FRENCH TOAST STICKS - OAMC
I got this basic recipe from another site but changed it a little for my family. The original recipe called for orange juice as the liquid instead of milk. I also added the vanilla as we think it gives it a nice flavor.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Cut each slice of bread into 3 pieces to make sticks. Texas Toast is a very thick sliced bread about 3/4" thick. You could substitute french bread if Texas toast is not available.
- In a bowl, mix together melted butter, eggs, sugar, cinnamon, vanilla and milk. Beat well.
- Dip sticks into egg mixture and place on a cookie sheet that has been sprayed with cooking spray.
- If there is any dip left, you can drizzle it over the sticks.
- Bake for 25 minutes on middle rack of oven. Turn halfway through baking time.
- Allow to cool.
- Flash freeze on cookie sheet, remove and place in a ziploc bag.
- To reheat: place 3 sticks on a microwave-safe plate and heat on high for 1 minute until warm. Serve with syrup.

- Lightly grease a 9x13 inch baking dish. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining bread cubes.
- In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
- Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
- Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.
- In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast

- Butter a shallow 2-quart baking dish. In a large bowl, whisk together eggs milk, sugar, cinnamon, and salt. Dip brioche in egg mixture, then arrange in dish, overlapping slightly. Pour remaining egg mixture over brioche, cover with plastic wrap, and let stand 30 minutes or refrigerate up to overnight.
- Preheat oven to 325 degrees. Sprinkle blueberries in between and on top of the bread slices. Bake until puffed and custard is just set, 55 to 65 minutes (tent with foil if browning too quickly). Let cool 15 minutes. Dust with confectioners' sugar just before serving.

- Place half of the bread cubes in a lightly greased 9x13 inch baking pan. Sprinkle cream cheese on top of bread cubes. Top with 1 cup blueberries and remaining bread. In a large bowl, beat together eggs, milk and maple syrup. Pour egg mixture over bread. Cover pan and refrigerate overnight.

- In a bowl, combine softened cream cheese, sugar, and cinnamon.
- Add eggs and heavy cream and whisk until well combined. Set aside.
- Preheat oven to 400˚F (200˚C).
- Cut a rectangle along the top of the loaf of french bread and pull out the part you cut along with the soft inside of the loaf. Set the "bread boat" aside.
- Tear apart the rectangle and soft inside of the bread that you removed into little bite-size pieces.
- Gently, fold the bread pieces and blueberries into the egg mixture until all of the liquid is absorbed.
- Place the "bread boat" on a baking sheet lined with parchment paper and pour in the bread and egg mixture.
- Bake for 30-40 minutes or until the top is golden brown. If the top is browning too quickly, cover the top of the boat in foil for the remaining time.
- Let cool before cutting into slices and serve with maple syrup.

This recipe is originally from Fix, Freeze Feast although it may have been altered slightly. I usually make 6 at a time and freeze for my OAMC club. Perfect for brunch with maple syrup. I usually serve with a quiche for a complete meal. I sometimes use less cream cheese depending on who's going to be eating it. You can substitute 1 cup fresh blueberries for the pie filling but recipe won't be as moist. Recipe may be doubled and prepared in a 9x12 pan if desired.

HAWAIIAN BLUEBERRY FRENCH TOAST BAKE
Steps:
- Coat a 9X13 baking dish with unsalted, room temperature butter. Cube the King's Hawaiian rolls and place in a mixing bowl.
- In a separate mixing bowl, whisk together whole milk, eggs, vanilla extract, cinnamon and nutmeg. Pour it through a sieve into another mixing bowl with the lemon zest and blend to combine. Pour the milk egg liquid over the cubed bread and toss to coat.
- Layer half the bread mixture at the bottom of the prepared baking dish, followed by half the blueberries. Arrange them in an even layer. Repeat layers and pour any remaining liquid over the dish. Cover with plastic wrap and refrigerate overnight. Don't press down as you don't want to compact the fluffy cubed bread.
- Make the crumb topping by whisking together flour, sugar, cinnamon, nutmeg and a tiny pinch of salt in a small bowl. Using your hands cut the cubed butter with the flour mixture until it is coarse and crumbly, about the size of small peas. Place the crumble in a Ziploc bag and refrigerate along with the casserole.
- In the morning, preheat the oven to 350°F and remove the casserole from the refrigerator. Remove the plastic wrap and spread the crumb topping evenly over the casserole. Bake for 35 - 40 minutes or until golden brown. Allow to cool and set for 5 minutes before serving.
- Garnish with a extra lemon zest and dust with powdered sugar. Serve it with maple syrup.
