- In a large bowl, combine mangoes, blueberries and lemon juice. In a small bowl, combine sugar, cornstarch, cinnamon and ginger; sprinkle over fruit and toss to coat. Spoon into a 11-in. x 7-in. baking dish coated with cooking spray., For topping, in a large bowl, combine flour, 3 tablespoons sugar, baking powder, ginger, 1/4 teaspoon cinnamon, baking soda and salt. Add buttermilk; mix well. Drop dough by rounded tablespoonfuls into 6 portions onto fruit mixture. Combine remaining 1 tablespoon sugar and 1/4 teaspoon cinnamon; sprinkle over topping., Bake at 35-° for 35-40 minutes or until fruit is bubbly and topping browned. Serve warm.

- Preheat oven to 350°F Butter 8x8x2 1/2-inch square baking dish.
- Toss fruit, brown sugar and flour in large bowl to combine. Transfer to prepared baking dish. Bake fruit until juices bubble, stirring occasionally, about 40 minutes. Bake without stirring another 5 minutes. Remove from oven.
- Increase oven temperature to 375°F
- Meanwhile, stir together oats, spices, salt, and 2 tablespoons brown sugar in a bowl until combined. Rub butter into oat mixture until evenly distributed.
- Sprinkle topping over fruit and bake until topping is golden, 25 to 30 minutes more. Transfer to a rack to cool at least 10 minutes. Serve warm or at room temperature.

- Preheat oven to 425 degrees F (220 degrees C). Lightly oil an 8-inch square or 8-inch round baking dish.
- Combine blackberries and 1 cup sugar in a saucepan. Whisk warm water and cornstarch together in a bowl until smooth; stir into blackberries. Bring blackberry mixture to a boil, reduce heat to medium, and cook, stirring frequently, until berries break down and thicken, 5 to 10 minutes.
- Whisk flour, 1/3 cup sugar, baking powder, and salt together in a bowl. Cut butter into flour mixture using a pastry cutter or your hands until mixture resembles coarse crumbs. Stir milk into flour-butter mixture until a smooth, thick batter forms.
- Pour berry mixture into the prepared baking dish. Drop spoonfuls of batter over the berries.
- Bake in the preheated oven until a firm and golden crust forms, 30 to 40 minutes.

PEACH & BLUEBERRY COBBLER
This is a healthier version of a traditional cobbler, with canola oil in place of some of the butter and whole-wheat flour instead of all-purpose flour. Unlike more classic biscuit-topped cobblers, the peaches and blueberries are nestled into a tender batter that swells around the fruit as it bakes. Other fruits may be substituted. It's especially beautiful when baked in and served right from a cast-iron skillet.

- Preheat oven to 350 degrees F.
- Place butter and oil in a 12-inch cast-iron skillet or a 9-by-13-inch baking pan. Heat in the oven until melted and fragrant, 5 to 7 minutes.
- Meanwhile, combine flour, baking powder and salt in a large bowl. Add milk, sugar and vanilla; stir to combine.
- Add the melted butter mixture to the batter and stir to combine. Pour the batter into the hot pan. Spoon peaches and blueberries evenly over the batter.
- Return the pan to the oven and bake until the top of the cobbler is browned and the batter around the fruit is completely set, 50 minutes to 1 hour. Remove to a wire rack to cool for at least 15 minutes. Serve warm.

- Preheat oven to 375°F and oil a 10" cast iron skillet or medium baking dish of choice.
- In a medium bowl, prepare the filling by combining the peaches blueberries, sugar cornstarch, lemon juice, vanilla extract, cinnamon and salt. Once everything is uniform, transfer the mixture to the cast iron skillet or baking dish of choice and evenly distribute. Set aside.
- In another medium bowl, use a standing mixer or a handheld mixer to cream together the butter and sugar until fluffy. Add in the remaining ingredients and mix until uniform.
- Add the dough on top of the filling and evenly distribute. Sprinkle the top with additional sugar. Using a spray bottle, party brush or even your hands, spritz a bit of water over top to moisten the sugar.
- Place into the oven and bake for 50-55 minutes, or until the top of cobbler is golden brown and a toothpick comes out clean.
- Cool and serve warm. We like it with a scoop of vegan vanilla ice cream.

- The Filling : Preheat oven to 375°F.
- Place fruit into a large bowl and toss well with the flour, sugar and lemon juice.
- Pour into a 2-quart ovenproof casserole or other dish.
- It is best if the fruit fills the dish but doesn't rise above the edges.
- The Topping: Whisk together flour, cornmeal, sugar, salt and baking powder. Grate in frozen butter and mix lightly with fingertips.
- Pour in milk and stir until mixture comes together and forms a rough dough.
- Place spoonfuls of the dough on top of the fruit evenly covering it.
- Bake until the fruit is bubbling and the topping is golden, about 45 minutes.
- Serve warm.
