the log completely with the egg wash. Spread the walnuts in a square on a cutting board and roll the log back and forth in the walnuts, pressing lightly, and distributing them evenly on the outside of the log. Wrap in plastic and refrigerate for at least 30 minutes or for up to 4 days.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Cut the log 3/8ths-inch thick with a small, sharp knife and place the crackers on a sheet pan lined with parchment paper. Bake for 22 minutes until very lightly browned. Rotate the pan once during baking. Cool and serve at room temperature.

Steps:

  • 1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  • 2. Place the flour, butter, blue cheese, and a few grinds of black pepper in the bowl of a food processor and process until the dough just comes together and starts to form a ball.
  • 3. Dump the dough out onto a lightly floured surface and knead a few times to pull it together. Then roll out to a 1/8-inch-thick circle with a floured rolling pin. Cut rounds out of the dough with a floured 1-inch round cutter and transfer to the parchment-lined baking sheet. Reroll the scraps (no more than once) and cut more rounds.
  • 4. Using the back of a rounded 1/2-teaspoon measure or your knuckle, make an indentation in the center of each dough round. Spoon about 1/4 teaspoon of the fig preserves into each indentation, using your finger to push the preserves as best as possible into the indentation.
  • 5. Bake the savouries until the preserves are bubbling and the pastry is light golden on the bottom, 10 to 12 minutes. Let cool on the baking sheet for at least 10 minutes, then remove to a wire rack to finish cooling.
