A good basic scone recipe with blueberries added . . . yummy!!

Number Of Ingredients 8

2 cups all-purpose flour
¼ cup packed brown sugar
1 tablespoon baking powder
¼ teaspoon salt
¼ cup butter, chilled
1 cup fresh blueberries
¾ cup half-and-half cream
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut butter into mixture of flour, sugar, baking powder, and salt. Add blueberries and toss to mix.
  • In separate bowl beat together cream and egg, and slowly pour into dry ingredients, stirring with rubber scraper until dough forms. Knead just until it comes together, 3 or 4 times. Don't overhandle.
  • Divide dough in half. On lightly floured board, shape each half into a 6-inch round. Cut into 6 wedges.
  • Bake on ungreased sheet about 20 minutes at 375 degrees F (190 degrees C). Serve warm!!

After trying half a dozen recipes without much success, I experimented until I came up with this one. These scones are the best I've tried so far, and they can easily be included in my weight loss program.

1 1 / 2 cups Whole Wheat Flour
1 / 2 cup Rolled Oats
1 / 2 cup Brown Sugar, packed
2 teaspoons Baking Powder
1/8 teaspoon Baking Soda
1/4 cup Finely Chopped Walnuts
1 / 2 teaspoon Table Salt
1 / 4 cup Canola Oil
1 cup Low Fat Buttermilk
1 Egg, Lightly Beaten
1 cup Fresh Blueberries

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Line a large baking pan with parchment paper and set aside. In a medium bowl, mix flour, oats, brown sugar, baking powder, baking soda, walnuts and salt together. Using a standing or hand mixer, combine flour mixture with oil, mixing until dough resembles coarse crumbs. Combine buttermilk and egg; add to flour mixture and gently fold in blueberries. Using a fork, stir until dough is moistened throughout. Knead dough on a lightly floured surface, folding and gently pressing dough for 10 to 12 strokes or smooth. Pat or lightly roll into a 10-inch circle and cut into 12 wedges. Place wedges 1 inch apart on prepared baking sheet. Bake at 400 degrees Fahrenheit for 16 to 18 minutes or until lightly browned. Serve warm or at room temperature.

My daughter loves blueberries, so I make these scones for her. A lot of times, I will freeze the leftovers and heat them in the toaster oven for a warm breakfast treat which she really enjoys.

3 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ cup butter
⅔ cup whole milk
2 eggs, beaten, divided
1 dash vanilla extract
1 cup frozen blueberries
2 tablespoons white sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Mix flour, 1/2 cup white sugar, baking powder, baking soda, and salt together in a bowl.
  • Cut in butter using a pastry blender or fork until the flour mixture looks like cornmeal.
  • Pour in milk, 1 egg, and vanilla extract. Fold in frozen blueberries and mix sparingly.
  • Scoop dough onto the prepared baking sheet into 10 equal-sized amounts of dough. Do not flatten. Brush tops with reserved beaten egg. Sprinkle 2 tablespoons sugar evenly over the tops.
  • Bake in the preheated oven until golden brown, 15 to 20 minutes.

1 ¼ cups all-purpose flour
½ cup whole wheat flour
¼ cup white sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup chilled unsalted butter, cut into cubes
½ cup blueberries, cut in half if large
¼ cup chopped walnuts
1 (6 ounce) container blueberry-flavored yogurt
1 large banana, mashed
1 tablespoon brown sugar
¼ cup confectioners' sugar
1 ½ teaspoons water

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a baking sheet.
  • Whisk both flours, white sugar, baking powder, baking soda, and salt together in a bowl. Cut in butter with 2 knives or a pastry blender until mixture resembles coarse crumbs. Stir in blueberries and walnuts. Beat yogurt and banana in a small bowl until smooth; add to flour mixture and stir gently just until dough holds together.
  • Turn dough out onto prepared baking sheet and pat into an 8-inch circle. Score the dough into 8 wedge-shaped pieces using a butter knife. Sprinkle brown sugar evenly over dough.
  • Bake in the preheated oven until lightly browned, 18 to 20 minutes.
  • While scones are baking, whisk confectioner's sugar and water together in a small liquid measuring cup. Drizzle over warm scones before serving.

2 cups all-purpose flour
4 tablespoons white sugar, divided
2 teaspoons baking powder
½ teaspoon baking soda

½ teaspoon ground nutmeg
½ cup butter, cut into chunks
1 cup fresh blueberries
¾ cup buttermilk
1 egg white, lightly beaten
1 tablespoon powdered sugar, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Coat 2 baking sheets with cooking spray.
  • Whisk flour, 3 tablespoons sugar, baking powder, baking soda, salt, and nutmeg together in a large bowl. Cut in butter with 2 knives or a pastry blender until mixture resembles coarse meal. Stir blueberries and buttermilk into the flour mixture until combined.

Number Of Ingredients 12

2 cups all-purpose flour
1/4 cup plus 1 tablespoon sugar, divided
3 teaspoons baking powder
3/4 teaspoon salt
1/4 cup cold butter
1 large egg, room temperature
1/2 cup whole milk
1-1/2 teaspoons vanilla extract
1 cup fresh or frozen blueberries
1/3 cup chopped pecans, toasted
2 teaspoons grated lemon zest
1 large egg white, lightly beaten

Steps:

  • In a large bowl, combine the flour, 1/4 cup sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. , In a small bowl, whisk the egg, milk and vanilla; add to crumb mixture. Stir in the blueberries, pecans and lemon zest just until moistened. , Turn onto a floured surface, knead 6-8 times. Pat into an 8-in. circle; cut into eight wedges. Separate wedges and place 2 in. apart on a greased baking sheet. , Brush with egg white and sprinkle with remaining sugar. Bake at 375° for 18-22 minutes or until lightly browned. Serve warm.
