Steps:
- Add a little bit of water to a pot, just so it coveres the bottom.
- Add the berries, cinnamon and sugar (if using) and balsamic vinegar and bring to a boil.
- Lower the temperature and let it shimmer for 10-20 minutes until it has reduced and thickened.
- Taste to see if more balsamic vinegar, cinnamon or sugar is needed.
- Store in a jar in the fridge.
BLUEBERRY BALSAMIC VINEGAR
Steps:
- In a large non-reactive saucepan, crush blueberries with a potato masher or back of a heavy spoon. Add vinegar, sugar, lime and cinnamon and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Cool slightly and pour into a large bowl. Cover and refrigerate for 2 days to allow flavors to blend.
- Place a wire mesh strainer over a large bowl. In batches, ladle blueberry mixture into strainer, pressing out as much liquid as possible. Discard solids.
- Pour vinegar into clean glass bottles or jars, and refrigerate, tightly covered, indefinitely. Use in salad dressings or drizzled over chicken or beef.
BLUEBERRY BALSAMIC BARBECUE SAUCE
Not sure where this recipe came from, but I finally tried it the other day. We used it on top of chicken with risotto on the side, but it would also work great on pork or tuna as well. It is simple to make and is something different from the average sauce. You can use fresh or frozen blueberries for this recipe.

BLUEBERRY CREAM CHEESE WONTONS
While a little time-consuming at first, these come together quickly once you get the hang of them. Use any flavor pie filling you prefer, but chop any large fruit pieces to make the wontons easier to stuff. Perfect for a crowd!

Steps:
- Cut 4 ounce block of cream cheese in half, then in half again to create 4 pieces. Further cut each piece in half again so you have 8 equal pieces total. Set aside.
- Working with 6 wonton wrappers at a time, separate them out onto a clean work surface. Divide one of the cream cheese pieces into 6 pieces and place a piece in the middle of each wonton wrapper. Place 1 teaspoon of blueberry pie filling over the top of the cream cheese. Do not overfill, as the mixture may ooze out.
- Use your finger to lightly wet the 4 edges of each wonton wrapper. Gently fold in half diagonally to make a triangle, then bring up the remaining two corners so all corners join together. Try not to leave excess air in the wonton, which can cause them to burst. Press seams together to ensure a tight seal. Set wontons aside, covered in a damp paper towel, while you finish making the remaining wontons.
- Preheat the air fryer to 325 degrees F (160 degrees C). Spray the inner basket with cooking spray and place as many wontons in basket as will fit, without overcrowding. Lightly mist wontons with cooking spray.
- Air-fry for 5 minutes. Remove to a cooling rack and dust with powdered sugar. Let cool while you cook the remaining wontons in batches. Best served slightly warm or at room temperature.

- Rinse blueberries well and add to a medium pot with 1/2 cup water. The water will not begin to cover the berries – this is okay. Bring to a low boil over medium-low heat, then add 2 tablespoons sweetener, stir gently, and reduce to a low simmer.
- The liquid will increase significantly when the berries begin to break down. Continue simmering, stirring regularly, until liquid is reduced by at about half.
- Add another tablespoon of sweetener and stir. As the berries reduce, the liquid will thicken slightly and become a deep purple. It will thicken even more as it cools.
- Total cooking time is 15-20 minutes, depending on desired thickness and the pan you use. To test, allow a spoonful of liquid to cool and then pour it out of the spoon. If it has thickened, the sauce is reduced enough. In the end, you will have roughly 1 1/4 cup of sauce. Reduce further (to about 3/4 cup) to use as a spread.
