BLUEBERRY WAFFLES WITH FAST BLUEBERRY SAUCE



Blueberry Waffles with Fast Blueberry Sauce image

I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

3 egg yolks, beaten
1 ⅔ cups milk
2 cups all-purpose flour
2 ¼ teaspoons baking powder
½ teaspoon salt
¼ cup melted butter
3 egg whites, stiffly beaten
⅔ cup blueberries
1 ½ cups blueberries
3 tablespoons honey
½ cup orange juice
1 tablespoon cornstarch

Steps:

  • In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
  • Preheat a lightly greased waffle iron.
  • Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
  • To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top!

1 cup flour
1 teaspoon baking powder
Pinch of baking soda
Pinch cinnamon
Pinch of salt
1/4 sugar
1/2 cup yogurt
1/2 cup milk
1 egg, lightly beaten
1 cup frozen blueberries not thawed

Steps:

  • Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt and sugar. In another bowl, beat together yogurt, milk and egg. Whisk liquid mixture into dry ingredients until just combined. Fold in frozen berries. Stir in melted butter. Brush hot waffle iron with butter or spray. Spoon about 1/2 cup of batter onto iron, smooth out with back of spoon and close to cook. This first waffle will be the tester. 1/3 cup vegetable oil

  • Heat waffle iron. Drain Blueberries, reserving liquid; rinse blueberries and set aside. Stir muffin mix (dry from muffin mix), water, oil and egg yolks in medium bowl just until blended.
  • Beat egg whites in small bowl with electric mixer on high speed until soft peaks form. Fold blueberries and egg whites into batter. Pour batter from cup or pitcher onto center of hot waffle iron.
