FRESH BLUEBERRY BREAD MACHINE RECIPE (1-POUND LOAF)

Steps:
- Rinse 1 cup of blueberries and lay on a paper towel to dry and come to room temperature while you make the dough.
- Dump the remaining dough ingredients into the bread pan of your bread machine. Select the dough cycle and press start. Open the lid and check the dough after about 10-15 minutes of mixing to make sure the consistency is correct. The dough should stick to the side, then pull away. If the dough is too dry, add more water 1 teaspoonful at a time. If too sticky, add flour 1 tablespoon a time.
- When the dough cycle completes and the dough has risen to double its original size, remove the dough to a floured surface. Scatter blueberries evenly over the dough and press them into the dough without smashing the berries. Use your fingers to gently shape the dough into a rectangle approximately 12 x 9 inches with the short side closest to you.
- Starting with the edge closest to you, carefully roll the dough towards the top to make a cylinder.
- Seal the seam and turn the ends toward the seam. Seal those seams, also. Place in a greased 8½ x 4½-inch loaf pan with the seam side down. (This is easier than the method shown in the video. Do what works best for you.)
- Cover and allow the dough to rise until almost double. This may take 1 hour or more depending on the ambient temperature. The dough should be peeking over the top about 1 inch.
- When you see the bread has almost risen enough, preheat your oven to 350˚F (180˚C).

FRESH BLUEBERRY YEAST BREAD
Light and lovely white bread, filled with fresh blueberries and a touch of lemon. It's lovely eaten out of hand with butter or toasted. It's like having the jam in the bread!

- Grease a 9x5-inch loaf pan and set aside.
- In a large bowl or the bowl of a stand mixer with the kneading hook, combine the warm water, yeast, blueberries, sugar, salt and lemon zest. Let stand 5 minutes.
- Add 2 1/2 cups of the flour and mix to combine. Begin adding the flour 1/4 cup at a time, just until the dough comes together in to a smooth and moist dough (but not too sticky). If using a mixer, stop kneading when the berries seem to be crushing.
- Remove to a floured surface and gently knead in a bit of flour until you have a smooth ball. Place in a greased bowl, cover and let rise until doubled (about 1 hour).
- Remove dough to a floured surface and press out in to a 9x18-inch-ish rectangle. Starting with the 9-inch edge, roll up jelly-roll style. Place into prepared 9x5 loaf pan. Cover with greased plastic wrap and let rise until doubled (about 45 minutes).
- Preheat oven to 350 F. Bake in preheated oven for 30-35 minutes, or until deep golden and cooked through.

- Combine flour, yeast, and cardamom in a large mixing bowl.
- Combine 3/4 cup milk, sugar, butter, and salt in a small saucepan and heat to 115 to 120 degrees F (46 to 48 degrees C). Pour into flour mixture and beat using an electric mixer until just moistened. Add egg and beat until smooth. Stir in enough additional flour to form a soft, sticky dough.
- Turn dough out onto a floured surface; knead until smooth and elastic, 6 to 8 minutes. Place dough in a bowl coated with cooking spray, turning dough once to coat top. Cover and let rise in a warm place until doubled in size, about 1 hour.
- Combine blueberries, lemon zest, and lemon extract in a small bowl. Set aside.
- Punch risen dough down. Turn out onto a lightly floured surface; knead fruit mixture into the dough. Divide dough into thirds. Roll each portion into a 16-inch long rope. Place ropes on a 15x10-inch baking pan coated with cooking spray. Cover and let rise until doubled in size, about 45 minutes. Lightly brush ropes with 2 teaspoons milk and sprinkle with almonds.
- Preheat the oven to 375 degrees F (190 degrees C).
- Bake in the preheated oven until golden brown, about 20 minutes. Remove from the oven and transfer to a wire rack to cool, about 30 minutes.
- Combine confectioners' sugar and lemon juice in a bowl for glaze; drizzle over cooled bread.

- Mix the berry mixture ingredients together set aside in refrigerator: where they will semi-defrost. Place all ingredients except the berry mixture in the bread machine pan. Use the order suggested by the manufacturer. Select machine to basic normal setting/with the fruit and nut setting. Add the Berry Mixture when the machine beeps at the last kneading. Cook's note: : The berries will pop and make beautiful purple streaks throughout the bread. If the berries make the dough to moist just add some more oatmeal so the blueberries mix into the dough. Or you can remove when the machines kneading cycle stops and knead on a floured dough board just to blend in the berries then add back to machine let rise and bake in a 350°F oven for 35 minutes or until done.
BLUEBERRY BREAD II
This bread is very good right out of the oven, or toasted. Dried blueberry's are hard to find and very expensive; try the Baker's Catalog. The expense is worth every bit!

- Stir cornmeal into boiling water. Stir in butter, molasses, and egg.
- Dissolve yeast in warm water (110 degrees F).
- When cornmeal mixture is lukewarm, stir in dissolved yeast. Beat in flour until a stiff dough is formed. Knead dough on a heavily floured board until smooth and elastic. Let rise in a warm place until doubled in bulk.
- Punch down and roll dough into a 10" square. Sprinkle blueberries over dough, pressing them into the dough. Roll up like a jelly roll. Tuck ends of roll under to seal ends and place seam-side down into a well-greased 9x5x3 inch loaf pan. Let rise in a warm place until double in bulk.

BANANA-BLUEBERRY BREAD MACHINE BREAD
This recipe is from "Better Homes and Gardens,Best Bread Machine recipes". I have made a LOT of bread, and this is at the top #1 spot on my list. And surprise! Its even better cold! I used ocean spray craisens in place of blueberries,They are cranberries that are cherry flavored. I also substituted 1/4 cup wheat gluten, and 1/4 cup milled flax seed for some of the flour, and used 2 Tablespoons sugar and the rest was splenda.I had some frozen banana so I used that. . (Those are my personal changes, to make it a little healthier.) For 2 pound loaf, your machine must hold 10 cups or more. This is for a 2 pound loaf of bread. Servings are a guess, since I had to list something. This loaf rises nice and high, so its a big sized loaf. Time is a guess as it doesn't take but minutes to throw it in the machine, and I didn't pay attention to the machine time, so the time is a guess .

- 1. Breadmaker Dough Cycle: Add the liquids (milk, melted butter, beaten eggs to breadmaker container; add flour, sugar, and salt. Then make a well in center of flour and add yeast (or layer according to your manufacturer's directions). Select your dough cycle. I use the short dough cycle.
- 2. When dough cycle is complete roll out the dough on a pastry board into a rectangle 14" x 17". Spread blueberry preserves on dough leaving a small edge on all sides of dough. Roll the long top edge toward you as in a jellyroll style. You have to lift as you roll because of the filling. Turn to have seam on bottom and seal.
- 3. Cut into 11/2 inch slices (approximately 10 - 12). Place in greased 13" x 9" baking dish with filling side up. Cover and let rise in a warm place until doubled in size (approximately 45 minutes). Bake at 350 degrees for 18 - 22 minutes or until golden brown and center is cooked through.
- 4. Glaze: Mix together until smooth the powdered sugar, almond extract (or your preference flavor), melted butter and milk. Drizzle over blueberry sweet rolls.

- Place the ingredients into the base of a bread machine in the order that it is suggested by the manufacturer of that particular machine. (Mine goes in the order as listed in the ingredients.) Close and set the bread machine to the 'dough' cycle. Lightly coat the inside of a 9x5" loaf pan with non-stick baking spray and set aside. Once the dough cycle has ended, turn the dough out into the prepared loaf pan.
