Delicious, warm blueberry sauce which is fabulous on pancakes, waffles, cheesecake or ice cream! Fresh or frozen blueberries work equally well.

Steps:
- In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and sugar. Stir gently, and bring to a boil.
- In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.

BLUEBERRY WAFFLES WITH FAST BLUEBERRY SAUCE
I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

Steps:
- In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
- Preheat a lightly greased waffle iron.
- Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
- To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

BLUEBERRY WAFFLES
These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top!

- Whisk together the flour, baking powder, soda, salt and sugar.
- Add the eggs, milk and vanilla, melted butter and club soda.
- Toss the lemon zest with the blueberries and fold into the batter.
- Allow the batter to rest 5-10 minutes while your waffle iron heats up.
- Heat waffle iron to medium-high heat, pour ¼ cup of batter into each well allow to set for 15 secs then lower top to close and cook.

LEMON-POPPY SEED WAFFLES WITH BLUEBERRY SAUCE
This recipe comes from "The Little RoosterCafe" in Manchester Center, Vermont. The flavors of lemon and blueberry seem to go hand in hand, and that's definately the case in this breakfast treat. Top with maple syrup, if you prefer.

- For Blueberry Sauce:Bring blueberries, 1/2 cup apple juice and sugar to boil in a heavy medium saucepan.
- Simmer over medium heat until reduced to 2 cups, about 15 minutes.
- Dissolve 1 tablespoon cornstarch into remaining 2 tablespoons apple juice and add to blueberry mixture.
- Add lemon juice.
- Bring to a boil, stirring constantly; simmer until thick, about 1 minute.
- Cool slightly.
- For Waffles: Whisk first 6 ingredients in large bowl to blend.
- Whisk eggs, buttermik, melted butter and lemon peel in small bowl to blend.
- Add buttermilk mixture to flour mixture all at once and whisk until just blended.
- Let stand for about 15 minutes.
- Preheat waffle iron according to manufacture's instructions.
- Spoon batter onto waffle iron.
- Cover and cook until golden and cooked through, about 7 minutes.
- (Time will vary depending on waffle iron.) Repeat with remaining batter.
- Serve immediately with warm blueberry sauce.
