Delicious, warm blueberry sauce which is fabulous on pancakes, waffles, cheesecake or ice cream! Fresh or frozen blueberries work equally well.

2 cups fresh or frozen blueberries
¼ cup water
1 cup orange juice
¾ cup white sugar
¼ cup cold water
3 tablespoons cornstarch
½ teaspoon almond extract
⅛ teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and sugar. Stir gently, and bring to a boil.
  • In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.

I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

3 egg yolks, beaten
1 ⅔ cups milk
2 cups all-purpose flour
2 ¼ teaspoons baking powder
½ teaspoon salt
¼ cup melted butter
3 egg whites, stiffly beaten
⅔ cup blueberries
1 ½ cups blueberries
3 tablespoons honey
½ cup orange juice
1 tablespoon cornstarch

Steps:

  • In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
  • Preheat a lightly greased waffle iron.
  • Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
  • To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

Fold in blueberries., In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle iron according to manufacturer's directions until golden brown., Meanwhile, in a small saucepan, combine the blueberries, 1/4 cup orange juice and honey. Bring to a boil. Combine cornstarch and remaining orange juice until smooth; gradually stir into berry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve warm with waffles.

1 ½ cup (180g) flour
1 tablespoon (15 ml) baking powder
½ teaspoon (2.5ml) baking soda
½ teaspoon (2.5ml) salt
1 tablespoon (15 ml) sugar
2 eggs
1 cup (240 ml) of milk
1 teaspoon (5 ml) vanilla
7 tablespoon (105 ml) melted butter
¾ cup (180 ml) club soda
1 cup (150 g) of fresh blueberries
1 teaspoon (5 ml) fresh lemon zest
powdered sugar for garnish
pure maple syrup, warmed

Steps:

  • Whisk together the flour, baking powder, soda, salt and sugar.
  • Add the eggs, milk and vanilla, melted butter and club soda.
  • Toss the lemon zest with the blueberries and fold into the batter.
  • Allow the batter to rest 5-10 minutes while your waffle iron heats up.
  • Heat waffle iron to medium-high heat, pour ¼ cup of batter into each well allow to set for 15 secs then lower top to close and cook.
  • Dust with powdered sugar, top with butter and drizzle with warmed maple syrup.

1 lb frozen blueberries, thawed and undrained
6 tablespoons apple juice
1/2 cup sugar
1 tablespoon cornstarch
1 tablespoon fresh lemon juice
1 1/2 cups all-purpose flour
6 tablespoons sugar
2 tablespoons poppy seeds
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1 1/4 cups buttermilk
1/4 cup unsalted butter, melted
1 tablespoon grated lemon, rind of

Steps:

  • For Blueberry Sauce:Bring blueberries, 1/2 cup apple juice and sugar to boil in a heavy medium saucepan.
  • Simmer over medium heat until reduced to 2 cups, about 15 minutes.
  • Dissolve 1 tablespoon cornstarch into remaining 2 tablespoons apple juice and add to blueberry mixture.
  • Add lemon juice.
  • Bring to a boil, stirring constantly; simmer until thick, about 1 minute.
  • Cool slightly.
  • For Waffles: Whisk first 6 ingredients in large bowl to blend.
  • Whisk eggs, buttermik, melted butter and lemon peel in small bowl to blend.
  • Add buttermilk mixture to flour mixture all at once and whisk until just blended.
  • Let stand for about 15 minutes.
  • Preheat waffle iron according to manufacture's instructions.
  • Spoon batter onto waffle iron.
  • Cover and cook until golden and cooked through, about 7 minutes.
  • (Time will vary depending on waffle iron.) Repeat with remaining batter.
  • Serve immediately with warm blueberry sauce.
