I love blue cheese and I love biscuits... so a natural conclusion would be??? yep. They are yummy. Have had this recipe forever and don't have a clue where it came from.

4 slices bacon, crisp and crumbled
2 cups unsiftede all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons dried onion flakes
1/3 cup firmly packed blue cheese
1/4 cup vegetable shortening
3/4 cup buttermilk

Steps:

  • Preheat over to 450 degrees.
  • Mix bacon, flour, baking powder, salt, onion.
  • Cut in blue cheese and shortening until particles are like small peas.
  • Stir in buttermilk to form a soft sticky dough.
  • Place dough on floured board and knead several times to make a smooth ball.
  • Roll dough to 1/2 inch thick.
  • Cut rounds with two inch cookie cutter.
  • Place on ungreased cookie sheet.
  • bake 12- 15 minutes.

1 (10 ounce) package refrigerated biscuit dough
½ cup butter, melted
5 ounces blue cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9-inch pie plate with non-stick cooking spray.
  • Slice each biscuit into quarters, arrange then in the prepared pie plate. Pour melted butter over the biscuits, then sprinkle the biscuits with blue cheese.
  • Bake for 8 to 10 minutes.

I always seem to have plenty of recipes filed away for blue cheese.....don't ask me why my family doesn't even eat it! But I quite often make recipes to take when going out. This recipe was loved by all served when served with a cheese platter.

1 cup plain flour
100 g cold butter, chopped
75 g blue cheese, mild and soft full-fat, chopped
1 1/2 tablespoons poppy seeds
sea salt

Steps:

  • Process the flour, butter and cheese until mixture forms a soft ball.
  • Shape mix into a log (4cm in diameter) place log in plastic wrap and refrigerate until firm.
  • Remove log from plastic, roll in poppyseeds, cut into 5mm slices (rounds) & place the rounds about 3cm apart on ungreased oven trays. Sprinkle rounds with a little sea salt.
  • Bake rounds in a moderately hot oven for approx 15 minutes or until lightly browned, cool on trays before removing.
  • Store in airtight container for 3-4 days.

  • Dust a work surface with a little flour. Roll out the cheese dough to a 5mm thickness. Using a 5cm star-shaped cutter, cut out biscuits and put onto the baking sheets. Re-roll the trimmings to cut out more biscuits, making 30 in total. Sprinkle the biscuits with poppy seeds, pressing them in lightly so they stick. Bake for 12-15 minutes until golden. Transfer to a wire rack to cool.
