ALMOND, BLUEBERRY & DATE GRANOLA BARS

Almond, Blueberry & Date Granola Bars image

These homemade granola bars are a mishmash of almonds, dried blueberries, oats, cereal and coconut -- all held together with a sweet almond butter-date paste.

Provided by Jennifer Segal

Categories     Breakfast & Brunch

Time 30m

Yield 16 bars

Number Of Ingredients 11

3 oz pitted Medjool dates (see note)
6 Tbsp unsalted butter, melted
¼ cup plus 2 Tbsp packed light brown sugar
¼ cup plus 2 Tbsp honey
¾ cup unsalted creamy almond butter (see note)
¾ tsp salt
1½ cups old-fashioned rolled oats
2½ cups crispy rice cereal, such as Rice Krispies
½ cup unsweetened flaked coconut
¾ cup coarsely chopped almonds
Heaping ⅓ cup dried blueberries

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Line a 9-by-13-in pan with aluminum foil, so that it hangs over the edges, and spray with nonstick cooking spray.
  • Place the dates, melted butter, brown sugar, honey, almond butter and salt in a food processor fitted with the steel blade, or use a blender. Process until mixture is smooth and thick. Transfer to a large pot (or microwave-safe bowl) large enough to hold all of the ingredients; don't worry if the butter separates. Bring the mixture to a boil on the stovetop (or in the microwave), whisking to combine. Take off the heat.
  • While the mixture is still hot, add the oats, rice cereal, coconut, almonds, and dried blueberries. Use a large rubber spatula to gently fold the mixture until the wet ingredients evenly coat the dry ingredients. The mixture will be thick. Be gentle so as not to crush the rice cereal.
  • Transfer the mixture to the prepared pan and, using the bottom of a glass or dry measuring cup, press firmly into an even, compact layer. Bake for 15-18 minutes, until golden brown. Set the pan on a rack and let cool completely, a few hours. (Please do not attempt to cut the bars while still warm, as they will fall apart.)
  • Use the foil overhang to lift the uncut bars out of the pan and onto a cutting board. Using a large chef's knife, cut the block into 16 bars. Wrap the bars individually with foil or parchment paper for easy on-the-go snacking, or place them in an airtight container. The bars will keep for up to a week at room temperature.
  • Note: You'll need about 5 Medjool dates for this recipe but it's best to weigh them if possible, as sizes vary.
  • Note: For best results, use a smooth and creamy commercial almond butter. (I do not recommend all-natural or chunky almond butter.)
  • Freezer-Friendly Instructions: The granola bars can be frozen for up to 3 months. Let them cool completely and store in an airtight container separating layers with parchment paper or aluminum foil. Before serving, remove them from the container and let them come to room temperature.

BLUEBERRY ALMOND SNACK BARS

Blueberry Almond Snack Bars image

1 bowl and 7 real food ingredients are all you need to make these freezer friendly gluten free blueberry almond snack bars. They're easy to make, healthy, and wholesome!

Provided by Sally

Categories     Granola Bar

Time 2h30m

Number Of Ingredients 8

1/3 cup (37g) almond meal*
1/3 cup (114g) honey or brown rice syrup*
1 Tablespoon (15g) almond butter or any nut butter
1 teaspoon pure vanilla extract
1/8 teaspoon salt
1 and 2/3 cups (235g) whole unsalted almonds (very roughly chopped/minimally pulsed)
2/3 cup (70g) dried blueberries
optional: 1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 300°F (149°C). Line an 8-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
  • Using a rubber spatula or wooden spoon, mix all of the ingredients together until combined.
  • Transfer mixture to prepared baking pan and press very firmly into an even layer. You really want it packed in tight- as tight as possible. Bake for 20-22 minutes or until lightly golden brown on top. Remove from the oven and allow to cool completely in the pan set on a wire rack for 1 hour, then transfer to the refrigerator to chill for 1 more hour. This firms up the bars which helps them stay compact. Remove bars from the pan using the overhang on the sides and cut into bars.
  • Individually wrap each bar in plastic wrap or parchment. Store in the refrigerator for up to 2 weeks.

BLUEBERRY ALMOND CRISP

Blueberry Almond Crisp image

This amazing blueberry crisp recipe is the perfect summertime dessert! It's easy to make with blueberries, maple syrup, lemon, oats and almonds. It's gluten free, too! Recipe yields 6 to 8 servings (a lot!).

Provided by Cookie and Kate

Categories     Dessert

Time 55m

Number Of Ingredients 13

2 pounds blueberries (that's 32 ounces, which is about 5 cups or a little less than 3 pints), fresh or frozen*
1/3 cup maple syrup or honey
2 tablespoons arrowroot starch or 3 tablespoons cornstarch
1/2 teaspoon lemon zest (less than 1 small lemon, zested-scale back to 1/4 teaspoon zest if you don't love lemon)
2 tablespoons lemon juice (from 1 to 2 lemons)
1/4 teaspoon cinnamon
1 cup old-fashioned oats (certified gluten-free for a gluten-free crisp)
1/2 cup packed almond meal or almond flour
1/2 cup sliced almonds
1/3 cup lightly packed brown sugar
1/4 teaspoon fine grain sea salt
4 tablespoons butter, melted
3 tablespoons plain yogurt (Greek or regular), or additional melted butter

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Rinse and drain the blueberries and pick through them to remove any stems still attached. In a 9 by 9-inch baking dish, mix together the blueberries, maple syrup or honey, arrowroot or cornstarch, lemon zest, lemon juice and cinnamon.
  • In a medium mixing bowl, stir together the oats, almond meal/flour, sliced almonds, brown sugar and salt. Mix in the butter and yogurt. Stir until all of the flour is incorporated and the mixture is moistened throughout.
  • Dollop spoonfuls of the oat mixture over the filling and use your fingers to break up the mixture until it is evenly distributed (no need to pack it down).
  • Bake for 40 to 50 minutes, or until the filling is actively bubbling around the edges and the top is lightly golden. Let the crisp rest for 5 to 10 minutes before serving. Serve with vanilla ice cream (I insist!).

  • Lightly grease an 8x8-inch baking dish (adjust number/size of pan if altering batch size), or line with parchment paper. Alternatively, line with foil, but still add a bit of non-stick spray or vegan butter to ease serving.
  • For the crust, add softened butter and sugar to a mixing bowl and beat until light and fluffy in texture - 1 minute.
  • Add almond milk and mix once more - it should form a cohesive dough. If not, add a bit (1-2 tsp) more almond milk.
