BLEU CHEESE CRUSTED FILET MIGNON



Bleu Cheese Crusted Filet Mignon image

2 tablespoons bleu cheese crumbles (recommended: Treasure Cove)
1/4 cup plain bread crumbs
2 teaspoons fines herbs (recommended: Spice Islands)
1/2 teaspoon olive oil, plus 1 tablespoon
4 (6-ounce) filet mignon steaks
Salt and freshly ground black pepper, for seasoning, plus 1/2 teaspoon black pepper
1/2 cup cognac
1 cup organic beef stock (recommended: Swanson)
1 teaspoon crushed garlic (recommended: Christopher)
1/4 cup frozen chopped onion (recommended: Ore-Ida)

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil; set aside.
  • In a small mixing bowl, combine bleu cheese, bread crumbs, herbs, and 1/2 teaspoon of olive oil; set aside.
  • Add 1 tablespoon olive oil to a large saute pan and heat over medium-high heat. Season steaks with salt and pepper and to add pan, but do not crowd. Sear 1 to 2 minutes per side just to brown. Remove pan from heat and transfer steaks onto prepared baking sheet.
  • Top each steak with 1/4 of blue cheese mixture. Finish cooking steaks in preheated oven for 4 minutes for medium-rare, 6 minutes for medium, and 8 minutes for well done.
  • Return pan to stove and deglaze with cognac by scraping bits from bottom of pan. Add remaining ingredients and bring to a boil over high heat. Reduce liquid by half.
  • Serve steaks hot with sauce.

6 skinless boneless chicken breast halves (5 to 6 ounces each)
1/2 cup balsamic vinegar
3 tablespoons olive oil
2 teaspoons coarse kosher salt, divided
1 1/2 teaspoons freshly ground black pepper, divided
2 teaspoons herbes de Provence*
1 3-to 4-ounce wedge blue cheese, cut into 6 slices

Steps:

  • Place chicken in large resealable plastic bag. Whisk vinegar, 3 tablespoons oil, 1 1/2 teaspoons coarse salt, and 1 teaspoon pepper in small bowl. Add to chicken; seal bag. Chill 2 hours, turning bag occasionally.
  • Prepare barbecue (medium-high heat). Brush grill rack generously with oil. Arrange chicken on grill. Sprinkle with herbes de Provence, 1/2 teaspoon coarse salt, and 1/2 teaspoon pepper. Grill chicken until cooked through, about 6 minutes per side. Transfer to plates; top each with slice of cheese.

Roasted fennel is a great way of serving this vegetable, if you don't fancy it raw. By adding a blue cheese and seed topping, you're turning into so much more than a side dish. Grind the seeds well in a coffee grinder, to form a breadcrumb-like texture. If you don't have a grinder, you can pound them with a pestle & mortar or just chop them. This recipe is delicious with a delicate blue cheese and works well with Dolcelatte or Cambozola. Avoid stronger cheeses such as Danish Blue or Stilton, as they could overpower the flavour of the fennel. Serve with baked potatoes, a side salad or coleslaw.

2 fennel bulbs
2 tablespoons olive oil
7 ounces mild blue cheese (e.g. Cambozola, Grinzola, Dolcelatte, Gorgonzola)
4 tablespoons mixed seeds, such as pumpkin, sesame, sunflower or 4 tablespoons linseeds

Steps:

  • Pre-heat the oven to 350°F.
  • Trim the green tops of the fennel bulbs and cut the bulbs in half.
  • Use a little of the oil to grease a baking dish. Arrange the bulbs in the dish, with the flat sides uppermost.
  • Use a pastry brush (or clean fingers!) to "baste" the fennel with the remaining oil. This will stop it from burning during roasting.
  • Mix the seeds together and grind well.
  • Crumble the cheese and mix with the seeds. It will form a kind of paste.
  • Smooth ¼ of the paste on top of each fennel half.
  • Roast for 30 minutes, until the fennel has softened and the topping is starting to go brown.

2 (8 ounce) packages cream cheese
2 cups blue cheese, crumbled
1 cup sour cream
⅓ teaspoon ground white pepper
3 eggs
1 ¼ cups sour cream
1 red bell pepper, halved and deseeded
1 green onion

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Beat cream cheese and blue cheese in large mixing bowl until light and fluffy--about 5 minutes. Mix in 1 cup sour cream and pepper. Add eggs - one at a time - mixing well after each addition.
  • Pour mixture into buttered 9 inch springform pan. Bake 60 - 65 minutes or until wooden pick inserted near center comes out clean.
  • Remove from oven and let stand 5 minutes. Carefully spread 1 1/4 cup sour cream over top. Return to oven 5 minutes. Cool completely on wire rack. Refrigerate several hours or overnight.
  • To serve, place on serving plate. Carefully remove sides of pan. Decorate top with red pepper cut into flower shapes with small cookie cutter and green onion tops as stems.

A friend showed this to me years ago, and I added and changed amounts around to fit my taste. This goes great with any pasta dish, steak, or even seafood. If stored in a plastic bag, either open bag and microwave with a cup of water in microwave, or place 1 tablespoon of water in bag to ensure moist bread after heating.

1 (12 ounce) loaf French bread
½ cup butter at room temperature (divided)
4 teaspoons garlic powder, divided
1 (8 ounce) bottle blue cheese salad dressing
½ cup shredded mozzarella cheese, divided
1 (3 ounce) package grated Parmesan cheese, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Cut French bread loaf in half lengthwise and spread butter on both cut sides. Sprinkle each side with 2 teaspoons garlic powder. Place halves on prepared baking sheet.
  • Bake in the preheated oven until butter has melted and bread is hot but not toasted, about 5 minutes. Remove bread from oven.
  • Turn on oven's broiler.
  • Spread half the bottle of blue cheese salad dressing over each half; sprinkle each piece of bread with mozzarella cheese and Parmesan cheese.
  • Broil until mozzarella cheese has melted and is slightly browned, 1 to 4 minutes. Watch carefully to prevent burning. Let bread cool 2 to 3 minutes before cutting into serving pieces.

1 (4 -5 lb) beef tenderloin, trimmed
2 tablespoons unsalted butter, at room temperature
1 tablespoon kosher salt
1 tablespoon fresh coarse ground black pepper
4 cups heavy cream
4 ounces crumbly blue cheese
3 tablespoons freshly grated parmesan cheese
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
3 tablespoons fresh parsley, minced

Steps:

  • *Note that sauce is made ahead.
  • For beef:.
  • Preheat oven to 500 degrees.
  • Place the beef on a baking sheet and pat the outside dry with a papertowel.
  • Spread the butter on with your hands. Sprinkle evenly with the salt and pepper.
  • Roast in the oven for 25 minutes for medium-rare.
  • Remove the beef from the oven, cover it tightly with aluminum foil and allow it to rest at room temperature for 15 minutes. Slice the filet thickly and serve with blue cheese sauce. Instructions follow.

  • Bring the cream to a full boil in a medium saucepan and continue to boil rapidly for 45-50 minutes, until it is the consistency of white sauce, stirring occaisionally.
  • Remove the pan from the heat and add the blue cheese, parmesan, salt, pepper and parsley.
  • Whisk rapidly until cheeses melt.
  • To reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together. Sauce makes 3 cups.
