Healthy Blueberry-Ricotta Tartlets image

News flash: Dessert can be the perfect place to add calcium to your diet. We did just that by using ricotta cheese in these sweet little tartlets. (Eight percent of your daily value, so not too shabby!) The apricot jam does double duty: As a sweetener for the ricotta plus as a glaze for the berries.

1/2 cup part-skim ricotta
1/2 teaspoon finely grated lemon zest
1/2 teaspoon pure vanilla extract
1 tablespoon plus 1 teaspoon apricot jam
1/3 cup blueberries
12 frozen mini phyllo shells, thawed
2 teaspoons pine nuts or sliced almonds

Steps:

  • Stir together the ricotta, lemon zest, vanilla and 1 tablespoon apricot jam in a small bowl.
  • Toss together the blueberries with the remaining 1 teaspoon of apricot jam in another small bowl.
  • Spoon the ricotta mixture into the phyllo cups. Top each with a few blueberries and nuts. The tartlets can be made ahead and refrigerated for up to 2 hours.

SWEET ONION TARTLETS

Number Of Ingredients 8

4 tablespoons butter
1 Vidalia onion or other sweet onion, diced, about 3 cups
1 box (15-ounce) refrigerated pie crust (recommended: Pillsbury)
1 large egg
1/3 cups half-and-half
1/2 (1.3-ounce) envelope golden onion soup mix (recommended: Lipton)
1 teaspoon fine herbs (recommended: Spice Islands)
1/2 cup shredded Monterey Jack cheese

Steps:

  • Preheat oven to 325 degrees F.
  • Melt butter in a large frying pan over medium heat. Add onions and cook until golden brown. Set aside to cool. Unroll pie dough 1 at a time. Use a 2 1/2-inch round cutter and cut as many rounds as possible (about 14 to 16), reserving scraps repeat with second pie dough. Gather together scrap dough and cut out as many rounds as needed to make 24 in total. Fit dough rounds into cups of mini muffin pan. Place in the oven and bake for 10 to 12 minutes. Remove and set aside. In a small bowl, whisk together the egg, half-and-half, golden onion soup mix, and fines herbs. Set aside. Divide onions among tartlet shells, about 1/2 teaspoon each. Stir the egg mixture and fill tartlets to cover the onions. Top each with 1/2 teaspoon of cheese. Bake for 45 to 50 minutes.

1/4 cup sugar
2 teaspoons lemon juice

Steps:

  • Combine 1 cup of the blueberries, water, sugar and lemon juice in a small saucepan. Cook over a medium heat for about 10 minutes. Add the rest of the blueberries and cook for 8 minutes more, stirring frequently. Serve warm.

½ cup Crisco® All-Vegetable Shortening
4 ounces cream cheese, softened
1 ½ cups Pillsbury BEST® All Purpose Flour
¼ teaspoon salt
1 (14 ounce) can Eagle Brand® Sweetened Condensed Milk
1 large egg, beaten
2 tablespoons fresh lemon juice
2 teaspoons grated lemon peel, divided
¾ cup fresh blueberries
4 tablespoons Whipped cream
2 teaspoons Honey

Steps:

  • Heat oven to 425 degrees F. Coat 8 (4 x 3/4-inch) tart pans with no-stick cooking spray. Beat shortening and cream cheese in large bowl with electric mixer on medium speed until fluffy. Beat in flour and salt until dough forms. Press into bottoms and sides of prepared pans. Place tart pans on baking sheet. Bake 5 minutes.
  • Whisk sweetened condensed milk, egg and lemon juice in medium bowl until smooth. Stir in 1 teaspoon lemon peel. Divide evenly into crusts.
  • Reduce oven to 375 degrees F. Bake 16 to 18 minutes or until lightly browned. Cool completely. Remove from pans. Top with whipped cream and blueberries. Drizzle with honey. Sprinkle with remaining lemon peel.

Blueberry and Strawberry fruit compote
serves 3-4
1 pint blueberries
1/2 lb strawberries
1/4 c sugar
1 t lemon juice
zest from lemon (optional)
1/4 c water

Steps:

  • Dump everything into a heavy bottomed pan. Bring to a boil. Reduce heat to medium high and boil for 15 minutes, stirring every few minutes and scraping down the sides of the pan.
  • Compote is done when bubbles get large (this means the sugars are concentrating) and the syrup is nice & thick. It will thicken additionally as it cools.

1 (10-ounce) bag frozen blueberries (recommended: Dole)
1 cup sugar
1/4 cup quick cooking tapioca
1 (12-ounce) jar ginger preserves (recommended: Robertson's)
2 tablespoons lemon juice
1/4 cup water
2 (8-ounce) packages cream cheese
1/2 cup sugar
1 cup lemon curd (recommended: Dickinson's)
1 tablespoon lemon zest
2 containters (about 4 ounces) mini graham cracker pie crusts (recommended: Keebler)

Steps:

  • For the compote: Place all compote ingredients into a medium pot. Cover and cook on low until strawberries break down and sauce thickens, about 30 minutes. If using a slow cooker, cook on high setting for 1 1/2 to 2 1/2 hours.
  • For the lemon tartlets: In a large bowl, combine all tartlet ingredients, except crusts.
  • Using an electric mixer beat on medium speed until creamy, about 1 minute. Spread lemon mixture into mini pie crusts. Chill in refrigerator for 2 hours or until set.
  • Serve warm compote over chilled tartlets.
