Flummery is an ancient Scottish dessert that dates back to the 15th century

Number Of Ingredients 8

2 tbsp medium oatmeal
6 tbsp fresh orange juice
4 tbsp caster sugar
75 ml double cream
2 tbsp Scotch whisky
2 tbsp runny honey
75 ml whipping cream
zest of 1 orange

Steps:

  • Soak the oatmeal in 450ml/15 floz cold water for 48 hours then drain and discard the oatmeal retaining the liquid
  • Pour the liquid into a pan and add the orange juice and sugar
  • Bring to a boil stirring continuously till thick this can take from 15 minutes depending on the starchiness of the oatmeal used. If it doesn't thicken to your liking add cornflour dissolved in a tiny amount of water to thicken.
  • Remove from heat and allow to cool
  • Stir in the double cream and pour into 6 small serving glasses
  • Chill in fridge for 30 mins
  • Mix whisky with honey and add a teaspoon to each glass
  • Whip the cream and top each glass and sprinkle with orange zest

Number Of Ingredients 3

135g pack jelly (raspberry or strawberry work well), broken into pieces
350ml evaporated milk or double cream
squirty cream or freshly whipped cream, to serve (optional)

Steps:

  • Mix the jelly with 250ml boiling water until it has dissolved. Pour into a bowl and leave to cool.
  • Stir through the evaporated milk and pour into an approximately 20cm trifle bowl. Cover and put in the fridge to set overnight. To serve, top with cream, if you like.

3 Quarts Blueberries, washed
2 Cups Water
2 1/2 Cups Sugar
1/2 Cup Cornstarch

Steps:

  • Dissolve the Cornstarch in the Water, then combine all ingredients in large sauce pan. Cook over LOW flame (use grid if possible), stir often to prevent sticking. Cook until mixture thickens and come to a boil, set aside to cool

Simple Blueberry Muffins image

This recipe first appeared in The Times in a 1986 article by Nancy Harmon Jenkins that extolled the virtues, and the many delicious applications, of summer berries. There's nothing fancy about this muffin - it's mostly flour, eggs, butter and blueberries. But that's the beauty of it. It's the perfect sort of baking project to tackle on a lazy weekend morning. This recipe calls for blueberries, but feel free to substitute almost any ripe and sweet berry.

Yield 1 dozen muffins

Number Of Ingredients 9

2 cups sifted all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
1/4 cup sugar
2 eggs, well beaten
3/4 cup milk
1/3 cup melted butter
1 cup blueberries
3 tablespoons flour

Steps:

  • Preheat oven to 425 degrees. Grease 12 muffin cups with a little butter.
  • Sift together flour, salt, baking powder and sugar.
  • Combine eggs, milk and melted butter. Stir into dry ingredients just until moistened. Do not try to beat until smooth because the muffins will be tough and grainy.
  • Sprinkle 3 tablespoons of flour over blueberries, and turn to coat well. Stir into batter, mixing just enough to combine.
  • Fill muffin cups about two-thirds full.
  • Bake 20 to 25 minutes, or until muffins are brown and pull away from the sides of the tin.
