BETH'S BLUEBERRY BREAD PUDDING
I love bread pudding. I am a fanatic! I go everywhere to just to try the bread pudding. This is one of my favorite bread pudding recipes!

Steps:
- Combine 1/2 cup sugar and 3 tablespoons butter in a saucepan over low heat; cook and stir until butter is melted, 3 to 4 minutes. Stir cream into butter mixture; bring to a boil, reduce heat, and simmer until golden sauce is slightly thickened, 5 to 10 minutes. Pour golden sauce into a bowl and cover with plastic wrap.
- Preheat oven to 350 degrees F (175 degrees C).
- Beat 3/4 cup sugar and 3 tablespoons softened butter together in a bowl using an electric mixer until smooth and creamy. Add eggs and vanilla extract; beat until fluffy, 2 to 3 minutes. Slowly pour milk into butter-egg mixture while continuing to stir until evenly combined.
- Preheat oven to 350 degrees F (175 degrees C).
- Place bread cubes in a large bowl. Pour milk mixture over bread; let stand until bread is moistened, about 5 minutes. Fold blueberries into bread mixture; transfer to a 3-quart baking dish.
- Mix 2 tablespoons sugar and cinnamon together in a bowl; sprinkle over bread mixture. Drizzle 1/3 cup golden sauce over bread mixture.
- Bake in the preheated oven until a knife inserted in the center of the bread pudding comes out clean, about 35 minutes. Serve bread pudding with remaining golden sauce.

This recipe was a $500, first prize contest winner in Taste of Home Magazine many years ago. It is the very best bread pudding recipe that we have ever had. A rich, decadent diet-buster that will become your "go-to" recipe as well. Be prepared to loosen your belt buckle! lol

- 1. In a large bowl, combine eggs, cream, sugar and vanilla. Stir in blueberries and 1 pkg. baking chips. Gently fold in bread cubes coating well. Let stand for 15 minutes or until bread softens.
- 2. Transfer to a greased 13x9 baking dish. Bake uncovered at 350 degrees for 50-55 minutes or until a knife inserted near the center comes out clean. Let stand for 5-10 minutes before serving.
- 3. Sauce: Place remaining package of baking chips in a small bowl. In saucepan, gently bring cream to just before boiling. Pour over baking chips and whisk until smooth.
- 4. Plate individual servings and drizzle with fresh cream vanilla sauce.

- Gather the ingredients.
- Heat oven to 350 F. Butter an 11-by-7-inch baking dish.
- Whisk together the milk, eggs, sugar, vanilla and almond flavorings and 1/2 teaspoon of lemon zest in a large bowl.
- Add the bread and let the mixture stand for 10 to 15 minutes.
- Toss the blueberries with powdered sugar in another bowl and then fold them into the bread mixture.
- Transfer the mixture to the prepared baking dish. Set the baking dish in a larger baking or roasting pan and place it in oven.
- Add about an inch of very hot water to the large outer pan.
- Bake the bread pudding for about 50 minutes to 1 hour, or until it is firm and the top is lightly browned.
- Gather the ingredients.
- Bring the 1 1/2 cups of water to a boil in a saucepan over high heat.
- Combine the 3/4 cup of granulated sugar, cornstarch, and salt in another saucepan. Blend well.
- Pour the boiling water over the sugar mixture and place it over medium-low heat. Cook until the mixture is thickened and clear, stirring constantly.
- Stir in the lemon zest, lemon juice, and butter. Stir to blend.
- Serve the bread pudding with the lemon sauce or another sauce or topping. Vanilla sauce , blueberry sauce, or bourbon sauce are all good choices.

- In a large bowl, beat the egg, milk and oil. Combine the flour, sugar, baking powder and salt; gradually add to egg mixture, beating just until combined. - In a butter 8 X 8 oven proof pan place 1/2 the bread cubes in pan place 1/2 the blueberries top remaining bread and then blueberries.
- Mix eggs, cream, milk, zest, cinnamon, extract, sugar and salt.
- Pour over bread pressing gentle to submerge bread then cover with plastic wrap and soak for one hour.
- Preheat oven 350.
- Remove wrap sprinkle brown sugar on top and dot with butter.
- Bake in oven for 45-50 minutes.
- Just before serving heat caramel and whiskey in a microwave proof dish.
- Dust pudding with powdered sugar and pour some sauce over pudding.
