Steps:
- Preheat the oven to 350 degrees.
- In a food processor, pulse together 3/4 cup sugar, flour, and 1/8 teaspoon salt. Add the butter and let the food processor run until the butter is completely crumbled. With the food processor still running, slowly pour in the water. Pulse a few more times. The dough should still be crumbly but stick together when squeezed.
- Prepare an 8 x 8-inch square pan. Spray with cooking spray and then line with parchment, so the excess parchment hangs over the two sides. Reserve ½ cup of pie crust. Press the rest of the crust down into the bottom of the pan evenly.
- Whisk together sour cream, 1/3 cup sugar, lemon juice, cornstarch, vanilla, and ½ teaspoon salt. Lightly fold in the blueberries. Pour the mixture into the crust.
- Sprinkle the reserved pie crust on top of the blueberries.
- Bake for 40 minutes, then raise oven temperature to 400 degrees and bake for another 20 minutes. Remove from the oven and let cool. Refrigerate for 3-4 hours before slicing and serving.

BLUEBERRY SOUR CREAM COFFEE CAKE
One really delicious and really unhealthy Sunday coffee cake. I have no idea where I got this recipe from but it was about thirty years ago and has been a family favorite since. The bake time is a bit longer if you're using frozen berries.

BLUEBERRY KUCHEN
In the summer, we can get beautiful, plump blueberries, which I use in this easy-to-make coffee cake. I like to freeze extra blueberries so I have them available anytime I want this treat. -Anne Krueger, Richmond, British Columbia

BLUEBERRY SOUR CREAM KUCHEN BARS
I found this recipe in Cake Mix Cookies by Camilla Saulsbury. My blueberries are just arriving and I had picked 2 cups and wanted something quick and easy. When I took these to work everyone wanted the recipe. I think they taste better after chilling overnight.

- For the crust: In the bowl of a food processor, combine the butter, sugar, flour, cinnamon and salt. Process until the mixture starts to come together and clump, 1 minute. Remove 3/4 cup and reserve; press the remaining crust mixture evenly into the prepared baking pan. Set aside.

Pour the filling mixture over the crust, shaking the pan gently to settle the custard and berries. Pour the remaining 1 cup blueberries over the top, spreading them evenly.

HEALTHIER BLUEBERRY SOUR CREAM CAKE
I baked this one sunday morning in Spring when I was craving baked goods but was looking to get rid of a few pounds. This cake is very moist and tastes great with salted butter and a cup of black tea. I use corn sugar to account for my fructose intolerance. Enjoy!

RICH BLUEBERRY SOUR CREAM CAKE
My mother has been giving me all her old written recipes, she is off all treatments, and I guess she is handing me down her legacy. She used to be an awesome baker and sure hope she wrote this recipe down correctly, cause it was one of my favorites! I hope someone will try it and let me know how it comes out, or how it can be improved upon...or if the steps are even correct (!), I am SO not a baker! Some of the instructions do not make a whole lotta sense to me, because I do not bake, but maybe some of you can come up with something and make this work!
