PEACH AND BLUEBERRY COBBLER

Peach and Blueberry Cobbler image

The easiest dessert that everybody loves. I got the idea from my mom and she got it from my grandma. The thing I changed is, I don't use a cake mix. I use items from my pantry, and I add blueberries.

Provided by Boomette

Categories     Dessert

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 13

6 ripe nectarines, about 1 pound
2 cups fresh blueberries
1 cup sugar
1 tablespoon dry tapioca
2 tablespoons unsalted butter, diced into small pieces, plus more for the pan
1 1/2 cups all-purpose flour
1/3 cup sugar
2 1/4 teaspoons baking powder
1/2 teaspoon fine salt
6 tablespoons cold unsalted butter, diced into small pieces
1 large egg
1/2 cup heavy cream
vanilla ice cream or whipped cream

Steps:

  • Position a rack in the middle of the oven and preheat to 375 degrees F.
  • For the fruit: Halve the nectarines along their natural seam, but leave skins on. Cut each half into 3 wedges. Toss nectarines with blueberries, sugar, and tapioca and put into a buttered 9-inch round gratin or casserole dish. Dot the top of the fruit with the pieces of butter.
  • For the cobbler top: Whisk the flour, sugar, baking powder, and salt in a medium bowl. Rub in 2 tablespoons of the butter with your fingertips until no visible pieces remain. Rub in the remaining 4 tablespoons butter just until it is in even, pea-size pieces. Whisk together the egg and cream and stir into the dry ingredients to make a shaggy, loose dough.
  • Spoon large spoonfuls of dough on top of the fruit in clumps (it should look like rough, old-fashioned cobblestones, hence the name cobbler). Bake until golden brown and a toothpick inserted in the center of the topping comes out clean, about 1 hour. Cool cobbler on a rack, about 20 minutes.
  • Serve warm or room temperature, with vanilla ice cream or whipped cream, if desired.

NECTARINE BLUEBERRY COBBLER

Nectarine Blueberry Cobbler image

Categories     Fruit     Dessert     Bake     Blueberry     Nectarine     Summer     Gourmet

Yield Serves 4 to 6

Number Of Ingredients 15

8 small nectarines, pitted and sliced thin (about 4 1/2 cups)
2 cups blueberries, picked over
1/2 cup water
1/2 cup sugar, or to taste
1 tablespoon plus 1 teaspoon cornstarch
1 tablespoon fresh lemon juice
For the biscuits
1 3/4 cups all-purpose flour
3 tablespoons sugar
1 tablespoon double-acting baking powder
a pinch of salt
1 cup heavy cream
heavy cream or milk for brushing the biscuits
sugar for sprinkling the biscuits
vanilla ice cream as an accompaniment if desired

Steps:

  • Preheat the oven to 450°F. In a saucepan combine the nectarines, the blueberries, the water, the sugar, the cornstarch, and the lemon juice, bring the mixture to a boil, stirring constantly, and simmer it for 5 minutes, or until the fruit is softened. Transfer the fruit mixture to a shallow 1 1/2-quart baking dish.
  • Make the biscuits:
  • Sift the flour onto a sheet of wax paper, into a bowl sift together the flour, the sugar, the baking powder, and the salt, and make a well in the center. In a bowl beat the cream until it holds soft peaks, spoon it into the well in the flour mixture and combine the mixture with a fork until it just forms a dough. On a lightly floured surface knead the dough until it is combined well, roll or pat it out about 3/4 inch thick, and with a 2 1/2-inch round cutter cut out 6 biscuits.
  • Arrange the biscuits on top of the fruit mixture, brush them with the cream or milk, and sprinkle them with the sugar. Bake the cobbler in the middle of the oven for 15 to 17 minutes, or until the biscuits are browned and the fruit is bubbling. Let the cobbler cool slightly and serve it with the ice cream.

BLUEBERRY-NECTARINE COBBLER

Blueberry-nectarine cobbler image

The cobbler is an American classic in which fruit is topped with spoonfuls of biscuit dough and then baked, creating a cobblestone effect. Blueberries are often the fruit of choice for this pie-like dessert, but we've added sweet slices of nectarines for a fresh and tasty twist on the classic blueberry cobbler recipe. Served warm and topped with vanilla ice cream, this delightful Blueberry-Nectarine Cobbler is the perfect way to end any summer meal.

Provided by By Jennifer Fujita

Yield Yield: 6 servings

Number Of Ingredients 11

1 cup blueberries
3 cups nectarines, cut into 1-in. pieces
1 cup sugar
2 cups unbleached all-purpose flour
2 tsp. baking powder
½ tsp. salt
4 Tbsp. (2 oz.) cold unsalted butter, cut into ½-in. cubes
3 Tbsp. sugar
½ cup half-and-half, plus more for glazing
1 large egg
Turbinado sugar

Steps:

  • Directions Preheat oven to 375°F. In a bowl, mix blueberries, nectarines and sugar to combine. Pour fruit evenly in the bottom of a 13-by-9-inch greased baking pan. In a large bowl, whisk together the flour, baking powder and salt. Using your hands, rub the butter into the flour mixture, squeezing and pinching with your fingertips until the mixture resembles a coarse meal and there are no butter lumps bigger than a pea. Add the sugar and whisk to incorporate. Pour ½ cup half-and-half into a small bowl or measuring cup and add the egg. Beat with a fork to mix well. Pour the wet ingredients into the flour mixture, and then stir gently to just combine. Drop dough by spoonfuls over the fruit mixture. Sprinkle with turbinado sugar. Bake for 55 minutes or until golden brown.

BLUEBERRY AND NECTARINE COBBLER

Blueberry and Nectarine Cobbler image

When adding juicy summer fruit (like blueberries) to pies and cobblers, you generally need something to help the fruit coalesce into a sauce. We love instant tapioca, as it thickens while fading into the background, letting the fruit shine.
