Categories     Bread

Time 40m

Number Of Ingredients 12

1 cup (125g) icing/powdered sugar
1 - 2 tablespoons orange juice
2 cups (250g) plain/all-purpose flour
1/2 cup (100g) caster/granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
Zest of 1 orange
6 tablespoons (85g) unsalted butter, cold and cubed
1 large egg
1/2 cup (120ml) heavy cream
1 teaspoon vanilla extract
1 cup (100g) fresh or frozen blueberries

Steps:

  • Preheat the oven to 200C/400F/Gas 6. Line a baking tray with parchment paper or a silicone mat, and set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and zest.
  • Add the butter and, using a pastry cutter, fork, or your fingertips, work it into the mixture until it resembles coarse breadcrumbs. You may also use a food processor.
  • In a separate bowl or jug, whisk together the egg, heavy cream, and vanilla until combined. Add to the flour mixture and gently mix in to form a soft dough. Do not overmix. Gently fold in the blueberries.
  • Turn the dough out onto a lightly floured surface, and shape into an 8-inch round disc. Transfer to the prepared baking tray, cut into 8 wedges, and pull the triangles slightly away from one another.
  • Lightly brush each scone with heavy cream, then bake for 20 - 25 minutes or until lightly golden and cooked through. Allow to cool on the baking tray for 5 - 10 minutes before transferring them to a wire rack to cool slightly whilst preparing the glaze.
  • Whisk together the icing sugar, and orange juice until smooth and slightly runny. Add more juice if the glaze is too thick, or more icing sugar if too runny. Drizzle over warm or room temperature scones, and enjoy!

Categories     Breakfast Bread

Time 3h30m

Yield 16

Number Of Ingredients 18

¼ cup warm water
1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
½ cup unsalted butter, softened
½ cup white sugar
1 cup whole milk
¼ cup orange juice
2 large eggs
5 cups bread flour
1 tablespoon kosher salt
1 cup white sugar
2 tablespoons grated orange zest
½ cup unsalted butter, softened
1 cup fresh blueberries
2 cups powdered sugar
3 tablespoons freshly squeezed orange juice
2 tablespoons unsalted butter, softened
2 teaspoons grated orange zest

Steps:

  • Prepare dough: Mix together warm water, yeast, and 1 teaspoon sugar. Set aside for 5 to 10 minutes. Whisk flour and salt together in a separate bowl.
  • Beat 1/2 cup butter with an electric mixer until light and fluffy. Mix in sugar. Mix in milk, orange juice, and eggs until just blended. Add in yeast mixture and mix until incorporated. Slowly mix in flour mixture until a dough forms.
  • Turn dough out onto a heavily floured surface; knead until smooth and elastic, about 5 minutes. Transfer dough ball into a greased bowl; turn dough once so that both sides are lightly greased. Cover and leave in a dark, warm, draft-free area until doubled in size, about 2 hours.
  • Punch dough down and roll back out on a heavily floured surface into a 12x22-inch rectangle.
  • Prepare filling: Mix sugar and orange zest with a fork in a bowl until well combined. Spread butter evenly across the dough, leaving 3/4 inch space around the edge. Sprinkle sugar-orange zest mixture over top, then sprinkle with blueberries.
  • Starting at the the long edge, roll dough into a log; cut log into sixteen 1- to 1 1/2-inch pieces. Put rolls into greased round cake pans and let rise again in a dark, warm, draft-free area until approximately doubled in size, 30 to 60 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until rolls are golden brown on topped and fully baked in the center of the coil, 25 to 30 minutes. Remove from the oven and let cool on wire racks for 5 minutes.
  • Prepare glaze: Mix powdered sugar, orange juice, butter, and orange zest until a glaze is formed. Drizzle over warm rolls.

  • Start by preheating your oven to 425 degrees. We are going to use the same method to bake these muffins that I use to bake cupcakes. Start them at a higher temperature and the temperature drop down midway. I find it creates a fluffier muffin and that's what we want.
  • Spray two 12 count average sized muffin pans with non stick spray or line them with cupcake liners. Set aside.

From tatyanaseverydayfood.com
  • Prepare the blueberry jam first. In a medium-sized sauce pot, combine the berries, sugar, orange zest and water. Cook the mixture over medium-high heat, bringing the jam to a simmer. Simmer for about 7 to 8 minutes, cooking the berries until they burst open and the sugar is dissolved. Remove from heat and allow the jam to cool down.
  • In a small ramekin, combine the 2 tablespoons water with 1 tablespoon unflavored gelatin. Stir to combine the two, then set the gelatin aside to bloom. If preparing this recipe with agar gelatin, add the agar into the custard when heating.
  • In a large mixing bowl, whisk together the egg yolks, sugar and a pinch of salt. Whisk for 3 to 4 minutes until the yolks are pale in color and mixture ribbons off of the whisk. Pour the milk and cream into a large sauce pot and add the cornstarch. Heat the milk over medium heat, whisking constantly, until the milk is hot but not boiling.
  • Temper the hot milk into the egg yolks, adding a little bit at a time and whisking vigorously after each addition. Once the two mixtures are combined, pour the resulting custard mix back into the sauce pot. Add the bloomed gelatin, or agar gelatin. Cook the mixture over medium-low heat (avoid high heat, which can cause separation!) and stir constantly with a rubber spatula. The mixture needs to thicken; avoid boiling. Remove the custard from heat and add the vanilla extract and orange zest.
