BLUEBERRY COFFEE SYRUP RECIPE

Blueberry syrup is the secret to making quite a few delicious, summery drinks. Once you have a fresh batch of blueberry syrup, you can use it in coffee to give your morning cup a little extra oomph.

Number Of Ingredients 3

1 cup granulated sugar
1 cup water
1 cup fresh blueberries

Steps:

  • Put the water and sugar in a small saucepan and heat on medium.
  • Stir continuously until the mixture reaches a simmer.
  • Add the blueberries and lower the heat to medium-low.
  • Let simmer for 5 minutes.
  • Strain the syrup and discard the solid leftover berries.
  • Let cool completely to room temperature before you use the syrup.

I got this recipe from my friend Miranda. I love to serve it for breakfast with blueberry pancakes or blueberry muffins. NOTE** The cook time is for brewing the coffee. Your coffee maker time may vary.

6 c hot coffee
2 c half anf half
1/2 c blueberry syrup
1/2 c white chocolate sauce
whipped cream (optional)
fresh blueberries for garnish (optional)

Steps:

  • 1. Brew coffee. My coffee maker measures 6 oz. cups so I do 8 . But for this recipe the 6 cups means MEASURING CUPS. You may want to put 6 measuring cups of water into the carafe for your coffee maker and see how many "cups" that is for your particular maker. Brew the coffer according to the directions on your coffee maker.
  • 2. To 6 cups of fresh, hot coffee, add blueberry syrup and chocolate sauce. Stir until fully dissolved.
  • 3. Add the half and half and stir to mix well.
  • 4. Pour into coffee cups. Top with whipped cream and a blueberry if desired

1 1/2 teaspoons baking powder
3/4 cup White granulated sugar
1/2 teaspoon Vanilla extract
1/2 cup Melted butter
2 large eggs
1/4 cup Lemon juice
lemon zest from 1 large lemon
1 1/2 Cups all-purpose flour
1/2 cup Plain Greek yogurt
1/4 teaspoon salt
2 tablespoons flour
1 1/2 cups blueberries
For Lemon Glaze:
3 tablespoons Lemon juice
1 cup Confectioner's sugar

Steps:

  • Heat the oven to 340F. Line the loaf pan with parchment paper on the bottom and a couple of sides; this may make lifting the loaf out of the pan super easy!
  • In a bowl, cream together the eggs, sugar, vanilla, and butter. Whisk within the juice and plain yogurt. In another bowl, mix the dry ingredients: flour, leaven, and salt. Whisk within the dry ingredients gradually, whisking well after each addition.
  • Place blueberries into a bowl and toss alongside 2 tablespoons flour until well coated. Fold into the batter employing a spatula. Put the batter into the loaf pan; spread evenly to the edges.
  • Bake for 50 min, or until the top is about. Check for readiness by inserting a toothpick into the center; it must begin clean. Remove the loaf from the pan with the assistance of the parchment paper and set onto the wire rack to chill.
  • For the lemon glaze, simply whisk together the juice with confectioner's sugar.
