Blueberry Jam Is The Secret Ingredient In These Easy Dessert Bars image

A quick, oat crust is topped with blueberry jam + sliced almonds & baked-voila! Easy dessert bars.

Number Of Ingredients 13

¾ cup butter
softened
1 ¼ cup flour
¾ cup light-brown sugar
½ cup rolled oats
1 teaspoon vanilla bean paste or vanilla extract
1 teaspoon baking powder
½ teaspoon kosher salt
¾ cup blueberry jam
¼ cup sliced almonds
½ teaspoon flaky sea salt
Confectioners' sugar
for topping

Steps:

  • Preheat oven to 350˚F
  • Line an 8-inch square baking pan with a parchment paper overhang
  • Place the butter, flour, oats, brown sugar, vanilla bean paste, baking powder and salt into the bowl of a stand mixer
  • Mix on a low speed until a crumbly dough forms
  • Place ¾ dough into the prepared pan
  • Using your hands, press the dough into an even layer so it covers the bottom
  • Spoon jam on top and, using an offset spatula, spread, leaving a ¼-inch rim around the edges
  • Crumble remaining dough on top
  • Sprinkle with almonds and flaky salt
  • Bake until brown around the edges, about 30 minutes
  • Once cool, using the parchment paper, lift the bars from the pan
  • Dust with confectioners' sugar and cut into 16 pieces

1/3 cup honey
1/2 teaspoon vanilla bean paste or beans from half vanilla pod
1/3 cup finely ground almonds (almond flour works well)
1/4 teaspoon salt
1 Tablespoon almond butter
2 cups roughly chopped Blue Diamond almonds
1 cup dried blueberries
1/4 cup old fashioned oats

Steps:

  • Preheat the oven to 300 degrees F. Line an 8 x 8 baking pan with parchment paper.
  • In a large bowl mix together the honey, vanilla bean paste, ground almonds, salt, and almond butter together until well combined.
  • Add in the almonds, blueberries, and oats. Mix until everything is well coated in the honey mixture.
  • Pour everything into the baking pan and press down firmly. I recommend lightly greasing your hands so you can press as tightly as possible. This is essential for the bars to keep their shape.
  • Bake for 25 minutes, then leave to cool in the baking pan until it reaches room temperature.
  • Chill in the refrigerator for a few hours. Remove, then cut into bars.

1/4 Cup Oats ((powdered))
1 1/4 Cups Almonds
1/2 Cup Blueberries ((or any other berries like cranberries or raisins))
1/4 cup Honey
1 Tbsp Almond butter
A generous pinch of Salt
1 Tbsp Vanilla Extract

Steps:

  • Line a bread pan (8 x 4 inches) with parchment paper over hanging on the sides. (It makes easy to pull out baked bars from the pan) Not needed if using foiled baking pan. Just spray with a butter spray. Just like shown in the pictures.
  • Preheat your oven to 300°F (149°C). Pulse lightly 3/4 cup of the almonds into chunks.
  • Add almond halves, almond chunks, oats, salt and blueberries in a large mixing bowl and mix well. Next add peanut butter, vanilla and honey. Mix to combine.
  • Transfer this mix into the baking pan. Press it all firmly. You may use greased back of a spoon/spatula to press the mix down evenly.
  • Bake these for about 20-24 minutes. Or until they appear golden-brown on top. Mine were done in 22 minutes. The bars may appear sticky. Don't be tempted to continue to bake these. They will firm up further in the refrigerator.
  • Take them out of oven and let cool on a wire rack for some time and place in the refrigerator for an hour or so. It will help them to firm up.
  • Remove them from pan using overhangs. Cut into desired shapes with a sharp knife.

1 ¼ teaspoons baking powder
½ cup shortening
¾ cup white sugar
3 eggs
¾ teaspoon almond extract
⅓ cup milk
1 ½ cups fresh blueberries
⅓ cup confectioners' sugar
6 tablespoons cream cheese, softened
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking dish.
  • To make the crust: Cream shortening, sugar, one egg, milk and almond extract in a large bowl. Mix in flour and baking powder, stirring constantly. Spread crust evenly in baking pan. Top with blueberries.
  • To make the topping: In a medium bowl, beat two eggs, and cream cheese until smooth. Stir in powdered sugar and almond extract. Spread over blueberries.
  • Bake 55 to 60 minutes, or until firm to the touch. Cool in pan before cutting.

1/2 cup butter
1 (12 ounce) package white chocolate chips (2 cups)
2 eggs, lightly beaten
1/2 cup sugar
1/2-1 teaspoon almond extract
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup blueberry jam
1/4 cup almonds, sliced

Steps:

  • Preheat oven to 325 degrees. Grease 9x9x2-inch baking pan; set aside. In small saucepan, melt butter over low heat. Remove from heat. Add 1 cup of the white baking pieces (do not stir). Set aside.
  • In medium bowl, combine eggs and sugar. Add butter mixture to egg mixture; stir just until combined. Stir in almond extract.
  • Stir together flour and salt. Add flour mixture to egg mixture; stir just until combined. Spread half of the batter in prepared pan. Bake for 15 to 20 minutes or until edges are lightly browned. Remove from oven.
  • Meanwhile, in small saucepan, cook and stir blueberry jam over low heat until melted. Spread melted jam evenly over baked layer. Stir remaining white baking chips into remaining butter. Drop batter in small mounds on top of jam layer. Sprinkle with almonds.
  • Bake about 35 minutes or until toothpick inserted near center comes out clean and top is lightly browned. Cool in pan on wire rack. Cut into bars.

VANILLA ALMOND BLUEBERRY BARS

This recipe came off of a box of Cascadian Farm Organic French Vanilla Almond Granola cereal. The original recipe obviously calls for that brand of granola cereal but you can use any kind of granola you like in this recipe! I think you could also probably use fresh fruit instead of frozen - I haven't tried that but I don't see why it wouldn't work!

1 egg white
1/2 cup butter, softened
1/4 cup packed brown sugar
1/2 teaspoon almond extract
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups granola cereal
8 ounces frozen blueberries
1/4 cup sugar

Steps:

  • Preheat the oven to 375°F and grease an 8-inch square pan.
  • In a large bowl, beat the egg white, butter, brown sugar, and almond extract with a spoon until creamy.
  • Beat in the flour, baking powder and baking soda.
  • Stir in the granola.
  • Press about 2/3 of the dough into the bottom of the prepared pan.
  • In a medium bowl, mix the blueberries and sugar; spoon over dough to within ½ inch of the edges.
  • Crumble the remaining 1/3 of dough on top of the fruit.
  • Bake at 375°F for 25-30 minutes or until golden brown and set. (High altitude - bake for 30-35 minutes.)
  • Cool completely, about 30 minutes, then cut into 16 bars.

  • In a large bowl, add chopped cashews, almonds, dried blueberries, almond meal, flaxseed, vanilla beans, and brown rice syrup. Using a large wooden spoon or rubber spatula, stir together ingredients until fully combined. Mixture will be VERY sticky and thick.
  • Transfer mixture into lined pan and press into even layer, making sure to get into all four corners. I used a thick rubber spatula and the pressure of my other hand on the back of the spatula, to evenly press the mixture down into the pan.
  • Bake bars for 18-20 minutes, then allow bars to cool in pan at room temperature. Transfer pan to fridge for 1 hour and allow bars to set entirely. Remove bars from pan using parchment paper edges, and cut into 10 even bars. Wrap bars individually and store in container in fridge up to 2 weeks.
