Blueberry and lime are two of my favorite flavors, so I added blueberries to my favorite mixed drink! This recipe can easily be doubled or tripled. To make simple syrup, combine 1/2 cup sugar and 1/2 cup water and cook over medium heat until the sugar is dissolved. Simple syrup will keep in the fridge for a week.-Michele Tungett, Rochester, Illinois

8 fresh blueberries
8 fresh mint leaves
1 cup ice cubes
2 ounces white rum
2 tablespoons fresh lime juice
1 tablespoon simple syrup
4 ounces club soda, chilled
Lime slice, mint sprig and additional fresh blueberries, optional

Steps:

  • Add blueberries and mint leaves to a tall glass; muddle with the back of a wooden spoon. Fill the glass with ice cubes; add rum, lime juice and simple syrup. Top glass with club soda; mix well. Garnish with lime slice, mint and blueberries if desired.

I recently had my first lavender mojito at a restaurant, so I went looking for a recipe, and I found something similar. The one I had used a lavender and rosewater infused simple syrup but this blueberry version is also quite good. I like that it says 0-15 mint leaves, since I actually prefer my mojitos w/o mint (more like a Caipirinha). We skipped the seltzer, doubled the lime, and used cubes instead of crushed ice. mint leaf
10 -15 blueberries
1 ounce lavender simple syrup (it's posted in my recipes)
1/2 lime, juice of
1 1/2 ounces white rum
club soda

Steps:

  • In a tall glass, muddle mint leaves, simple syrup or lavender syrup, lime juice, blueberries, and rum. Muddle just enough to combine flavors, being careful not to over-muddle.
  • Fill glass with crushed ice. Top with club soda and stir.
  • Garnish with 3 blueberries on a toothpick. Serve with a straw.

  • Add mint, lavender sugar and limes to an 8 ounce glass. Muddle with a muddler or a wooden spoon until the mint is fragrant and the lime has released its juice.
