1/3 cup all-purpose flour
1/4 cup old-fashioned oats
1/4 cup packed brown sugar
2 tablespoons chopped walnuts
3 tablespoons cold butter, cubed
FILLING:
11 ounces cream cheese, softened
1/3 cup sugar
1 large egg
1/4 cup sour cream
1 tablespoon lemon juice
1/2 teaspoon grated lemon zest
SAUCE:
1/3 cup seedless raspberry jam
2 cups fresh blueberries

Steps:

  • In a food processor, combine the flour, oats, brown sugar and walnuts; cover and process until nuts are finely chopped. Add butter; cover and pulse just until mixture is crumbly. Press into an 8-in. square baking dish coated with cooking spray. Bake at 350° for 9-11 minutes or until set and edges are lightly browned. , Meanwhile, for filling, in a food processor, combine the filling ingredients; cover and process until blended. Pour over crust. Bake for 14-18 minutes or until center is just set. Cool on a wire rack. Cover and refrigerate for at least 2 hours. , In a microwave-safe bowl, heat jam on high for 15-20 seconds or until warmed; gently toss with blueberries. Cut dessert into squares; top with blueberry sauce. Refrigerate leftovers.

1 ¼ teaspoons baking powder
½ cup shortening
¾ cup white sugar
3 eggs
¾ teaspoon almond extract
⅓ cup milk
1 ½ cups fresh blueberries
⅓ cup confectioners' sugar
6 tablespoons cream cheese, softened
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking dish.
  • To make the crust: Cream shortening, sugar, one egg, milk and almond extract in a large bowl. Mix in flour and baking powder, stirring constantly. Spread crust evenly in baking pan. Top with blueberries.
  • To make the topping: In a medium bowl, beat two eggs, and cream cheese until smooth. Stir in powdered sugar and almond extract. Spread over blueberries.
  • Bake 55 to 60 minutes, or until firm to the touch. Cool in pan before cutting.

Steps:

  • Combine crushed wafers and melted butter in a bowl.
  • Spread crushed vanilla wafer crust mixture into an 8x8-inch baking dish.

1 (8 ounce) tub frozen whipped topping, thawed
3 cups frozen blueberries

Steps:

  • In a medium bowl, stir together the graham cracker crumbs and 3 tablespoons of sugar. Mix in the melted butter. Sprinkle evenly into the bottom of a 9 inch square baking dish, and pack down into a solid crust.
  • In a large bowl, beat cream cheese with 1 cup of sugar until smooth. Stir in salt and lemon juice. Fold in the whipped topping until well blended, then fold in the frozen blueberries. Steps:

  • Heat oven to 350. Line an 8-inch square baking pan with non-stick foil or parchment paper.
  • In a large bowl, mix oats, flour, brown sugar, baking soda, salt and cinnamon. Add melted butter and stir with fork until evenly moistened (mixture will be very crumbly). Reserve 1/2 cup crumb mixture for topping; Press remaining mixture firmly over bottom of foil-lined pan. Bake 12 minutes to set crust.
  • Prepare Cream Cheese Filling: In bowl of electric mixer, beat cream cheese until smooth. Add sugar, vanilla and salt and beat well. Add egg and mix until combined. Pour filling over baked crust.
  • Prepare Filling: In a small saucepan, combine blueberries, sugar and cornstarch. Stir in lemon juice. Turn heat to medium and cook, stirring often, until mixture begins to thicken slight (it won't be too thick) and clear (about 7 minutes). Remove from heat and pour over the cream cheese filling. Crumble reserved crumb mixture over top, then sprinkle nuts over crumb mixture.
  • Bake 30 minutes until top is browned and filling is bubbly. Let cool completely in pan set on a wire rack. When cool, chill for an hour before cutting. Lift foil by ends onto a cutting board. Peel off foil; cut into 12 bars. Store in refrigerator, but serve at room temperature.

1/4 teaspoon vanilla extract
1 cup (120g) all-purpose flour
1/2 cup (100g) firmly packed light brown sugar
1/3 cup (67g) granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (226g) cold unsalted butter, cut into 1/2-inch pieces
2 cups (198g or 160g) oats (regular or quick)

Steps:

  • Preheat oven to 375°F. Grease a 9" x 13"x 2" baking pan. Line with aluminum foil or parchment paper. Lightly grease the lining.
  • Place the flour, brown sugar, sugar, baking powder, and salt in the bowl of a food processor. Pulse until combined (about 4 pulses). Add the butter and pulse until mixture is crumbly. Add the oats and pulse until blended.
  • Set aside 1 & 1/2 cups of oat mixture.

24 full size graham crackers, crushed into crumbs (a blender is helpful for this)
2 sticks butter, melted ( 1 cup)
2/3 cup sugar
2 (8 oz) packages cream cheese, softened
3/4 cup sugar
1 tablespoon vanilla
1 cup sour cream
1 (8 oz) tub cool whip
1 (21 oz) can blueberry pie filling

Steps:

  • In a large bowl, combine the graham cracker crumbs, butter, and sugar. Stir until all of the butter has been soaked into graham cracker crumbs.
  • Transfer the mixture to a 13x9 baking dish and press it into the bottom. It should spread to all the edges and be compacted enough to hold together. Set aside.
  • In a large mixing bowl, add the cream cheese and sugar. Beat together with an electric hand mixer until smooth.
  • Add in the vanilla and sour cream. Beat again to incorporate.
  • Switch to a rubber spatula and fold in the cool whip making sure to mix thoroughly.
  • Pour over the graham cracker crust and smooth it out with the rubber spatula
  • Pour the blueberry pie filling on top and carefully spread it to all edges.
  • Chill for at least 2-3 hours before slicing into squares and serving.
