AMISH BLACKBERRY AND STRAWBERRY BAKED OATMEAL
A really sweet innkeeper in Amish country taught me a version of this baked oatmeal recipe. Absolutely wonderful! Serve with milk.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Cream brown sugar, oil, eggs, baking powder, and salt together in a bowl until smooth. Add oatmeal and milk and mix until combined.
- Layer blackberry pie filling and strawberries in the bottom of the prepared pan. Add oatmeal mixture over fruit.
- Bake in the preheated oven until top is golden brown, about 30 minutes.

BLUEBERRY AMISH BAKED OATMEAL
Blueberry Amish Baked Oatmeal is a cozy, hearty breakfast that's healthy and oh-so-satisfyingly delicious. Crispy oats warmed with cinnamon and sweetened with blueberries. It's a breakfast and healthy snack to love.

Steps:
- Preheat the oven to 325° and coat an 8 or 9-inch baking pan with cooking spray. Set aside.
- In a medium bowl, combine oats, brown sugar, baking powder, cinnamon, and salt. Then, in a small bowl, whisk together the eggs, milk, vanilla, and melted butter. Add it to the oats mixture and combine.
- Spoon blueberries evenly on the bottom of the prepared baking dish. Then pour the oatmeal mixture over the top, spreading evenly. Bake in a 325° oven for 40-45 minutes, or until the oats are golden brown and set.
- Serve warm, room temperature... or, my favorite way, cold from the refrigerator.

EASY AMISH BAKED OATMEAL

Steps:
- Preheat the oven to 350 degrees F. (Skip this step right now if making the oatmeal overnight.)
- Lightly grease a 9X13-inch baking pan (or smaller pan for thicker oatmeal). Set aside.
- In a large bowl, add the oats, brown sugar, baking powder, and salt. Stir to combine.
- In another bowl or liquid measuring cup, whisk together the milk, maple syrup, eggs, vanilla, and butter or oil.
- Add the wet ingredients to the oats mixture and stir to combine.
- Pour the mixture into the prepared pan. Cover and refrigerate until ready to bake (up to 24 hours) or bake right away.
- Bake uncovered for 25-30 minutes until the edges are lightly golden and the oatmeal is set. Serve warm with additional toppings.

I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.

AWESOME! Great nourishment to start a day! An excellent way to get fruit and fiber. Not necessary, but may be prepared the night before - just bake 5 to 8 minutes longer. A leftover square of this oatmeal warms well in the microwave. Cream or milk poured over hot oatmeal enhances the flavor. If you are using frozen blueberries, no need to thaw - throw them in! Easy to prepare!

- Mix butter, brown sugar, eggs, applesauce and milk.
- In separate bowl mix oats, baking powder, salt and cinnamon. Combine with wet mixture and add blueberries. May add more cinnamon to taste.

- In a large mixing bowl, cream together the butter and sugar until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla.
