1/2 cup fresh blueberries or 1/2 cup frozen blueberries, thawed
1/2 cup water
4 teaspoons sugar
1 tablespoon olive oil
1/2 teaspoon fresh lemon rind
1/4 cup lemon juice
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Combine all ingredients in a small bowl.
  • Stir often.
  • Cover and chill thoroughly.
  • Serve over fresh salads, steamed asparagus, fresh fruit salads, or grill or poached chicken.

Yummy vinaigrette dressing with a nice richness thanks to some balsamic vinegar and fresh blueberries! I prefer a little less oil for a thicker dressing and my husband prefers a little more oil for a thinner dressing.

½ cup fresh blueberries
2 tablespoons white vinegar
2 tablespoons balsamic vinegar
2 tablespoons honey

1/2 cup pomegranate juice
1/3 cup raw cashews
6 walnut halves
2 tablespoons wild blueberry vinegar or 2 tablespoons white wine vinegar

  • Combine all ingredients in high-powered blender or food processor and blend until smooth and creamy.

Blueberry Vinaigrette - Taste of Nova Scotia image

Quick to put together, and extremely tasty. This delightful recipe was compliments of Taste of Nova Scotia and was created by Sean Laceby of the Blomidon Inn in Wolfville. My good friend Gail has also made this with strawberries as well as peaches (her favourite). This is one quarter of the original recipe, which was listed as serving 4 - 8. As Gail mentions, this would only apply if you planned to serve it as a beverage. ;) If you have issues with small seeds, it would be a good idea to strain before bottling. I don't know how long it keeps, but I would think you'd be safe if used within a week. I'm still breathing, so I guess that's a good indicator.

  • Add blueberries and water to a small pot. Heat on high heat and bring to a boil. Reduce heat to medium, cover, and let simmer for 5 minutes.
  • Pour cooked blueberries and water into a blender. Add all other ingredients. Blend until completely smooth.
  • Taste. Add a smidge more orange juice if you prefer a sweeter flavor. I like mine as is because I tend to load my salad up with fruit so I don't want an overly sweet dressing.
  • You can serve immediately (it will be warm) or place in the refrigerator in a sealed container to allow the dressing to cool before serving.
