3/4 cup sugar, divided
1/2 cup butter, melted
1 package (8 ounces) cream cheese, softened
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 can (21 ounces) blueberry pie filling
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, combine the cracker crumbs, 1/4 cup sugar and butter. Press into a greased 13-in. x 9-in. baking dish. In another bowl, beat cream cheese and remaining sugar until smooth; stir in eggs and vanilla. Pour over crust., Bake at 350° for 15-20 minutes or until set. Sprinkle with cinnamon. Cool on a wire rack. Spread with pie filling and whipped topping. Refrigerate until serving.

Dough for double-crust pie
CHEESE FILLING:
4 ounces reduced-fat cream cheese
1/2 cup confectioners' sugar
1 tablespoon lemon juice
1 large egg yolk, room temperature
BLUEBERRY FILLING:
1/2 cup plus 1 tablespoon sugar, divided
2 tablespoons all-purpose flour
1 tablespoon cornstarch
1/4 cup cold water
6 cups fresh or frozen blueberries, divided
2 tablespoons lemon juice
1 tablespoon minced fresh mint or 1 teaspoon dried mint
1 large egg white, beaten

Steps:

  • On a floured surface, roll each dough disk to fit a 9-in. deep-dish cast-iron or other cast-iron skillet. Line skillet with bottom crust. Trim crust to 1/2 in. beyond edge of skillet; flute edges. Line unpricked crust with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. Reduce heat to 375°., In a small bowl, beat the cream cheese, confectioners' sugar and lemon juice until light and fluffy. Beat in egg yolk until blended. Spread into crust., In a large saucepan, combine 1/2 cup sugar, flour and cornstarch; stir in water until smooth. Stir in 2 cups berries. Bring to a boil; cook and stir until thickened, 1-2 minutes. Cool slightly. Gently stir in the lemon juice, mint and remaining berries. Pour over cheese filling., Cut decorative cutouts from remaining crust; arrange over filling, leaving center uncovered. Brush crust with egg white; sprinkle with remaining sugar., Bake at 375° until crust is golden brown and filling is bubbly, 35-40 minutes. If necessary, cover edges with foil during the last 15 minutes to prevent overbrowning. Cool on a wire rack. Refrigerate leftovers.

6 tablespoons butter, melted
¼ cup white sugar
¾ cup cold water
½ cup white sugar
1 (.25 ounce) package unflavored gelatin
1 cup sour cream
1 (8 ounce) container blueberry-flavored yogurt
½ teaspoon vanilla extract
½ cup heavy whipping cream
1 cup blueberries

Steps:

  • Mix graham cracker crumbs, melted butter, and 1/4 cup white sugar in a bowl. Measure 1/4 cup crust mixture and set aside. Press remaining crust mixture into a 10x6x2-inch pan.
  • Combine water, 1/2 cup white sugar, and gelatin in a saucepan over medium-low heat; cook and stir until gelatin and sugar dissolve, about 5 minutes.
  • Stir sour cream and yogurt together in a bowl. Gradually stir gelatin mixture into sour cream mixture; stir in vanilla extract. Refrigerate until partially set, about 30 minutes.
  • Beat heavy cream in a glass or metal bowl until soft peaks form. Fold sour cream mixture into whipped cream; stir in blueberries. Spread blueberry cream evenly over crust; sprinkle reserved 1/4 graham cracker mixture over dessert. Chill in refrigerator, 8 hours to overnight.

3 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup butter, melted
1 8-oz. package cream cheese, softened
1 cup powdered sugar
1 16-oz. frozen whipped topping, thawed
2 cans blueberry pie filling

Steps:

  • In a bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter. Press onto the bottom of a 13" x 9" baking dish. Bake at 350º for 5-8 minutes. Cool completely.
  • Combine the cream cheese, powdered sugar and 1/2 of the whipped topping. Spread onto the cooled graham cracker crust.
  • Carefully, spread the blueberry pie filling on top of the cream cheese mixture.
  • Top with remaining whipped topping. Refrigerate at least 2 hours before serving.

This recipe is great for picnics or pot-luck type get-togethers. It is one of my husband's favorites and doesn't seem to last long when I bake it! The freshness of the blueberries complements the rich butter layer beneath.

2 1/4 cups all-purpose flour
1 cup butter, softened
2/3 cup powdered sugar
3 large eggs
1 cup granulated sugar
1 teaspoon vanilla or 1 teaspoon almond extract
1 teaspoon salt
3 cups fresh blueberries

Steps:

  • Mix 1 3/4 cups flour, butter and powdered sugar in medium bowl.
  • Pat in 9 x 13-inch pan and bake 15 minutes at 350°.
  • While crust is baking, beat eggs lightly.
  • Add sugar, remaining 1/2 cup flour, vanilla or almond extract and salt.
  • Mix well.
  • Gently fold in blueberries to batter.
  • Pour batter over baked layer and place back in oven for 40-45 minutes at 350°.
  • Top should be lightly browned.
  • Cool slightly in pan.
  • Cut into squares to serve.

2 pkg blackberry jello
2 c boiling water
1 can(s) crushed pineapple, drained
2 Tbsp sugar
1 can(s) blueberry pie filling
1 tsp lemon juice
1 pkg dream whip
pinch salt

Steps:

  • 1. Dissolve Jello in boiling water. Add crushed pineapple; cool until partially congealed.
  • 2. Combine blueberry pie filling, sugar, lemon juice and salt. Add to Dream Whip. Whip Jello mixture. Fold into blueberry mix.
  • 3. Spread in 9"x13" pan; chill. Frost with sweetened whipped cream when firm.

1 box white or french vanilla cake mix
3 eggs
1/2 c sour cream
3/4 c water
1/2 c applesauce
1 can(s) blueberries---drained & rinsed not pie filling
12 oz frozen whipped topping, thawed
2 6 ounce containters of blueberry yogurt

Steps:

  • 1. Preheat oven to 350 degrees. Mix cake mix, eggs,sour cream, water & applesauce together until smooth. (2 to 3 minutes). Gently fold in berries with a spatula. Pour batter into a greased & floured 9X13 pan. Bake 30 minutes OR until a toothpick comes out clean. Allow cake to cool completely. Cover & Refrigerate for at least 2 hours.
  • 2. Topping: Before serving gently stir the thawed whipped topping & yogurt together. Frost your cake. Put it back in the refrigerator for at least 1 hour to firm up.
