Number Of Ingredients 10

2 cups fresh blueberries
1/2 cup balsamic vinegar
1/2 teaspoon Kosher salt
2 tablespoons red onion (roughly chopped)
1/2 teaspoon cayenne pepper
3 tablespoons ketchup
3 tablespoons sugar
2 cloves garlic (roughly chopped)
1/2 teaspoon Worcestershire sauce
1 teaspoon chili powder

Steps:

  • Combine all of the ingredients in a medium sauce pan and heat over medium-high heat.
  • Once you hit the boiling point, turn the heat down and simmer for around 15 minutes until the sauce begins to thicken (as the berries break down), stirring occasionally.
  • Remove the pan from the heat and allow to cool to room temperature.
  • Pour the sauce into a blender, food processor or any other liquifying contraption you have sitting around in the cabinets.
  • Blend the ingredients until liquified.
  • Brush the blueberry barbecue sauce over some grilled pork chops, chicken or ribs and serve with some extra sauce on the side!
  • Again, I think it's a pretty delicious sauce and something different to serve to your guests at the next cookout. Blueberry BBQ sauce is going to be your favorite new favorite BBQ sauce. It's naturally sweet with a slight tang. It pairs well with grilled pork, especially ribs or chicken.

1 cup fresh blueberries
1/2 cup ketchup
1/2 cup apple cider vinegar
1 tablespoon maple syrup (you can adjust this to your taste)
1 clove fresh garlic, crushed

Steps:

  • Prepare the ingredients: measure the ketchup and vinegar, crush the garlic, rinse the blueberries or if you are using frozen, rinse them off and let them thaw out in a bowl.
  • Add the ketchup, blueberries, vinegar, crushed garlic to a saucepan and cook on low heat stirring occasionally until the blueberries become very soft - about 30 minutes.
  • Add 1 tablespoon maple syrup, and check the taste for sweetness and adjust the flavors.
  • For a smooth sauce, place sauce into a blender, food processor or use an immersion blender.

1 onion, chopped

3 cups blueberries
¼ cup real maple syrup
2 tablespoons cider vinegar

2 tablespoons molasses
½ teaspoon lemon juice

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir onion, garlic, and ginger until onion is softened, about 8 minutes. Add blueberries, maple syrup, cider vinegar, balsamic vinegar, Worcestershire sauce, molasses, lemon juice, cinnamon, cumin, chili powder, paprika, smoked paprika, salt, and black pepper; stir to combine. Simmer over medium-low heat until sauce is slightly reduced and bubbling, 5 to 7 minutes.
  • Remove skillet from heat; cool slightly. Pour sauce into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

4 c rice wine vinegar, (divided)
1 c basil, chopped
large lemon zest, grated

Steps:

  • 1. Smash 4 cups blueberries with 1 cup vinegar (using a potato masher)
  • 2. Add basil, lemon zest and 3 more cups vinegar.
  • 3. Cover with plastic wrap and store in a cool place. Stir every day for 4 weeks.

2 pounds ground chuck
2 pints fresh blueberries
1/2 cup sugar
1/3 cup lemon juice
Kosher salt
2 tablespoons cornstarch
1/2 cup water
2 cups coarsely ground black pepper (butcher's grind)
Canola oil
6 challah or brioche burger buns
1 cup Basil Aioli, recipe follows
8 ounces crumbled blue cheese
12 slices thick-cut cooked bacon
Arugula and sliced red onion, for serving
2 bunches basil
1/4 cup fresh lemon juice
4 cloves of garlic
1/2 cup of canola oil, or a blend of canola and olive oil
Mayonnaise, as needed

Steps:

  • Divide the beef into 6 loosely packed 1/2-inch-thick patties about 4 1/2 inches in diameter. Set aside.
  • Combine the blueberries, sugar, lemon juice and a pinch of salt in a medium saucepan. Bring to a boil over high heat. In the meantime, stir together the cornstarch and water in a medium bowl. When the blueberry mixture comes to a boil, slowly drizzle in the cornstarch slurry and cook until the blueberry mixture slightly thickens to the consistency of pancake syrup. Set aside to cool to room temperature.
  • Place the coarse pepper on a rimmed baking sheet. Sprinkle the burger patties liberally with salt and place one by one in the coarse pepper to coat generously, pushing firmly on each side.
  • Cook the burgers in a hot cast-iron pan with a little oil to get them started. Cook 4 minutes on one side, and then flip and cook 3 minutes on the other side to medium-rare. Remove to a warm plate covered with foil to rest while cooking the remaining burgers.
  • Meanwhile, cut and toast the buns cut-side down in a separate pan with a touch of oil for extra crunch. Spread the toasted buns liberally with the basil aioli. Place a burger on the bottom bun, followed by some blue cheese, a few spoonfuls of blueberry sauce, 2 slices bacon, a slice of red onion and a big pinch of arugula. Repeat with the remaining burgers.
  • Blend the basil, lemon juice, garlic and oil to make a smooth puree in a blender. Mix it with your favorite mayonnaise (2 parts mayonnaise to 1 part basil puree).

1 lb. ground round beef (85% lean)
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
4 hamburger buns
1 1/2 cups arugula leaves
4 oz. blue cheese crumbles
4 slices thick-sliced smoked bacon (cooked until crisp)
1 cup fresh blueberries
2 tablespoons balsamic vinegar
2 tablespoons ketchup
2 tablespoons chili sauce
2 tablespoons honey
1 clove garlic (minced)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup fresh basil leaves (chopped)
1/2 cup light mayonnaise
1 tablespoon fresh lemon juice
2 tablespoons extra-virgin olive oil
1 clove garlic (minced)

Steps:

  • Coarsely chop enough fresh basil leaves to make 1/2 cup.
  • Combine the chopped basil with the mayonnaise, olive oil, lemon juice, and minced garlic, stirring until smooth. Season with kosher salt to taste, then refrigerate until ready to use.
  • In a small saucepan, bring the blueberries and other barbecue sauceingredients to a boil over medium high heat. Reduce the heat to low and simmer for 5 minutes, or until slightly thickened. Keep warm until ready to use.
  • Lightly oil the grates of a gas grill and preheat to 450 degrees.
  • Form the ground beef into 4 equal patties, being careful not to overly pack the meat together. Season both sides liberally with kosher salt and freshly ground black pepper.
  • Cook the burgers over direct heat for 6 minutes, watching carefully for any flare ups.
  • Flip the burgers and cook for 4 more minutes on the other side, or until done.
  • Spread basil aioli on the cut side of each bun, both top and bottom pieces.
  • Next, pile arugula on the bottom bun and top with a grilled burger.
  • Spread a tablespoon or two of the blueberry barbecue sauce on the burger.
  • Top with blue cheese crumbles, bacon, and the top bun. Serve immediately.

  • Add all the ingredients for the sauce into a saucepan and cook for 2 hours over medium-low heat. Remove the sauce from the heat and place into a food processor or blender and puree. Strain the sauce and set aside.
  • Preheat grill over medium-high heat.
  • Place the ribs onto the grill and brush with sauce. This will glaze the ribs while they cook.
  • The blueberries add a subtle sweetness to the sauce to play off the heat of the chiles and the acid of the vinegar.

Add the red pepper flakes, cayenne pepper (add in increments if you are sensitive to spice), shallots and garlic and let it cook for about 5-7 minutes more. If you have an immersion blender, blend the sauce together to puree the sauce into a smoother consistency. You may also use a blender or a masher.
