The wild blueberries on our property spark recipe ideas. When my daughter and I made this ice cream at a Girl Guide meeting, it was well received. Even today, our 10 children, 19 grandkids and 4 great-grandchildren think it tastes great. -Alma Mosher, Mohannes, New Brunswick

4 cups fresh or frozen blueberries
2 cups sugar
2 tablespoons water
4 cups half-and-half cream

Steps:

  • In a large saucepan, combine the blueberries, sugar and water. Bring to a boil. Reduce heat; simmer, uncovered, until sugar is dissolved and berries are softened. Press mixture through a fine-mesh strainer into a bowl; discard pulp. Stir in cream. Cover and refrigerate overnight., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze until firm, 2-4 hours. Repeat with any remaining ice cream mixture.

4 c. blueberries
2 tbsp. lemon juice
1 qt. vanilla ice cream
1 pkg frozen raspberries in syrup
2 c. sweetened whipped cream or frozen whipped topping
1 c. fresh raspberries

Steps:

  • Place 3 cups blueberries, the sugar and lemon juice in medium saucepan; mash berries well with a potato masher. Place over medium heat and bring to a simmer; cook 5 minutes. Pour mixture into a blender and purée. Pour into a 2-cup measure, cover and chill 2 hours. Place a 1 1⁄2-qt freezer container in freezer to chill.
  • Let vanilla ice cream stand at room temperature until softened. Fold chilled blueberry purée into ice cream until well blended. Scrape ice cream into chilled container in freezer; freeze several hours or until firm enough to scoop.
  • Purée thawed raspberries and syrup in blender until smooth; scrape mixture through a fine sieve to remove seeds.
  • To make parfaits: For each parfait, spoon 1 Tbsp raspberry purée into a dessert glass and top with a small scoop blueberry ice cream. Top with 1 Tbsp whipped cream, and a few blueberries and raspberries. Repeat the layers. Top parfaits with a dollop of whipped cream.

3 1/2 cups blueberries (18 ounces), divided
3/4 cup pure maple syrup (preferably Grade B), divided
1 cup chilled heavy cream
1 teaspoon fresh lemon juice
6 ounces thin ginger cookies, coarsely crumbled

Steps:

  • Cook 2 1/4 cups (3/4 pound) blueberries with 1/2 cup maple syrup in a 2-quart heavy saucepan over medium heat, stirring occasionally, until blueberries have burst, 3 to 8 minutes. Cool in an ice bath, stirring occasionally.
  • While blueberry mixture cools, beat cream with remaining 1/4 cup maple syrup in a bowl using an electric mixer until it just holds stiff peaks.
  • Stir lemon juice and remaining 1 1/4 cups blueberries into cooled blueberry-maple mixture.
  • Spoon about 2 tablespoons blueberry mixture into each of 6 glasses and top with half of crumbled cookies and half of whipped cream. Repeat layering of remaining blueberry mixture, crumbled cookies, and whipped cream.
  • Serve parfaits immediately.

3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
2 eggs, lightly beaten
1-1/2 teaspoons vanilla extract
2 medium ripe peaches, peeled and sliced
1-1/2 cups fresh blueberries
Whipped cream

Steps:

  • In a saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cover and refrigerate until chilled., In six parfait glasses, layer 2 rounded tablespoons of custard, two to three peach slices and 2 tablespoons blueberries; repeat layers. Top with whipped cream.

Steps:

  • Blend blueberries in a food processor (or mash them really well in a bowl).
  • Mix cream and condensed milk together in a bowl. Mix in blueberries.
  • Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.
