OVER-THE-TOP BLUEBERRY BREAD PUDDING

- Preheat oven to 350°. In a large bowl, combine eggs, cream, sugar and vanilla. Stir in blueberries and baking chips. Stir in bread cubes; let stand until bread is softened, about 15 minutes., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until a knife inserted in the center comes out clean, 50-60 minutes. Let stand 5 minutes before serving., For sauce, place baking chips in a small bowl. In a small saucepan, bring cream just to a boil. Pour over baking chips; whisk until smooth. Serve with bread pudding.

BLUEBERRY BRIOCHE PUDDING

- Heat oven to 325 degrees. Lightly butter 4 (8-oz) custard cups or ramekins. Slice brioche crosswise into 1/2 inch thick slices. Lightly butter each slice with remaining softened butter.
- Divide brioche slices among custard cups, arranging them randomly upright and horizontal. Scatter 1/4 cup blueberries between and around brioche slices in each cup.
- In a medium-size bowl, beat together milk, eggs, 1/4 cup sugar, orange rind, and vanilla until well blended. Divide egg mixture evenly among custard cups, pouring it over brioche slices and berries. (tops of brioche will not be covered by egg mixture). Sprinkle remaining tablespoon sugar over each pudding.
- Place puddings in a 13 x 9 inch baking pan; pour hot water into pan to come halfway up sides of custard cups. Bake 35-40 minutes or until the brioche slices are toasted and each pudding is set around edges but slightly soft in center. Cool until warm before serving.

Steps:
- Set oven rack in the middle position; preheat oven to 350°; coat a 13 x 9 inch ovenproof glass baking dish with cooking spray.
- Set aside a large metal pan and rack for the water bath.
- Prepare blueberries: toss blueberries with the flour; shake in sieve to remove excess flour.
- Prepare the bread: brush brioche slices with melted butter.
- Prepare the custard: Combine the milk, heavy cream, salt, nutmeg, sugar, lemon zest, lemon extract, and vanilla in a big bowl; add in eggs; beat to combine.
- Layer 6 slices of buttered brioche in baking dish; fill in spaces with extra brioche.
- Pour half the custard over brioche and sprinkle with half the berries.
- Add remaining brioche, custard, and blueberries in layers.
- Use a knife to cut 8 slits through pudding; cover top of pudding with plastic wrap and press down gently.
- Let stand 15 minutes, or until custard has moistened brioche layers; remove plastic wrap; brush with melted butter and sprinkle with sugar.
- Place baking dish on rack in large metal pan; pour hot water from a glass measuring cup into outer pan until water level rises halfway up sides of baking dish; cover with foil.
- Place carefully in oven; bake 30 minutes, checking water level periodically and replenishing if needed (do not let water bath evaporate).
- Remove foil and bake another 45 minutes, or until pudding is bubbling, topping has caramelized, and a tester comes out clean.
- Carefully remove baking dish from water bath and oven; let cool on rack 1 hour; serve warm or at room temperature.
- Store covered with a paper towel and plastic wrap in the refrigerator.

- Preheat the oven to 350°. Butter an 8-by-11-inch baking dish and coat the dish with the turbinado sugar.
- In a large saucepan, bring the cream, milk, 2/3 cup of the granulated sugar and the salt to a simmer over moderately high heat, then remove from the heat.
- In a bowl, whisk the whole eggs, egg yolks and vanilla. Gradually whisk in the hot cream until blended. Strain the custard through a fine strainer into a large bowl.

- Heat the oven to 190°C/170°C fan/ gas 5. Cut the end crust off the brioche loaf, then slice 7 x 7-8mm- thick slices from the brioche (about 200g in total). Cut off and discard the crusts (or save for breadcrumbs). Spread the slices with the butter and lemon curd, then quarter diagonally into 4 triangles.
- Lay half the brioche triangles over the base of a 1.5 litre x 6cm deep ovenproof dish. Sprinkle over half the blueberries, then cover with the rest of the triangles, spread-side up, overlapping if necessary. Scatter over the rest of the blueberries.
- Whisk the milk, cream, eggs, sugar, lemon zest and juice together in a bowl. Pour it over the top of the brioche and leave to soak for 5 minutes, pushing the top layer down into the liquid now and then so it soaks up the eggy mixture.
- Put the dish into a small deep roasting tin and pour enough just-boiled water into the tin to come halfway up the sides of the dish. Bake for 30 minutes until puffed and golden. Remove from the oven and the tin. Rest for 2 minutes, then serve warm, dusted with icing sugar, with a little extra cream if you wish.
