BLUEBERRY BUTTER CAKE
Blueberry Butter Cake - the best butter cake ever, topped with fresh blueberries. This cake is dense, sweet and buttery.

- Preheat the oven to 375°F. (190°C)
- Lightly grease the pan (loaf pan, mini loaf pan, 8x8, or 9x9) with some butter. Mix the flour and the baking powder together and sieve. Add in the salt and mix well. Set aside.
- Use an electronic hand mixer to beat the butter and sugar until well combined or pale yellow in color. Add in the first egg. Beat well after each addition of egg until creamy. Scrape down the sides for even mixing. Add in vanilla essence and mix well. Fold in the flour into the batter and mix well. Finally, add in the milk.
- Pour the batter into the greased baking pan. Shake it lightly or use a spatula to even out the top of the batter. Add the blueberries on top of the batter, in an even single layer.
- Bake until golden brown and cooked, about 40-50 minutes. Use a cake tester to test if it's cooked in the middle. If top gets too brown but inside is not cooked, cover the top with aluminum foil.
- Remove it from the oven and let cool on the wire rack for 10 minutes. Dust with some powdered sugar (optional) and cut the cake into pieces.

This is a delicious and easy blueberry cake to make with things that are usually on hand. My grandmother passed this down to me and now I make it with my kids.

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking dish.
- Sift 2 1/2 cups flour, 1 1/2 cup sugar, baking powder, and salt together in a bowl. Add milk, vegetable oil, eggs, and vanilla extract; mix into a semi-thick batter.
- Toss blueberries with about 2 teaspoons flour in a separate bowl; fold into batter. Pour batter into prepared baking dish.
- Bake in the preheated oven until cake is lightly browned, 25 to 30 minutes. Brush melted butter on top of cake and sprinkle with about 2 tablespoons sugar. Continue to bake until golden brown and a toothpick inserted in the center comes out clean, 5 to 10 more minutes.

BLUEBERRY BATTER CAKE
Favorite recipe from my childhood. Wonderful with fresh Michigan blueberries. The cooking directions might seem a little unusual, but the end result is a very crispy topped cake. Trust me, it's worth it!!!

Steps:
- Line a well greased 8x8x2 pan with berries.
- Sprinkle with lemon juice.
- Cream together 1/2 cup sugar and butter.
- Add milk, flour, baking powder and salt.
- Pour over berries.
- Combine sugar, cornstarch and salt.
- Sprinkle evenly over top of cake.
- Pour boiling water over all.
- Bake 45 minute to 1 hour at 375degrees until light brown.
- ****You can use any fruit. Peaches and strawberries are also WONDERFUL.
