2 cups Original Bisquick™ mix
1/2 cup packed brown sugar
1 teaspoon grated lime peel
3/4 cup milk
1/4 cup butter, melted
1 egg
1 cup fresh or frozen (do not thaw) blueberries
1/2 cup powdered sugar
1 tablespoon fresh lime juice
Additional grated lime peel, if desired

Steps:

  • Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In large bowl, stir baking mix, brown sugar and 1 teaspoon lime peel. In small bowl, stir milk, butter and egg with whisk or fork until well blended. Make well in center of dry ingredients; stir in egg mixture just until dry ingredients are moistened. Stir in blueberries. Divide batter evenly among muffin cups, filling each three-fourths full.
  • Bake 16 to 18 minutes or until toothpick inserted in center comes out clean and tops are golden brown. Cool 5 minutes; remove from pan to cooling rack.
  • Meanwhile, in small bowl, mix powdered sugar and lime juice until well blended. Drizzle over muffins. Sprinkle with additional lime peel. Serve warm or at room temperature.

1 cup whole wheat pastry flour
1/2 cup course grind cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 teaspoon orange zest
2 heaping tablespoons finely chopped fresh basil
1/3 cup plain non-fat Greek yogurt
6 tablespoons unsweetened almond milk or milk of choice
5 tablespoons honey
1 egg
1 tablespoon olive oil
1/4 teaspoon vanilla extract
1/2 cup fresh blueberries

Steps:

  • Preheat oven to 400° F. and line a standard muffin pan with liners or spray the insides of the cups with cooking spray. Set aside.
  • In a large bowl whisk together the flour, cornmeal, baking powder, baking soda, salt, orange zest and basil.
  • In a smaller bowl whisk together the yogurt, milk, honey, egg, oil and vanilla.
  • In a small bowl toss the blueberries together with a teaspoon of flour. This will help prevent them from sinking to the bottom of the muffins.
  • Pour the wet ingredients in with the dry and stir together with a rubber spatula until nearly combined.
  • Add in the blueberries and fold together just until you can no longer see any streaks of flour.
  • Evenly distribute the batter into the prepared muffin pan and place it on the middle rack of the oven.
  • Bake for 12-16 minutes or until a toothpick inserted into the center of the muffin comes out clean. If the muffins are getting too dark on top, cover them loosely with a piece of foil.
  • Cool the muffins on a wire rack for several minutes before serving.

1/2 cup fresh blueberries
2 tablespoons chopped fresh basil
1 tablespoon white sugar (organic for vegan-friendly)
1/2 cup 8 tablespoons unsalted butter, melted and cooled
1/2 cup milk (room temperature)
2 eggs
2 tablespoons chopped fresh basil
1 teaspoon grated lemon zest
2 cups all-purpose flour
3/4 cups plus 1 tablespoon sugar (divided)
2 teaspoons baking powder
1 teaspoon salt
2 cups fresh blueberries

Steps:

  • Add all of the ingredients to a microwave safe container. Microwave on high for 1 minute, then remove the container from the microwave and use the back of a spoon to break apart any blueberries that are still whole. Cover and refrigerate the sauce until well chilled.
  • Preheat your oven to 375°F. Line a standard 12-cup muffin tin with liners or coat with non-stick cooking spray. Set aside.
  • In the bowl of your stand mixer with the paddle attachment, beat the butter, milk, eggs, basil and lemon zest on medium speed until well combined, about 2-3 minutes. With your mixer on low, slowly add in the flour, 3/4 cups of the sugar, baking powder and salt, beating until the dry ingredients are just incorporated. Fold in the blueberries.
  • Scoop the muffin batter into your prepared muffin tin, dividing the batter evenly between the 12 cups. Add a small amount of the sauce to the center of each muffin, using about 1/2 to 1 teaspoon of the sauce for each muffin, pushing it down as far as you can into the batter. Sprinkle the remaining tablespoon of sugar over the tops of the muffins.
  • Transfer the muffin tin to your pre-heated oven and bake for 25-28 minutes. The tops of the muffins should be slightly brown, and a toothpick inserted into the center should come out clean. Remove from the oven and allow the muffins to cool in their tin for 5-10 minutes. Then remove the muffins from their tin and transfer them to a wire rack to continue cooling.
  • Once fully cooled, the muffins can be stored in an airtight container at room temperature for up to 2 days.

2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
pinch chilli powder (to season)
black pepper (to season)
1 brown onion (finely chopped)
1 tablespoon coconut oil (to fry onion)
90 gr butter (melted)
1 large egg (whisked)
1 cup almond milk (or normal milk)
1 cup cooked spinach (chopped)
2 tablespoons fresh basil (chopped fine)
1 cup mature cheddar cheese (grated)

Steps:

  • For the Dry Ingredients, use a medium-sized mixing bowl and combine the flour, baking powder, baking soda, salt, and seasoning. Set aside.
  • For the Wet Ingredients, first off heat the coconut oil and fry your chopped onion until sweet and translucent. Set Aside.
  • Next, in a large mixing bowl, combine the butter, egg, milk, spinach, basil and fried onion. Add the cheese and combine.
  • Add the dry ingredients to the wet ingredients, and mix until JUST incorporated.
  • In prepared muffin tins or liners, scoop the muffin batter in halfway through.
  • Bake in a preheated oven at 180 degrees Celsius for 30 - 35 minutes. Leave to cool and freeze for up to 2 months. Easily thaw it in the microwave.

1 cup sour cream (regular or light)
4 tablespoons butter
1/4 cup vegetable oil
2 large eggs (beaten)
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 teaspoon vanilla extract
1 tablespoon lime zest (or more if you want)
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1 cup blueberries (fresh or frozen - if frozen, do not thaw)

Steps:

  • Line a muffin tin with paper liners, or spray with nonstick spray. Preheat oven to 400 F.
  • In a large bowl, stir together the oats and sour cream and allow to sit for five minutes to soften the oats. Melt the butter in a small bowl in the microwave, then add to the sour cream mixture.
  • Add the oil, beaten eggs, granulated sugar, brown sugar, vanilla extract and lime zest. In a medium bowl, stir together the flour, baking powder, cinnamon, nutmeg and salt. Add the dry ingredients to the wet ingredient and mix until the flour is just about 2 or 3 stirs from being mixed in. Add some blueberries, reserving some to poke into the top of the muffins if you want. Do not overmix the batter. Once you don't see huge streaks of flour anymore, you're done.
  • Fill the muffin cups 3/4 full and bake for 20-25 minutes or until lightly browned on top and when a knife inserted into the muffin comes out clean. Serve warm.

  • Preheat oven to 400°F Use a little of the butter melted for the recipe to lightly brush the muffin tin. Set aside the remaining butter to cool.
  • In a mixing bowl, combine the flour, cornmeal, baking powder, salt, sugars, and nutmeg and toss well. Rinse the blueberries, pick over them, and drain well. Put them in a small bowl and toss them with 1 tablespoon of the flour mixture to coat them.
  • In a small bowl, lightly beat the eggs with a fork or a whisk, add the milk, and blend well. Stir in the melted butter and minced basil. Pour the liquid ingredients into the dry ingredients and stir to barely combine. Add the blueberries, folding them in gently, until they are just incorporated into the batter. Do not overmix.
  • Spoon the batter evenly into the muffin tins filling them about two-thirds full. Place in the middle of a hot oven and bake for about 20 minutes, until just golden brown, or a tester comes out clean. Cool in the tin for 5 minutes or so, loosen with a metal spatula and cool on baking racks or eat them warm.
