FRENCH TOAST STICKS - OAMC

French Toast Sticks - OAMC image

I got this basic recipe from another site but changed it a little for my family. The original recipe called for orange juice as the liquid instead of milk. I also added the vanilla as we think it gives it a nice flavor.

Provided by JillAZ

Categories     Breakfast

Time 35m

Yield 24 sticks, 8 serving(s)

Number Of Ingredients 7

8 slices bread (Texas Toast style or French)
1/4 cup melted butter
4 eggs
1/3 cup sugar
1/4 teaspoon cinnamon
2/3 cup milk
3/4 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cut each slice of bread into 3 pieces to make sticks. Texas Toast is a very thick sliced bread about 3/4" thick. You could substitute french bread if Texas toast is not available.
  • In a bowl, mix together melted butter, eggs, sugar, cinnamon, vanilla and milk. Beat well.
  • Dip sticks into egg mixture and place on a cookie sheet that has been sprayed with cooking spray.
  • If there is any dip left, you can drizzle it over the sticks.
  • Bake for 25 minutes on middle rack of oven. Turn halfway through baking time.
  • Allow to cool.
  • Flash freeze on cookie sheet, remove and place in a ziploc bag.
  • To reheat: place 3 sticks on a microwave-safe plate and heat on high for 1 minute until warm. Serve with syrup.

BLUEBERRY FRENCH TOAST (OAMC)

Blueberry French Toast (Oamc) image

This recipe is originally from Fix, Freeze Feast although it may have been altered slightly. I usually make 6 at a time and freeze for my OAMC club. Perfect for brunch with maple syrup. I usually serve with a quiche for a complete meal. I sometimes use less cream cheese depending on who's going to be eating it. You can substitute 1 cup fresh blueberries for the pie filling but recipe won't be as moist. Recipe may be doubled and prepared in a 9x12 pan if desired.

HAWAIIAN BLUEBERRY FRENCH TOAST BAKE

Hawaiian Blueberry French Toast Bake image

A buttery and sweet delight! King's Hawaiian Sweet Rolls make this overnight blueberry french toast bake a light and fluffy scrumptious breakfast casserole.

Provided by The Tiny Fairy

Categories     Breakfast     Brunch     Casserole

Time 8h55m

Number Of Ingredients 16

unsalted butter for coating the baking dish ()
1 12-count King's Hawaiian Sweet dinner rolls
fresh blueberries (about ½ pint or 6 ounces) ()
1½ cup whole milk or half and half
3 extra large eggs, room temperature
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon fresh ground nutmeg
zest 2 lemons, plus more for garnish
confectioner's sugar for garnish
⅓ cup all purpose flour
⅓ cup brown sugar
5 Tablespoons unsalted butter, slightly chilled and cut in cubes
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
tiny pinch of kosher salt

Steps:

  • Coat a 9X13 baking dish with unsalted, room temperature butter. Cube the King's Hawaiian rolls and place in a mixing bowl.
  • In a separate mixing bowl, whisk together whole milk, eggs, vanilla extract, cinnamon and nutmeg. Pour it through a sieve into another mixing bowl with the lemon zest and blend to combine. Pour the milk egg liquid over the cubed bread and toss to coat.
  • Layer half the bread mixture at the bottom of the prepared baking dish, followed by half the blueberries. Arrange them in an even layer. Repeat layers and pour any remaining liquid over the dish. Cover with plastic wrap and refrigerate overnight. Don't press down as you don't want to compact the fluffy cubed bread.
  • Make the crumb topping by whisking together flour, sugar, cinnamon, nutmeg and a tiny pinch of salt in a small bowl. Using your hands cut the cubed butter with the flour mixture until it is coarse and crumbly, about the size of small peas. Place the crumble in a Ziploc bag and refrigerate along with the casserole.
  • In the morning, preheat the oven to 350°F and remove the casserole from the refrigerator. Remove the plastic wrap and spread the crumb topping evenly over the casserole. Bake for 35 - 40 minutes or until golden brown. Allow to cool and set for 5 minutes before serving.
  • Garnish with a extra lemon zest and dust with powdered sugar. Serve it with maple syrup.

  • Prepare campfire or preheat grill to 350 degrees. If you are grilling this you will want to use "indirect" heat. If you have three burners turn the two outside burners on and put this in the middle. Essentially where this is cooking you do not want to have that burner on.
  • Arrange bread slices on greased heavy duty tinfoil, double thickness. You want this to be about 24'' x 18''. Bring foil up on sides to make a "pan".
  • In a small bowl whisk eggs, milk, syrup, cinnamon and vanilla. Pour mixture over the bread. Sprinkle with nuts and 1 c. of the blueberries.
  • Place on grill using indirect heat or over campfire on a grill grate. Bake until it is cooked through and the egg is "set". This will take about 30-35 minutes depending on temperature of your campfire or grill. You may want to rotate this if one side is cooking hotter than the other.
