Naturally delicious, this fresh blueberry compote recipe kissed with lemon is perfect for pancakes, waffles, French toast, or as a topping on ice cream!

1 ¼ pound (or 20 ounces) fresh organic blueberries, divided use-reserve the ¼ pound (or ¾ cup) to add in after cooking
2 tablespoons water
¼ cup granulated organic cane sugar (I use Trader Joe's)
½ teaspoon lemon zest
Squeeze lemon juice (about 1 teaspoon)

Steps:

  • Add the 1 pound (16 ounces) of blueberries to a medium pot, along with the water, sugar, lemon zest and lemon juice, and stir to combine.
  • Bring the mixture to a vigorous simmer or medium boil, and cook for 8-10 minutes, stirring occasionally, until the berries pop and release their juices, and soften.
  • Remove from heat and give a little taste to see if you need any extra sweetener or lemon juice, then add in the reserved ¼ pound (or ¾ cup) of fresh blueberries and stir those in.
  • Allow the blueberry compote to cool (I expedite the process by using my fridge), allowing the compote to thicken as it cools.
  • Spoon into jars or a covered container, and use as needed, either warm or cold.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish.

¼ cup shortening
1 egg
½ cup milk
2 cups all-purpose flour
2 teaspoons baking powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 8x8 inch pan.

3 tablespoons flour
1 lemon
¼ cup butter (softened)
½ cup brown sugar
¼ cup flour
¾ cup oats (regular or quick)
½ cup almonds (chopped (optional))
¼ teaspoon cinnamon

Steps:

  • Preheat the oven to 375°F.
  • Grate the rind of the lemon and squeeze the juice of half of the lemon.
  • Toss blueberries, with sugar, lemon rind, 1 tablespoon lemon juice and 3 tablespoons flour. Place in a 2qt baking dish.
  • With a fork, combine the butter, brown sugar, oats, flour, nuts if using and cinnamon until crumbled. Sprinkle over blueberries.
  • Bake 35-40 minutes or until the top is golden brown and the fruit is bubbly. Cool slightly and serve warm.

4 cups blueberries ((fresh or frozen))
1/2 cup granulated sugar
1 teaspoon lemon zest
6 Tablespoons butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • Add blueberries, sugar and zest to a bowl and stir to combine.
  • In a separate bowl mix together the batter ingredients: flour, sugar, baking powder, and salt. Stir in the milk, just until combined.
  • Pour blueberries over melted butter in pan. Drizzle batter over the top. Sprinkle with a little bit of cinnamon.
  • Bake at 350 degrees for about 35-40 minutes, or until lightly golden on top.
  • Serve warm, with a scoop of ice cream, if desired!

1/2 cup old fashioned oats (I did a heaping 1/2 cup)
1/4 cup brown sugar (packed)
1/4 tsp salt
1/4 tsp ground cinnamon
8 tbsp (1 stick) butter (cold and cubed)

Steps:

  • Preheat an oven to 375° degrees. Lightly butter or spray a 9x6-inch baker or an 8x8-inch baking dish.
  • In a medium size mixing bowl, toss the blueberries in the sugar, cornstarch, lemon juice and lemon zest. Pour into the prepared dish and set aside.
  • In a medium size mixing bowl, whisk together the flour, oats, brown sugar, salt and cinnamon. Using a pastry blender, cut in the butter until pea size (or slightly larger) form. Sprinkle over the blueberries.
  • Place in the oven and bake for 30-35 minutes or until the juices bubble and the top is golden brown.
  • Remove form the oven and allow to cool for 10-15 minutes before serving.

4 cups crushed blueberries (8 cups of whole fresh blueberries before crushing)
2 tablespoons freshly-squeezed lemon juice
1 teaspoon butter
4 ounces (about ¾ cup) powdered fruit pectin
8 cups granulated sugar

Steps:

  • Prepare home canning jars and lids according to manufacturer's instructions for sterilized jars. Keep jars hot until filled. Always use new lids.
  • Place berries, lemon juice, butter and pectin in a large pot. Bring mixture to full rolling boil, stirring constantly. Stir in sugar. Return to a full rolling boil and boil exactly 1 min., stirring constantly.
  • Remove from heat and skim off foam. Quickly ladle into the hot jars, leaving ¼-inch of head space at the top. Use a damp cloth to wipe any drips from the top and sides of the jars. Cover with hot lids and tighten rings firmly.
  • Set the hot jars on a rack in a canner or in a large pot of boiling water. The water needs to cover the jars by at least 1-2 inches. Boil the jars for 10 minutes.
  • Remove the jars from the boiling water and set on a towel or rack to cool overnight (but not more than 24 hours).
  • When cool, check the seals. The lids should be down in the center or stay down when pressed. Store in a cool, dark, dry place. Unsealed jars should be refrigerated and used within 3 weeks.

2/3 cup packed light brown sugar
1/2 cup pecans or walnuts (coarsely chopped)
1 teaspoon ground cinnamon
1/4 teaspoon salt
5 tablespoons very cold unsalted butter
4 1/2 cups sliced peeled apples*
1 1/2 cups frozen blueberries
1 tablespoon packed light brown sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Combine all the topping ingredients EXCEPT BUTTER in the bowl of a food processor. Pulse a few times to chop.
  • Cut the butter into 12 small chunks and scatter over the other ingredients in the bowl. Pulse the mixture 10 to 15 times, until combined but still chunky.
  • Refrigerate while you make the filling.
  • (If you don't have a food processor you can use quick cooking oats and chop your nuts finely by hand. Stir all the ingredients EXCEPT butter in a bowl, then use your fingers to cut in the cold butter until crumbly.)
  • Preheat the oven 400 degrees. Spray a 9-inch square baking pan with cooking spray and set aside.
  • Combine all the filling ingredients in a large bowl and stir until the fruit is evenly coated with the sugar.
  • Spread the filling into an even layer in the prepared baking dish. Sprinkle with the refrigerated topping.
  • Bake 30 to 40 minutes, until the topping is browned and the juices are bubbling a bit around the edge of the dish. Cool at least 20 minutes, then serve.
  • Store uneaten crisp loosely covered in the fridge for 2 days.

  • Preheat your oven to 190c/375f. Line a 32.5cm(12.8")x18.5cm(7.3") tray with baking parchment and put to one side.
  • First make your crumble. Place the flour, baking powder and cold butter cubes in a large bowl. Rub the butter into the flour using your fingertips until the mix resembles breadcrumbs. Don't worry if you have some large chunks in there - it adds to the texture. Add in the white and brown sugar, the salt, egg and vanilla extract, then give it a mix with your hands. Take approx. half of this mixture and place it into your prepared baking tray. Flatten the mixture down and squash it to the edges and corners.
  • Take a medium sized bow and add your blueberries, sugar, lemon juice and cornstarch. Mix together gently and then layer this mixture on top of your crumble base. Sprinkle the remaining crumble mixture on top of the blueberries and place in the oven to cook for 40 minutes - until the topping looks golden brown.
  • Take out of the oven and leave to cool in the tin before gently sliding the bake (baking parchment too) onto a cutting board. Slide out the baking parchment and cut the bake into 32 bite sized pieces or 18 larger pieces.
