"BLUEBARB" BLUEBERRY RHUBARB CRISP
I created this dessert because I still had tons of rhubarb hanging around in my freezer and I was sick of the go-to strawberry/rhubarb combination. It turned out amazingly! The tart taste of rhubarb is, not surprisingly, complemented by blueberry. Delicious with a scoop of vanilla ice cream.

- In a large saucepan, whisk cornstarch and sugar until no lumps remain. Add blueberries, water, and lemon juice and stir gently to combine.
- Cook over medium heat, stirring frequently to prevent it from burning, until the mixture thickens and becomes translucent. This will take about 10 minutes.
- Remove from heat. Cool completely before filling the pie crust. (*very important - it will be impossible to do the lattice top as the pieces of crust will stick to the warm pie filling.)
- Roll out prepared pie crust to about ⅛” thickness. It should hang over the edge of your pie plate by at least an inch. Pour cooled blueberry filling into the pie plate.

- In a bowl, combine the flour, salt, cinnamon, and the sugar. Add the butter and mix it with your fingertips until a crumbly mixture forms. Mix the chopped walnuts into this crumbly mixture.
- In a large bowl, stir together the fresh blueberries, rhubarb, and dried blueberries (if using) along with the sugar and 3 tablespoons of the crumble mixture. (Mixing some of the crumble mixture into the filling helps absorb the rhubarb's plentiful juices and imparts a touch of buttery gooeyness to the fruit.)
